Eat at Home 3!

I need to eat what I have on hand too... but I am horrible about it. I have also been quite sick since last Wednesday so any plans went out the window then. Here is what I am hoping to salvage:

Tonight/Tomorrow: Chicken teriyaki bowls (brown rice, teriyaki chicken, broccoli, and pineapple)
Wednesday/Thursday: Pork Chops, stuffing, and green beans
Friday: Asian salmon bowls (brown rice, salmon, kimchi, and broccoli or another veg)

Working on plans for the next couple weeks. Currently have a 13lb turkey in the freezer which I got for .77 a lb for Thanksgiving, but now I have zero room in there. Which is bad because I need to get frozen broccoli for the broccoli casserole!
 
Today: Leftover chicken parm. DH on a long roll as a sandwich. Me on a plate with some leftover spaghetti.
Sunday: Cheeseburgers on the grill with fries (DH will add sauteed onions from the freezer)
Monday: Teriyaki tacos with rice
Tuesday: Dad moved from hospital to rehab and mom wants to go to the diner so that's what we shall do
Wednesday: (still with mom) BBQ turkey meatballs over egg noodles (gave her a few options and that's what she chose)
Thursday: Back home and always our most up in the air day so we will see. Often ends up with breakfast for dinner being the default.

ETA: My dad really can't go out to eat any more and doesn't want to so when he's in rehab and she's comfortable he's safe and making progress she likes to get dinner out once in awhile. Fine by me.

I had posted last week about wanting to do a pantry challenge, and it's pretty ironic timing bc my husband was laid off this week (he works in tech, it's so volatile right now). So, here's to more pantry meals lol!

Sunday: Skirt steak, baked potatoes, salad
Mon- chicken cacciatore, egg noodles
Tues- pancakes, bacon, fruit, hashbrowns
Wed- Pesto tortellini, salad
Thur- chicken fingers and fries (both from the freezer), salad
Fri- baked stuffed shells, salad
Sat- The kids both have bday parties at dinner time to attend, so we will see. It'll just be us at home.

Sorry to hear that. Good luck with the planning. It's a tough spot to be in and especially this time of year. We can always brainstorm ideas if you need some inspiration!

Hope you are feeling better! My daughter just asked me to make her broccoli casserole for Thanksgiving. Ive never made it so if you have a great recipe I'd love it!

Sunday - Turkey, stuffing, corn on the cob (bought 13# butterball turkeys from Amazon fresh for $5.88!)
Monday - leftovers
Tuesday - Chicken Teriyaki Stir Fry with lo mein noodles
Wednesday - Pizza on French bread (pepperoni & cheese on hand,, bought bread for $.20 on clearance)
Thursday - going to Epcot, will be testing some small bites at Food & Wine
Friday - unsure, most likely something simple and quick
Saturday- some sort of sandwiches

Tuesday - Butternut Squash Ravioli in brown Butter sauce & salad
Wednesday - Chicken Apple Sausages, Honey carrots & green giant cheesy riced cauliflower & broccoli
Thursday - Fish Sticks and tater tots (has to be a quick meal this night)
Friday - Chicken Alfredo over broccoli (no pasta)
Saturday - Beef Stir Fry over Cauliflower rice
 
Hope you are feeling better! My daughter just asked me to make her broccoli casserole for Thanksgiving. Ive never made it so if you have a great recipe I'd love it!
I am doing okay. The illness kicked up some of my chronic issues so that has been oh so fun.

Here is my cousin's recipe for broccoli casserole.

3 packages frozen broccoli
1 C mayo
1 can Cream of Chicken
1 Egg
2 Sticks Butter
1 Package Sharp Cheddar Cheese shredded
2 Sleeves Ritz Crackers
1 tsp Paprika
Salt and Pepper

In a giant bowl, mix the mayo, cream of chicken, egg, and salt and pepper until creamy. Add in the broccoli and mix thoroughly so each piece is covered. Fold in the cheese. Place in a 9X13 greased casserole dish.

In a saucepan,, melt the butter. Then add in the crushed sleeves of ritz crackers and the paprika. Add on top of the broccoli.

Bake at 350 for 45-60 minutes.

Wednesday (at parents)- Marinated london broil and baked potatoes (dad's request after 3 weeks of hospital/rehab food)
Thursday- big assumption here that we make it to my brother's for Thanksgiving. I sincerely hope so! If not DH and I will stay home with mom and dad and figure it out. Already advised my brother that this a is game time decision. He's fine about it.

I'll post the recipe I have on Friday (I don't have it with me at my parents' house because I made the marinade ahead of time and brought it here with me). The one I use includes lemon-lime soda (diet is fine), brown sugar, garlic (i use the one in the jar), soy sauce, ginger, vinegar (i use apple cider vinegar). I don't remember the amounts, but will confirm when I get home. I believe the original recipe calls for chicken thighs or all the chicken pieces, but I chop up chicken tenderloins because we like it over rice. It works well with whatever kind of chicken you prefer. There is a companion recipe for fried rice using leftovers I'll post in case anyone is interested.

Tomorrow: Spicy chicken cacciatore over penne
Mon- breaded shrimp, rice, salad
Tue- chicken biscuit sandwiches, fries, salad
Wed- skillet gnocchi, salad
Thur- I have a late night at work, they will do their own thing
Fri- bbq chicken pizza, salad
 
Saturday- I'm having Ramen, DH chicken tenders and fries
Sunday- Grilled cheese and soup (tomato for me and chicken and rice for DH)
Monday- don't know
Tuesday (parents' house)- lazy chicken cordon bleu with egg noodles
Wednesday (parents' house)- Crockpot beef stew with a pillsbury french loaf baked in the oven

GARLIC BROWN SUGAR CHICKEN (as written with my notes on the side)
-1 broiler/fryer chicken cut up or 6 boneless skinless chicken breasts (I usually cube up chicken tenderloin, but you can really do whatever you want)
-1 cup packed brown sugar (I use half a cup if that....for us it's plenty but we aren't using bone in pieces)
-2/3 cup vinegar
-1/4 cup lemon lime soda (diet is fine....this always cracks me up because of the sugar above)
2-3 TBSP minced garlic (I just use the jarred kind and add a frozen ginger cube but not necessary)
-3 TBSP soy sauce
1 t. cayenne (i cut this out if making for my parents but like it both ways)

Marinate chicken 2-4 hours. Transfer chicken and marinade to a large skillet. Bring to a boil then reduce to a simmer. If using bone in chicken cook for 45 minutes. I cook about 20 since I use chunked up boneless/skinless.

GARLIC CHICKEN FRIED RICE (disclaimer- I have never made this so can't vouch for the recipe but thought it might be useful to someone even if not the exact recipe, but the method)
1 egg
1/4 cup oil divided
1 cup celery sliced
6 cups cold cooked rice
1 cup diced ham
1-2 cups chopped leftover garlic brown sugar chicken
1/2 cup soy sauce
1/2 tsp ginger

In a large skillet or wok scramble eggs in 1 TSBP oil breaking into small pieces. Remove from skillet and set aside. Add remaining oil to skillet and stir fry celery and garlic over medium high heat until crisp tender. Ad rice and cook stirring for 3 minutes. Then throw in ham, chicken, soy sauce, ginger and the egg. Heat through. Makes 4-6 servings.

We went out with friends Friday night after a playoff football game, so we had leftovers last night.
Tonight, I made a big ole pot of chili. So tonight was frito pies. We will eat on that Monday (probably with some cornbread) and maybe Tuesday (frito pie again or just a bowl of chili with some crackers) before we will have to throw it away.
We have our final Christmas program practice at church Wednesday from 6-8:30, so we won't have time to cook. Will probably grab something cheap and small, if we eat dinner at all.
Not sure about Thursday/Friday. Maybe sausage wraps on Thursday.
This time of year, we're bad about winging it because we both have stuff going on between church and work.

Tuesday (@parents): offered dad the option between take out pizza or ravioli w/ sauce and bread. so far he seems leaning toward pizza but i'll check in about it again on Monday night. Trying to give him as much choice/agency as possible.

Thursday- we come back home and just make whatever
 
Tonight- penne vodka, garlic bread
Tomorrow- FFYS- we are going out for a late lunch with family, so IDK who will be hungry
Mon- pot roast, potatoes, carrots
Tues- breaded shrimp, leftover potatoes and carrots from Monday
Wed- BBQ chicken pizza, salad
Thur- Husbands bday, going out somewhere
Fri- something quick and easy from the freezer or leftovers from Thur, depending on the plan
