I spent yesterday going over this thread and writing down recipes on recipe cards. :cool1:

This morning I went to do my weekly grocery shopping and spent $115, but that included 60 cans of Fancy Feast (since I got $10 back if I bought 60 cans, and I had $1 off coupons for each 24 cans I bought), new spices for cooking, meats, laundry detergent and then restocking basics.

I have a roaster chicken cooking in my slow cooker. I'm planning to make spaghetti with salad and garlic bread for dinner tonight. The rest of the week we'll be eating various chicken recipes I got from this thread.

I just wanted to say how much I appreciate all the work that went into this thread. :wizard:
 
We had white beans with tasso, brown rice, spinach salads and cornbread last night. I forgot to take a picture before we ate though. We're still worn out in the evenings from the house renovations. The dishwasher was jammed full so we ate off paper plates. Still, I guess that's better than the week we had take-out every night!

Sunday is Mother's Day. I don't know what the plans are but they aren't going to involve me cooking, that's for sure!
 
I've really fallen off the band wagon on this the last several weeks and I really really need to climb back on. So tonight will be veggie quiche for all of us and sausage links for the meat eaters and I have the following meals (in no particular order) planned.
Turkey/salmon burgers baked potatoes and veggies
Taco night
Shrimp alfredo with wilted spinach
Lasagna and salad
Cornish Hen and rice pilaf/Veggie pilaf and tilapia
Loaded Ramen noodle soup
Spaghetti and garlic bread
Veggie tarts and salad
hot dogs, fried potatos and veggies

The grocery stores is being hit so hard. That one is close. One has barely any food left. 2 that can't even get in the parking. Wal-mart lets not even go there.

I'm so sorry about your situation crazelion! I remember how hard it was to feed my crew after Katrina and Gustav :grouphug:

Tonight is leftover night. I am in no mood to cook a big meal so this is easier.
 
I am making Puerto Rican rice and chicken. The house smells amazing right now! I'll post the recipe tomorrow. Prayers to all of you that are struggling with this horrible weather and loss!
 
I'm lost do you roll out each roll individually and then roll them up? The fold over and pinch is confusing me? Isn't it a triangle?
Or am I taking half the tube- and folding over?

Sorry it's been crazy here...

I made them all in triangles, so I put one triangle ontop of another and pinched them together~ BUT my mom takes two triangles and piches them together and then two on top the same way, making it more of a sandwich! I hope that makes sense :lmao:
 
I LOVE this thread and have enjoyed all of your menus.

Here goes my first one:

M-chicken, baked potatoes, steamed green beans and fruit salad (bananas, grapes and canned pears)

T-pulled pork sandwhiches (pork leftover and stored in freezer), crock-pot baked beans and veggies with dip

W-Swim lesson night so probs grilled cheese and tomato soup

R-Turkey Meatoaf (I make mine with an apricot jelly glaze) baked potatoes and steamed veggies

F-Soup beans and cornbread

S-Hot Dogs on the grill, chips, veggies and dip, brownies

Su-Chicken, quinoa pilaf and fruit salad

It's very boring! But at least it's plan;)

Monday: Baked Parmesan Chicken Tenders, Bowtie Noodles w/ Evaporated Milk/Parmesan sauce, Peas, Peaches

Tuesday: Beef Tips in Slow Cooker, Mashed Potatoes, Carrots (or maybe parsnips if they're not too expensive), Peaches

Wednesday: Salmon in Orange Sauce, Brown Rice, Asparagus, Strawberries

Thursday: Scrambled Eggs, Leftover Rice made into porridge w/ hazelnut "cream", Grapes

Friday: Bay Scallops in Leftover Orange Sauce, Leftover Brown Rice and Asparagus, Baked Pears

Saturday: Hot Dogs, Baked Beans, Pineapple

Sunday: Kielbasa in Cranberry BBQ sauce, scalloped potato casserole, peas, pear cobbler

Thursday- Lasagna (since we didn't have it last week)

Friday- Cabbage & Noodles

Saturday- Chicken Salads

Sunday- Mothers Day!! Out to Eat ;)

S: Spaghetti, garlic bread, salad
M: Chicken and stuffing bake, mixed vegetables, salad
T: Italian Sausage with bowtie pasta, homemade dinner rolls and salad
W: leftovers and fresh fruit salad
Th: Chicken Enchiladas, cornbread, salad
F: Bacon cheeseburgers, sweet potato fries, baked beans
S: Chicken alfredo stuffed shells, homemade breadsticks, salad, homemade vanilla cake with milk chocolate icing

I just got my Mother's Day gift early. :banana: It's a white Kitchen Aid mixer!! :banana: I've never had one before. I hope it helps with the chore of making homemade breads.

Monday, leftovers, because all the kids were gone and dh and I don't care if we eat leftovers :D
Tuesday: Turkey Spaghetti...in the crock pot
Wednesday Chicken parmesan in the crock pot
Thursday: Taco soup...In the crock pot
Friday: Been and Broccoli....in the crock pot
Saturday: Chicken tacos...IN THE CROCK POT!

Notice a trend here? LOL. I work at home and I am on my phone from 8 am till 4:30pm, so any time I can use my crock pot, I do.

I'm on a mission to eat at home every meal for the month of May. We eat out entirely too much. And due to some financial setbacks this year, we are barely going to be able to do Disney. That may turn in to "We MAY be able to do Disney" if I don't get things under control now.

I have a family of 5, which includes my 20 year old son and Husband who LOVE to eat.

Do you think it's wrong to say, "you get one chicken breast, ect, and if you're still hungry, make a sandwich?" It costs me so much to feed these men!
 
Yesterday, we had a terrific, super easy, bargain, meal. I just wanted to share because I know a lot of you love restaurant food. There is a local pub-style restaurant that has the best "Nachos Grande" . We found ourselves going there just for that item. Well, that also includes adult beverages, taxes, and tip, so the trips ended up being very costly. I didn't take a rocket scientist to figure out the ingredients but it did take some experimentation with cooking times.
Here's the recipe that actually makes 3 times the restaurant amount. by 10 oclock last night it was completely gone.

Keepin'Up with the Jonses Restaurant Nachos
1 13 oz. bag restaurant nachos
2 cans refried beans.
2 large chopped tomatoes (or 1 can diced)
1 large onion, chopped
1/2 cup chopped jalapenos (or to taste)
3-4 oz. sliced black olives
3 c. (scant) shredded sharp cheddar cheese

In a large baking pan or dish at least 1" deep (I used a broiler pan), spead the beans. Next, layer about 1/2 c. of cheese. Layer 1/3 of the chips, sprinkle another c. of cheese. Then, evenly place 1/2 of each of the items: tomatoes, peppers, olives, onion. Layer more chips and repeat other items. Finish off with with the rest of chips and cheese. Bake in preheated oven at 375 for 10-13 mins. Switch to broil for 1-2 mins. Serve with sour cream and salsa.
