Eat at Home 3!

I was supposed to make chicken legs, potatoes, and carrots tonight, but I forgot to take the legs out of the freezer. So tonight was a night out with a stop at Five Guys. I'll make the chicken tomorrow.
 
Gotta stretch the budget this week ;)
Friday- Spaghetti and meatballs
Saturday- I made corn dog muffins and mac and cheese. Double batch of the muffins for the kiddo's lunch this week :goodvibes
Sunday- Cuban roasted chicken, black beans, and yellow rice
Monday- Leftover meatballs for meatball subs. Probably some baked fries.
Tuesay- Kiddo has 1st football playoff game... Hopefully we can get home at a decent time. I'll pull some frozen pasta e fagioli from the freezer to the crock.
Wednesday- Pork chops and rice. Not sure which recipe yet.
Thursday- Tacos
 
Monday: Chicken stuffed with salsa cream cheese (in a container from publix), peas and corn
Tuesday: Spaghetti w/meatballs and meatsauce (from freezer)
Wednesday: Leftovers
Thursday: My grandparents will be in town, and they are taking us out to dinner for my birthday!
Friday: Creamy chicken enchiladas http://www.mylifeasamrs.com/2013/01/moms-easy-creamy-chicken-enchiladas.html, chips and salsa
Saturday: Broccoli fettuccini alfredo
Sunday: Leftovers
 
I'm going to try this. Maybe I can think of enough stuff to cook and stay on track. As you'll be able to tell, DH only likes corn. lol

Friday-Chicken Fingers, chicken/veggie rice, corn and beans
Saturday-Meatloaf, fries, corn and broccoli
Sunday- Spaghetti with meat sauce and garlic cheese toast
Monday- Roast and gravy in the crockpot, rice, corn, and probably more broccoli
Tuesday- Fried pork chops, cheese rice, corn
Wednesday- Leftovers
Thursday- Tacos
Friday-dinner out
 

Does anyone have a recommendation for a good brand of jarred alfredo sauce? I really like olive garden's so is there anything like that? I would make it myself but I am looking for something quick.
 
Honestly, I find Alfredo quick and easy - melt 2-4Tb of butter with some minced garlic (to taste) - once melted, add an equal amount of flour and let cook into a roux. Once you have a good roux, create the sauce with 1 part chicken broth (or veggie broth if vegetarian) - add 1st and stir the roux into the broth, so no lumps - and 2 parts milk (I use whole) - really, just eyeball it:)...and then add a handful of parm once you've got a creamy consistency, and then salt/pepper (hot pepper flake) and more cheese to taste. If it gets too thick, add more broth (or milk, but I tend to like it saltier vs creamier:). If it gets too thin, let it cook a little...

Alfredo can be done in the time it takes to boil the pasta water:)...and it's a good way to use up an open can of broth or milk about to expire...

I don't know how it compares to the Olive Garden alfredo sauce, but our family loves the Classico alfredo sauce.
 
You make that sound so easy but it is usually so intimidating! I may have to try this.

It's probably not cheaper than a jar of sauce, but it can be done to taste and you know everything you're putting in it (and I usually plan mine when I know I have too much milk or when milk is on a big sale, so the cost is a wash to me:). I will also say I always find this alfredo sauce works wonderfully with a little pile of "green" veggie on top (even looks restauranty:)). I routinely serve my alfredo pasta topped with a simple sauteed spinach, kale, collard...even a broccoli...and it always cuts through the richness of the alfredo perfectly (and it means I don't have to find an extra plate or bowl for a salad). Leftover chicken also works well (I've been known to get the last shreds of chicken off a previous meal's rotisserie and to just toss it in the sauce to warm a minute or so before I toss with the pasta)...

yall make some fancy stuff.. I'm going to have to change ours up a bit. We pretty much never eat out and our dinners are always the same, sometimes I will change up the day of the week just to make it different lol..

Lastnight was Pesto Parm shaved ham (Boars head deli) with pita chips
Tonight will be Hawaiian bun burgers with pita chips & broccoli

Thursday will be Chicken pot pie
Friday will be Steak, rice pilaf and garlic green beans
Saturday will be frozen pizza
Sunday is out my DD 22nd bday at Applebees
 
Hey Everyone!!!! I haven't checked in in a LONG time, but I am back!!!! This past summer I found out that I have Celiac, I am officially Gluten Free now. I need to preface this menu with the fact that our family is VERY busy right now. One DD is in basketball, another DD just got her first job and works evenings, I have a zumba class once a week, and I work a side job one night a week....BUSY! So, our weekly menu has to be quick and EASY!

I make my Alfredo by melting one stick of salted butter, adding one sm container of heavy cream when melted, salt, garlic powder, nutmeg, and a little pepper. Let it thicken, add cheese. I usually use 1/4 tsp of all spices to start(not pepper) and increase as needed. Super easy!

Yes, I make my own alfredo as well using basically the same ingredients. I have never thought of putting nutmeg in it. Interesting twist of flavor. I may have to try that next time... :idea:
 
Menu Plan Week of Nov 14th

Saturday- red beans and rice with kielbasa
Sunday - cube steak, mashed potatoes and green beans.
Monday - Mexican chicken, black beans, corn and sliced avocado
Tuesday- red pepper/spinach grilled cheese and tomato soup
Wednesday - leftovers
Thursday - chili stuffed potatoes
Friday - Frittata with veggies
 
I have been doing much better at eating at home and sticking to a strict budget. I have a lot of house projects I am working on so any extra cash is a good thing.

Friday night we did home made pizza and salad
Last night we had roast beef with potatoes, zucchini, and rolls
Tonight will be orange chicken stir fry with noodles
