I have my last final tonight!

So I have to eat before I leave and I am making chicken tikka masala with naan. YUM!
 
Last night was a FAIL. We messed around with contractors till after 8:00 PM. I had had a late lunch and skipped dinner, hubby had frozen pizza :sad2:

Although I don't think it will EVER happen I'll be so glad when this renovation is over! I'm sick of thinking about it.
 
We have a beautiful day in Tennessee today, so we are grilling tonight! :yay:

Terryaki Chicken Kabobs
Sweet-n-Sour Sauce for dipping
Long Grain and Wild Rice
Grilled Veggie Packets

Tomorrow night is looking iffy. Children are staying with Grandparents, and DH and I have to be somewhere at 7. Trying to decide whether to cook or grab a bite somewhere. :confused3

Oh- I just remembered I have a bagged Caesar Salad in the fridge and some grilled chicken strips and Garlic Texas Toast in the freezer! Dinner dilemma solved!!!:cool1:
 

This week's plan hasn't gone as planned. With my husband doing these talks about a project he recently worked on, most evenings have been a scramble with dinner. Last night we didn't have the ingredients to make what was planned and I didn't want to go buy more since we were getting a veggie delivery today. So we pushed the meal plan by a day and we had frozen taquitos and fresh cupcakes lol. Lunch (without the leftovers) turned into take out (fried mushroom cap stuffed with cheese burger thing). Tonight it's back on! Turkey taco wraps for dinner and taco salad for tomorrow's lunch!
 
Changed our menu tonight and we had grilled cheese with tomato soup instead of the pork chops. I did it for two reasons 1. I worked out in the yard all day and 2. I forgot to get the pork chops out to defrost.

Our Terryaki Kabobs on the grill last night turned out sooo good! Tonight is an experiment. I am throwing some things together that I already have in order to avoid eating out (which is a BIG temptation since the kids will be with grandparents)! I am not sure what to call my concoction, but here is what I have to create something with:

Grilled Chicken Strips
Penne Pasta
Fresh Broccoli
Half and Half
Gorgonzola Cheese

We will have Caesar Salad and Texas Garlic Toast to go with it...

I have to help out at DH's business today so we're having boeuf bourguignon in the crock pot. Only I didn't have any parsley and used pinot noir instead of burgandy. We'll see how it turns out!
 
Does anyone plan their meals a month at a time? I've been really slacking lately with doing it each week. So I am hoping the monthly one will help keep me in line!

It really helps me! I take about 30 mins and plan out the week. I put all the dinners on my google calendar and share that with my oldest dd and my dh. They like looking at the calendar and seeing what's for dinner. Sometimes I mess up and forget to buy an ingredient or defrost something but I normally just do the best I can. I love it! It's very freeing when I'm making my shopping list and not having to wonder every day "what's for dinner?"
 
Tonight we are having pepper steak stir fry with rice. I have been craving it and we have everything in the freezer to make it.
 
Boeuf Bourguignon (Boeuf Pinot Noir, to be honest), mashed potatoes, green beans. The pinot made it a bit too winey if you know what I mean.

Well this week I did not post and ugh!:scared1:Not good.
Tonight will be spaghetti and sauce
Tomorrow is a cook out I am bringing homemade baked beans and a taco dip


As a side note when you run out of sugar for coffee honey does not taste the same ::coffee:

Well I have to post this someplace. I made pork ribs last night for the very first time. MMMM turned out so amazing.

First off, the total dinner was under $10 total for the two us. And not pictured was the salad that I ate while waiting for the ribs to cook.
