Okay, so for the next two weeks I have the following so far:

Week 1
-BBQ chicken thighs with corn on the cob and rolls
-Steak with a Shallot Wine reduction with baked potatoes
-Tuna Melts
-Italian baked pork chops with mashed potatoes and glazed carrots
-(Need another meal here)
*Special Treat* Pineapple upside down cake

Week 2
-Hot Dogs with baked beans and corn on the cob
-Italian Style Meat loaf with roasted or mashed potatoes and green beans
-Something from the freezer case that can get tossed in the oven (tuesday's are REALLY bad days for us)
-(Need another meal here)
*Special Treat* unknown

If I figure out what to cook that last week, I'll update.

I caved in last night and went out to dinner. We leave in a few hours for a weekend away and last night I was just too tired from packing to cook. The good thing about this weekend is that we eat all our meals at our beach house so no extra cost of going out.

Just had to sub to this thread! Hubby has medical issues that have turned into very picky eating...all the usual foods we've eaten for years he suddenly can't tolerate. Y'all have some fantastic meal ideas -- thanks for sharing!

I just went shopping yesterday for most of the food for the month based on sales. I will have to pick up a few fresh things each week, like produce, but for the most part it is done. I just made our month long menu plan. I usually only do a week at a time but I figured maybe if I have a monthly one I will stay more on track! Especially since the shopping is done! :)

OK kids go back to school the middle of next week so i'm starting the following Sunday 9/12 - here is my 3 weeks menu:

Sun - FishSticks w/Pasta & Marinara sauce
Mon - Hamburger helper & Garlic bread
Tues - Pizza Pie (buying) crazy hectic night..
Wed. - Chicken Cutlets & Rice a Roni
Thur. Chicken Nuggets & Pasta w/Vodka Sauce
Fr. - Rotisserie Chicken & sides

Sun - Tuna Casserole
Mon - Husbands b-day probably eating out..
Tues - Meatloaf
Wed. My b-day
Thur - Crockpot (not sure what..)
Fri - Pizza pie

Sun - Macaroni & Cheese
Mon - Hawaiin Chicken
Tues - Fish
Wed - Chicken Cutlets & Ceasar Salad
Thur - Beef Burgundy
Fri - PIzza Pie

Fridays my son has football practice and then later on cub-scouts so i'm figuring we'll just get a pizza pie -

I hope this works out...

I've been gone for 2 weeks so I'm trying to catch up on the thread. I just wanted to say that I went to TiffanyK's blog and I'm getting tons of meal ideas! I'm going to give the Mel's Diner Chili a try along with the crockpot Cantonese Sweet & Sour Chicken.

In the past I have always quickly thrown together a weekly menu the morning that I go grocery shopping. I'm going to try to plan meals out further in advance...hoping this will help offer me a variety as it should give me more time to browse sites like Tiffanyk's blog and others. I went grocery shopping yesterday so I'm covered until next Wed., but I've started working on next weeks menu and will try to get into the following weeks before I go grocery shopping next. :thumbsup2

So I was thinking about how much money we spend on take out and fast food and eating out and it stressed me out. we don't have the extra we just don't pay off the bill as much as we want to so i need some motivation and i turned to the dis I say lets start a eat at home thread. You can post your menu's for the week or however so i will start

I spent a little under 125$ at the store today and I really don't know what I am going to do but here is a start

Tonight we had hot dogs and corn on the cob
tomorrow pizza meatball subs
Wednesday pot roast
Thursday chicken bake
friday mac and cheese
Saturday meatloaf
Sunday?

Not too bad the trouble comes once the weekend hits its so hard not to go out.

We cook at home almost every night. IF I had my druthers we would eat out more often. But dreading the cooking is more than half the battle. Actually doing it for me goes quickly. Grocery shopping is a big yuk!!! Savings tons of money cooking at home is so very true. Didn't realize how much we save.:surfweb:

Sorry forgot to mention Paula Deen's recipes r great. And they USUALLY don't require expensive herbs/spices and taste delish.

Wow! I can't believe I am so far ahead for once!

I'm so jealous of how organized all of you are. I just can't seem to get it together because of our crazy schedule. We leave our house every morning at 6:45 am. and don't get home until 6:00 on Monday nights and 7:45 on Tue./Thurs. nights. The other nights are a more reasonable 5:30. Any suggestions for the 3 late nights? I'm always in a panic. :scared1:

I try to do some cooking on the weekend to have stuff for the nights I'm working later - would that work for you? This weekend I made chili and a bean/cabbage soup (we are vegan). With those in the fridge, I can just reheat them in the microwave and we're good to go.

Another strategy that works well for me on busy days is making a main-dish salad. I'll buy prepared salad greens, then just add a selection of cut-up vegetables and something for protein (chickpeas, nuts and seeds, perhaps some cooked seitan) (if you eat meat or cheese, you could add some of those). It's quick and nutritious as well.

Get a crock pot with a timer. I would do soups, stews, chili, spaghetti sauce etc. on those nights. Anything that can stay warm in the crock pot for an extended period of time.

I agree with Darcy--use a crock pot! Also, I use a rice cooker, and bread machine. Any gadget to help us eat more at home and not fall to the temptation to eat out or get take out.

OH THANK GOODNESS I FOUND THIS THREAD!!! :worship:

We have fallen into a rut of 'what do you want for dinner...I don't know what do you want? Heck. Let's just go out." It's killing the budget that is for certain!

I'm in desperate need of help!

So, here is my week...

Monday: Ordering pizza...not budget savy...but we had $ left over from the weekend and we were both craving this last night.

Tuesday...Hamburgers with fries and or corn on the cob-hopefully will get done b/c I have a women's group meeting

Wednesday...Not sure...might not have to cook at all

Thursday...Dinner at a friends

Friday...Beef stir fry

Not too bad....but not great either. Sometimes our schedules are so wacky that it is difficult to get on the same page to eat dinner...Next week will be better...promise!:thumbsup2

We had a month of crazy upheaval around here like you wouldn't believe (or maybe you would, in which case you have both my empathy and sympathy). I'm ready to get back on the bandwagon and just wrote out a two week menu that includes a church cocktail party (yes! cocktails...I love our church :thumbsup2) and a rare night out w/o kids. So while not totally eat at home, still better than recently and within our overall plan. Here goes:

- Tonight: stuffed peppers, green salad, green bean casserole (:scared: it was hubby's request)
- T: hot dogs, mandarin oranges, tomato salad
- W: garlic lime chicken, asparagus, oven fries, pickles (red onion and ginger radish - yums)
- H: sausage, cabbage and tomato "casserole" (via crockpot), wild rice (via time-able rice cooker)
- F: Church cocktails (pizza party for kids in youth rooms)
- S: Night out, dinner at fave Indian restaurant
- S: Grilled Buffalo chicken breasts, hashbrowns, broccoli, pickles
- M: Chicken and sausage Etoufee, mashed potatoes
- T: Black beans, rice (plain yogurt, cheddar cheese and salsa as garnishes)
- W: Cheese grits, green beans, roasted beets
- H: Turkey cutlets w/ mango salsa (via crockpot), green salad
- F: Bison tacos, refried beans, tomato rice
- S: Split pea soup, papadum

So, there we go in theory. We'll see how it works out in practice. Tuesday and Thursday bring football practice and Wednesdays are hip hop dance class. Thrown in there somewhere is Back to School night (a.k.a. Open House) and Girl Scout registration night.

I definitely need to get a Crock pot with a timer because most of the recipes that I have are for a much shorter cook time than I'm gone. Until then, if anyone has a favorite quick dinner recipe, please post! :goodvibes

Beans and rice is always a good one (whatever kinds of beans you like, plus rice and maybe salsa and/or cheese and/or sour cream). Stir fries can be fast, too and not at all tricky. Taco salads don't take too long and neither do "burger" salads (cooked burgers served on a bed of lettuce and your favorite salad toppings and dressing).

Nachos make a fast meal that's can be reasonably healthy: spread chips on a jelly roll pan (don't have to be in a single layer) and top with whatever you like (leftover chili, refried beans, a drained can of black or kidney beans or plain browned ground meat, for example), shredded cheese, sliced hot peppers (or not), dollops of salsa, diced green or red bell pepper, diced tomato, etc. Broil for just a few minutes (watch carefully) until cheese melts and is just starting to brown. If you like avocado/guac and/or sour cream, add it after cooking.

With this you can have dinner on the table in under 15 minutes and it's filling! It's amazing how this thing that can be "just" an appetizer in a restaurant actually can feed a number of people. For my four-person family, this is a good lunch or dinner. Add my SIL and her son for company and we include a salad. Enough for everyone and soooo fast!
