Eat at home

We're waaay off again. I was doing pretty well with my "eat at home" at Disney World plan and only had one meal out with a friend. We used a restaurant.com gift certificate for that so it wasn't too bad.

Got a call on Monday afternoon that FIL is in the hospital and not doing well. He was diagnosed with Alzheimer's about 10 years ago so it's not unexpected but still....

Drove like mad all day yesterday and had two drive-thru meals on the way. No plan for the next few days, we'll have to see how things go with FIL :sad1:

Sorry to hear about your FIL. Right now just getting though the day sane is probably difficult. The last thing you need to worry about is cooking dinners. You'll get back on the horse when you can.:hug:
 
It's been a busy week so far I have a sinus infection but I also got some good news this week too! I have to go in for further testing to be a bone marrow donor. First they test and type my blood and then I have to go get a checkup. I am thinking the donation is going to be in April. It will be neat because my first donation was around April 14th two years ago.

Today was shopping day here. It was also a meat week so I stocked up. I got a big pork shoulder that I am dividing into two. I am using part of it today for crock pot pulled pork sandwiches. I also bought some t-bone steaks as a treat. I told my hubby that he has to grill them but he is using the excuse we got snow not to lol! More news, I am hosting a Zatarains House Party this Saturday. That added about $30 extra to my grocery bill but I got some freebies too:thumbsup2 So here is my menu for the week.

Crock pot Pulled pork sandwiches and fried pickles
t-bone steaks and a potato
chicken
Saturday: homemade gumbo, Zatarains jambalya, rice and bean dip, rootbeer cupcakes, creole mustard potato salad and some other goodies

OK are you ready for a funny? We were supposed to have pancakes and sausages last night and then sort clothing for the Midnight Run. Hubby wanted to eat out I could tell.
Me: "Oh eating out would be nice but I am making pancakes"
Him: "Oh you work too hard and pancakes have so many bowls to wash" (UHM ONE)
Me: "Well actually I thought we would pick up a pizza tomorrow being it's Ash Wed. and we can't eat meat tomorrow"
Him: "Oh we could do both. Eat out tonight and pick up pizza tomorrow" (Uhm No)
Me: "I don't think so"
Him: "Hey I have a ton of birthday money left I'll treat"
Me: "LET'S GO!" lol :rotfl2:

So we went to the Diner and hubby used some of his birthday money and I did not enjoy my meal at all! :mad:BLECK It's true home cooked food is so much better!

So tonight really will be pizza. We food shop on Wed. and can pick it up on the way home. I planned for this treat and their running a special $10 for a large one topping ;)

Thanks! I am most likely doing the PBSC donation which is done through your arm at the blood center but since I have such small veins I have to go to the hospital to get a central line in my neck. It's really not as painfull as it sounds! I also have to take a medication for the week which increases my white blood cells. That causes some headaches and bone aches. I signed up to do it in 1991 and wasn't called til two years ago!

We did our grocery shopping today. We spent $95.02 but saved $35.79 in coupons/sales. Part of the bill included our St. Patrick's day dinner since they had everything on sale. All I need to but next week is the rye bread for that.

Tonight we had cheese fondue with different veggies and bread to dip in it. I do not like fish so we get creative during lent.
 
Change of plans tonite is going to be meatball subs with homemade sub rolls (I can't believe those babies worked!! and they smell gooood!)



Does anyone have a recipe for the homemade sub rolls, or did I miss it along the way? Thanks!
 
Tonight we are doing baked potatoes with chili, cheese, and sour cream on top. I am also baking up a few extras to cup up and freeze for homemade hashbrowns.

All I did was use a simple French bread recipe
1Tbsp yeast
1 1/2 cups warm water
3 3/4 - 4 1/2 cups flour
1 1/2tsp salt
Cornmeal for dusting your baking sheet

Disolve the yeast in 1/2cup of the warm water. Pour rest of water in large bowl add cup of flour and the salt add the yeast mixture and rest of the flour knead for 10 minutes(I used my bread machine)
Grease a large bowl drop in dough turn to coat whole blob cover and let rise 2 hours
Punch down I divided it into 6 mini loaves put on the cookie sheet dusted with cornmeal cover and let rise another hour.

Bake in 450 oven
Put a metal baking pan in bottom of oven fill with water
Put your bread on the rack above this(middle of oven)
The water gives you the steam for a crunchy crust.
Bake for 20 minutes.
 
Tonight is oven baked sticky chicken wings, homemade coleslaw with apples and raisins, and homemade cornbread.

I am looking forward to this meal...I love all those foods ;)

Can you share your recipe for the baked sticky chicken wings :wizard: ? I have two bags of wings in our downstairs freezer and am looking fro some new ideas, thanks.
 
Tonight we had can beef stew because it has been a wild day.

Tomorrow hamburger and fries

Saturday and Sunday we have go to a wait I don't know what to cook

Monday we eat after the furnal.
