What is Wicked chicken? I'm always looking for good chicken recipes!

Wicked Chicken

1 box stuffing mix
1 package peas-thawed
2 small cans of mushrooms
2 cups cooked chunked chicken
1 can cream of chicken soup
2/3 soup can of milk
butter
water

Grease a 2 quart casserolle dish. Layer dry stuffing mix in the bottom, just enough to cover it. Layer in a package of peas, mushrooms, and cooked chunked chicken (about 2 cups). Mix a can of cream of chicken soup with 2/3 of a soup can of milk and pour over the top. Make the rest of the stuffing mix according the directions on the package and layer on top. Cook at 350 degrees for 30 min.

I've made it using left over turkey instead of chicken, used different vegetables (green beans) and different cream soups (mushroom and celery) and its always come out good. The above is my family's favorite version of it.

Would love to know too!! I love a good chicken recipe. Also, your week meals look so gourmet. I wish I had the time. Mainly, it's grilling or the crockpot for us. ETA: We posted at the same time. Thanks for the recipe, I think I'll try it out.

Here is my list:

Sunday: Crockpot honey-ginger chicken, sticky rice and steamed broccoli;
Monday: Soccer game right after work, so unfortunately it will probably be a grilled chicken sandwich at the concession stand;
Tuesday: Grilled hamburgers and hotdogs and baked beans;
Wednesday: Spaghetti with meatsauce, salad and garlic bread;
Thursday: Skillet Italian Chicken thighs with rice
Friday: Pizza
Saturday: Steaks on the grill maybe, with mushrooms and baked potatoes

I have everything now except for the steak and mushrooms. I'll pick that up on Saturday.

On a side note, I went to Aldis yesterday and I just love the place. I've been before, but now go about once a month. I bought an entire cart full of stuff for $86.68. If you have a nice one in your town, I strongly suggest that you try it out!

Actually, I work full time so most of my meals are really easy to do. I do a lot of prep work for the week on Sundays like getting the veggies all washed and cut up and in bags. Same with the salad. I make it and put it in plastic bags. Casserolles I make the night before so they just have to go in the oven the next day. Once you get used to doing it, it really doesn't take all that much time.
 
I LOVE to use recipe sites to find some variety. Many have a tool where you list ingredients you have and they will give you recipes. Sometimes just a little adventure is better than ANYTHING you might get out
 

I have weeks like that, too. Don't be hard on yourself ~ sometimes it just happens that way :)

I am still working on a menu but here is what I know for sure

Tonight: Pepperoni take and bake pizza from Wal-mart with salad
Monday: Chicken enchiladas
Tuesday: Weeknight ravioli casserole with garlic bread and leftover salad

Wed. - Mac & Cheese
Thur. & Fri - staycation days...so will be eating out...

I love this thread, we used to eat out a lot too during the week, I vowed to stop since I started seeing such a dent in our budget from it over the winter, I have been fixing some take out restaurant favorites at home and now we only go out about 1 every 2 weeks for a nice dinner instead of junky takeout for lunch and eating out all weekend long. This weeks menu for us, a family of 5 is.....

Monday-General Tso's Chicken, Rice and Snow Peas, homemade eggrolls
Tuesday-Grilled Pork Chops, Roasted Potatoes and Carrots W/Onion, applesauce
Wedneday-BBQ chicken, Mac Salad made with veggies from Garden, veggie is whatever looks good from garden, corn muffins
Thursday-Bacon Ranch Chicken Salads, Rolls
Friday-Homemade Pizza, Buffalo Busters, sliced tomatoes and cukes
Saturday-Going to Family Reunion...Packing Chicken Salad Sandwiches for drive.
Sunday-Tough day no plans yet...county fair in town probable fair food..major budget buster:goodvibes

Actually it is so simple because BJ's sells a big glass jar of the General Tso's sauce by Iron Chef and its delish jar last a while just need a little bit to toss in, we toss the tyson popcorn chicken in it, served on top of some minute rice and frozen snow peas tossed in butter and salt and pepper. The eggrolls are just bagged coleslaw mix with carrots 1 small chopped onion with a little bit of fresh ginger and a little bit of soy sauce salt and pepper, mix up spoon a little into doubled up eggroll wrappers and wrap eggroll syle, heat up your deep fryer or submerged in hot oil in deep heavy pan about 375 degrees until golden brown.

The sauce is as spicy as we like so I sometimes add red pepper flakes to ours, leave as is in some for kids. Sorry no measurements I don't use them just a little here and a little there kind of cook:goodvibes
 
So I finally figured out the menu for the rest of the week.

Last night we had leftover enchiladas as we had so much left from the night before

Wednesday: Weeknight Ravioli Casserole with meatballs (all from the freezer)
Thursday: Sloppy Joes with glazed carrots
Friday: Chicken cutlets with lemon butter sauce over rice and salad
Saturday: Roast chicken with mashed potatoes and corn
Sunday: Apple Sage pork chops with buttered noodles
 
Ok. . .here we go. I'm still going to try and stick with pantry items this week.

Tonight was a late football practice, so we had hamburger helper and salad. I resisted the drive-thru. :thumbsup2

Wednesday: Crockpot whole chicken, mashed potatoes, and green beans
Thursday: Chicken Enchiladas, and salad
Friday: Stirfry pork and veggies, and Asian salad.
Saturday: Garbage soup (kinda minestrone made with all the fridge leftovers) and rolls
Sunday: Garlic shrimp pasta, broccoli and salad
Monday: Crockpot turkey breast, stuffing, and peas
 
Ok so after a little food shopping here is what I have

Yesterday- hot dogs
Tonight- homemade pizza and french fries
Thursday- Spaghetti with sauce?
Friday- My cousin took a summer job for the Worcester tornado's gave us tickets so diner will be there.
Saturday- Roast
Sunday- My baby's 4th Birthday party! Subway paltters and a party pizza!
Monday- leftovers
Tuesday-Thursday we are going to the cape cod!!!!:cool1:

Hopefully I will be so much more motivated when I get back!

Next month I will start posting days that i eat out with the total so I can see where the money goes

That is as far as I have gotten, but I do have enough food in the freezer/fridge to last for the week and then some, so I am not too worried about it.
 
Did anyone make the Macaroni and cheese? i want to make it tonight..it says 2 cups of macaroni - is that enought for 4 people? Also OP u said u use the entire box of pasta but use 1 1/2 cups of Mile - wouldn't u need to atleast double the recipe?
 
I am going to join in starting next week when school begins. Until then, we are still in 'vacation mode' and I can't promise anything ;)
