Happy St. Patty's Day

I have my corned beef in the crock pot and I will be slicing it up on Rye bread for sandwiches with a homemade potato salad for dinner.
 
Went food shopping last night and spent $76.00 and saved $107 with coupons and Price Plus specials! WOOHEE!!:yay:

Tonight we are having pork chops, brown rice, and yellow and green string beans. I am saving my corned beef dinner for Saturday when I will have my inlaws over. I have to say, corned beef, cabbage, potatoes and rye bread is one of my FAVORITE meals. I adore it...:cloud9:

I too love corned beef and am so excited to have found seedless rye bread the other day since I can't handle the seeds.

I changed our dinner plans for corned beef, cabbage, and potatoes tonight too. It's all in the crock pot. I also picked up a small seedless watermelon for dessert. :)

I ditched the corn beef idea tonight , for some reason I couldnt get my brain together as far as a menu goes. Nothing sounded appealing. I did have frozen spinach in the freezer and mushrooms in the fridge, so I ran and picked up steaks... porterhouse as they were on sale .
Tonight is creamed spinach , skillet mushrooms, steak and pistachio cupcakes ... gotta have something green .

Tomorrow night is Tuna fish sandwiches and Saturday we are hosting a crawfish boil . ( there goes the budget ; ) ) We only have one a year though . Sunday will be left overs from the boil if we have any ... usually I do omelets with the crawfish and sausage , and homefries with the leftover taters and onions. YUMMY
 
I bought pork loins on sale last week and marinated 2 halves - we had the maple pork loin tonight with skillet potatoes, green beans & rolls. The maple marinade was just ~meh~ so I won't use that recipe again. Tonight we are having fried catfish, french fries, and hushpuppies (all homemade by my husband, yum!) so it will almost be like eating out for me since I won't be cooking. Saturday will probably be shrimp scampi, rice, and salad, and Sunday I'll cook beef stroganoff, a request from my older son.

I can't think any farther ahead than that!

Tonight my Grandma is taking us out for a fish fry. We always try to go at least once during lent to the one my cousins school has so we decided to go tonight.
 
Do you all mind if I join? I only cook fri-sun as I work late mon- thurs so I make sure dh has lots of quick meals to prepare at home for him and the kids- last night he made stuffed chicken breasts with parmesean potato wedges.

I went to Aldi's today for some of my produce shopping and decided to splurge on something new. I'm making rosemary and garlic cornish hens, creamy 4 cheese rice, green beans and crescent rolls. Never made the hens before so I am crossing my fingers!

Tomorrow is terriyaki marinated sirloin, baked potato and salad and sunday will be pasta and meatballs. I am working OT on sunday so I will put frozen homemade sauce and meatballs in the crockpot so I all I have to is make the pasta and garlic bread when I get home.
 
We have eaten out several times over the last two days do to being out of town for medical appt for my DH. I have some pretty severe food allergies and intolerances and have sufferred a bit do to cross contamination. I am glad to be cooking again. Tonight was tuna and veggie pasta salad and cinnamon applesauce. The rest of my current planned meals in no particular order are:
Tacos
Grilled cheese and tomato soup
Hotdogs or hummus and tomato sandwiches with homemade french fries
Tilapia and wilted spinach with linguinie and vodka sauce

We are having leftovers tonight. We have a ton of corned beef left that I do not want to go to waste.

Two Rotisserie Chickens from Sam's and container of their chicken salad for lunches. Bag of dinner, Kaiser, or the diamond shape are about $3.38.

With their roast chicken at $4.99 each I have Bob Evan's or SAM's instant mash potato with a veggie and or bagged salad. The Bob Evan;s tupe prepared mashed potato with a coupon or sale price keep for the week,

I keep a bag of frozen Burritos and add shredded cheese and salsa after they bake.

My currant best pizza deal ALDI Cheese pizza for $5.00 they are so large and bake great on the rack or foil. HUGE slices.

I have a huge bag of rice and rice cooker that runs all week.

Tonight was hamburgers on home-made rolls and french fries. Hubby and I did have lunch at Panera Bread today. $15 total. Nice treat!
 
Tonight we had:

Homemade soup with cauliflower, onions, red peppers, sweet potatoes, garlic, basil and soy milk, pureed with my immersion blender. Delicious!

Spicy sweet potato fries.

Salad with baby greens, carrots, celery, fresh herbs and topped with a little baked and sliced seitan (chicken-flavoured).

I made the soup yesterday so this all went together quite quickly.

Thurs-Shakey's pizza, mojos and chicken strips

Friday-dh had left over shakey's, dd sick so powerade and jello. I made a mexican style pasta soup with chunks of potato

Sat-Baked penne pasta

Sun- going to a BBQ taking dump cake

Mon- The plan is chicken & veggie Chinese food with fried rice but dd has a dental appt so dunno

Tues- Trying for the 1st time chicken coated with the french onion crispy onion. Rice or pasta salad

Wed-BBQ ribs in the oven, mac salad and corn on the cob

OMG! You have to post the recipe for the Bailey's Cheesecake! That sounds delicious.
