Tonight we're having Greek chicken (marinating in lemon and thyme right now) with multigrain bread, veggies and taziki. Yum!

Sounds delish !!


Tonight for hubby was tater tot casserole , not my favorite , as I am trying to get away from using canned soups. The soups that I do keep in the house for quick desperate meals are the heart healthy campbells now. I will just grab sandwich, hubby is happy as can be, child hood reminder.

Not a clue what to do for the rest of the week.
Need to stick my head in freezer .

lunch this afternoon for DS8 and I was baked chicken breast, roasted cauliflower and baked potatoes . LOL we needed veggies and a healthy lunch after yesterdays candy/ dessert fest . DS8 happily ate the veggies , which normally isn't a problem , but he seemed happier than normal to do it and asked for seconds , i think it was a sign.
 
Nothing!

No really. I was supposed to have class tonight so I ate a big lunch. Then we had some storms come through and they knocked out power on campus. Well, they didn't get it back on until about 20 minutes before my class was to start and thus did not decide to have class until that time. My drive, on a good day, takes 30 minutes and with all the power outages around town, I knew this was NOT going to be a good day. So, I made the call and decided not to risk it.

What frustrates me is that these evening classes are usually grad level and nontraditional students. Meaning a LOT of commuters. Deciding 20 minutes before is not cool especially when at an hour before the announcement was "A decision would be made shortly.". Add to that all the traffic problems they were having in town due to the lights being out...

Yea, not a safe situation all around.

Khios everyone had a wonderful blessed Easter yesterday! We went to my ants house for a great lunch and a sugar rush for my girls.:eek: tonight I made my dh's lunch for the Wei a whole batch of chicken with stir fri veggies with pasta in cooking cream

Tonight we had grilled cheeses with salad
Tomorrow breakfast
Wednesday Mac and cheese
Thursday hot dogs and a pasta salad
Friday pizza and fries
Saturday chicken and rice
Sunday?
 

Today I made bisquick baked chix fingers, mashed taters and store bought rolls. The chix fingers came out really good. Way better than I expected (first time trying the recipe). But this isn't the healthiest meal ... oh well.

I'm trying to save $ for our next vacation, so minimal restaurant/fast food for us for awhile.
 
Well I just got done highlighting my DD's hair and I have about 40 minutes to chat lol! Tonight I made semi-homemade scalloped potatoes. I say semi-homemade because I purchased the Betty Crocker ones from the double box. I opened the package and it was laughable:rotfl: There was literally about a half cup of potatoes in each pouch. So I got about 5 potatoes and sliced them thin. I threw them into the liquid (water and milk) and let the water come just below the boil. I mixed in the cheese and poured it over the sorry looking dehydrated potatoes and added the ham. I plan on writing Betty Crocker a letter!
I got a friendly reminder from DCL that I still owe for our cruise. So, SAVE, SAVE, SAVE!
It's double double coupon day Saturday so I am going to try to make my food stretch!

This is the menu for the week:
split pea and ham soup (crock pot)
salmon burgers with fries
beef, potato, and carrot pastys
mac and cheese (normally I make my own but I got some Kraft home style ones for free)
breakfast for dinner Denver omelets
 
How do u make your homemade tomato soup?

I use this recipe from Aaron McCargo Jr.

Funked Out Tomato Soup

Ingredients
3/4 tablespoon extra-virgin olive oil
1 Vidalia onion, sliced
1 tablespoon minced garlic
4 large tomatoes, sliced
Red pepper flakes
Cracked black pepper
Kosher salt
1 cup chicken stock
1 teaspoon ground chicken bouillon
1 tablespoon sherry vinegar
Directions
In a large saucepan over medium-high heat, add the olive oil.

Stir in the onion, garlic, tomatoes, red pepper flakes, black pepper and salt, to taste. Simmer for 10 to 12 minutes. Add the chicken stock and chicken bouillon and cook for an additional 10 minutes. Stir in the sherry at the last minute and remove from the heat. Allow to cool before adding it to a blender. Puree until smooth and return to the pot, over low heat, to keep warm until ready to serve.
 
I am not catholic, but I need to go to confession. I have been TERRIBLE. I joined this a while ago. I did great for about 1 or 2 months, although I didn't post. Well, talk about falling off the band wagon. But, I will start fresh. We are spending way too much money on stuff, including stuff at the store, which seems to get thrown away.

I will use coupons, I will eat at home. DD is starting cheer 3-4 times a week and I won't get home until dinner time. I need to come up with crock pot ideas and quick things to have on hand. DS is totally lactose intolerant so it makes things a little more difficult. I will overcome, I will succeed. Ok, I think my pep talk is over now.

PS, I love reading everyone's menus.

Our family of four used to spend $180 a week on groceries, but now with coupons, sales and smart use of leftovers we spend $80-100 a week.

Sunday night we roasted a chicken (80 cents a lb rather than $3.99/lb boneless chicken breasts we used to buy). Monday night we had veggie soup (bought on sale for 75 cents a can) with leftover chicken cut up into the soup to make it almost a stew- a fast, easy dinner that tasted totally different from the previous night's chicken so we didn't feel like we were eating leftovers. Tonight we'll have hot dogs & salad (need a break from chicken!) then Wednesday we'll have fried rice with the last of the roasted chicken in it and whatever veggies are hanging around. It used to be that I'd cook the roasted chicken once then throw away the leftovers five days later...now it's three meals worth of meat!

YOu are lucky you can get a chicken to last for more than one meal. We have 5 and I have a 14 year old boy, I mean 14 year old eating machine. He can eat almost 1 chicken by himself, and he is skinny. I keep telling him that he will have to get a job soon, or I won't be able to feed him.
 
Hi everyone!

I haven't been posting because there was nothing to write about except for a WHOLE lot of take-out. We're clearing out my FIL's house and working with the contractor on the demo/renovation. By the end of the day all I want is a shower! Our menu has looked something like this:

Dinner 1-take out Chinese
Dinner 2-leftover take out Chinese
Dinner 3-take out pizza
Dinner 4-leftover take out pizza

and so on...... :rolleyes:

I finally made it to the store yesterday so we're going to try to do better~

Monday
Last night was home-made burgers and leftover baked beans. I made a massive batch of beans to bring to our family Easter gathering and there are tons left. Baked beans are pretty much going to be making frequent appearances for quite a while!

It's a cool and rainy day in Tennessee. I am home with a sick little guy. :sick: I am about to start a pot of 5 can soup for lunch. Dinner is simmering in the crock pot:

Savory Slow Cooked Beef
Smashed Potatoes
Roasted Corn
Biscuits

Time to snuggle with my baby boy...:cloud9:
 
Sunday: Steak, scalloped potatoes, green beans and rolls
Monday: Spaghetti, salad and garlic bread
Tuesday: Eggs, hashbrowns and toast
Wednesday - Saturday: Unsure. Will probably make pizza one night but I've got to look to see what I have for the other nights.
 
Tonight we are having the Pioneer Woman's baked french toast with sausage patties and fruit salad. A fairly cheap meal for us and quite filling.
 
My menu this past week and today and tomorrow
Sat- Chicken and Broccoli Bake ( made with bisquick), rolls, salad
Sun- Easter dinner with the extended family, everyone brought something- we brought fruit salad and cakes
Mon- Roasted chicken, mashed potatoes and gravy, corn, mixed veg.
Tues- sirloin burgers, potato pancakes made from leftovers, veg.
Weds.- Beef in mushroom gravy(Crock pot), noodles, lima beans and carrots

I wish I could plan more than 2 or 3 meals ahead, but we live so close to the stores and it is nice to have fresh foods.

Woke up this am in the mood for pork chops and while I have to go to store for pork chops , it is about two mins away, so I don't mind. This is one of my favorite pork chop recipes.

Wednesday something with chicken breasts . Ill marinate in lemon, olive oil and herbs I guess .
Thursday Flank steak .. not sure how yet and veggies .

Sunday ? Possibly throw something in smoker.
