Suggestions needed :

I have an overly difficult family of five to cook for. We eat out way too much, but at the same time eating at home can prove difficult.

I'm not a short order cook, I'm not into making 3 different meals for 5 people, but I do need some flexibility in being able to omit or alter ingredients, such as pasta, I'll just pull out some plain noodles before saucing the rest.
I'm from the school of : this is what I made for dinner, eat it.

DH : love all things from a crock-pot, he likes heavy "man-food". If I made a roast 5 nights a week he would be happy. NOBODY else in our family likes food like this. He really liked thick, hot, hearty food, somewhat I call "winter food" If DH wants meatloaf he better order it while we're out to eat.

Me: Allergic to shell-fish and our entire family doesn't eat any type of fish in general. Also Lactose-intolerant to varying degrees. I can do most cheeses, but things like straight milk or ice cream are no-go's. I grew up on "man-food" as that was what my father dictated we ate. I hate most of it; roasts, stews, pork chops, gravy covered steaks, pot pies, tuna-noodle casserole, heavy crock-pot food. Strongly dislike tomatoes, and tomato sauce, don't even care for pizza sauce. Mushrooms and brussell sprouts are off the table.

DD15- loves all things salad. well, almost all things salad. Generally will eat just about anything I make for dinner in an effort to help prove to her 2 little brothers that they won't die if they eat their (insert food)

DS9 - the most difficult of them all . Both boys used to be lactose intolerant as babies and tots. For the most part their tummy has gotten better, but DS9 has a strong adversion to anything with cheese. He has convinced himself that he would probably die if he ever ate a mouse-size nibble of cheese in his life. He is the king of all things plain. Pasta - plain, sandwiches - plain, chicken - plain, biscuits - plain. He also has himself convinces that I intentionally make specific things for dinner that he doesn't like........( I shop by sales, budget, coupons, etc.....I don't sit around and plot dinner meals against him :charac2:

DS 7 1/2 - Loves all things C H E E S E. Just about anything and everything that could have cheese added to it makes him happy. Has decided in the last year or so that he likes simple grilled chicken breast. Sometimes I can convince him to eat a small steak. Likes very simple type meals. Would live off of grapes and goldfish if I let him

Other problems we face : left-overs. I'll make something, we'll have left-overs, nobody will eat them, they'll sit in the fridge until garbage day and out they go. DH will say he'll take it to work for lunch and very rarely does. I generally make things to appease my family, not because I really wanted that meal in the first place, so if I didn't really want it the first time, I'm not going to care to eat the leftovers of it.

Wednesday (3/25) - we went over my friend's house, she made baked ziti for dinner, we brought a salad
Thursday - Island pork roast, honey roasted red potatoes, salad
Friday - left over baked ziti, pork, baked potatoes, salad, out to TCBY for dessert
Saturday - homemade pork fried rice, salad
Sunday - steak, biscuits, brussel sprouts, salad
Monday - we ate out Mexican
tonight - chicken fajitas

need to come up with a plan for the rest of the week

Wednesday: Buttermilk oven "fried" chicken, spinach salad, and mashed cauliflower
Thursday: spicy sriracha salmon and broccoli

Neat thread! I am all about saving money and eating at home! More money for Disney trips, right?! LOL I have definitely learned that meal planning is the key to our grocery budget. We have a family of 4 (2 girls ages 3 and 4) and we eat most of our meals at home. Usually dinner leftovers serve me and the girls the next day for lunch

A little late to chime in for the week, but here it is!

Monday: quinoa & red lentil patties w/ basil aioli, cashew mac & cheese bake, roasted asparagus, and baked sweet potato w/ coconut oil, cinnamon, & hemp seeds (A mishmash of leftovers from the weekend!)
Tuesday: quinoa red lentil patties w/ basil aioli, cucumber & cherry tomatoes salad w/ vinaigrette & hemp seeds
Wednesday: baked breaded tofu, mashed red potatoes, cream gravy, roasted asparagus w/ hemp seeds
Thursday: homemade veggie chorizo, pico de gallo, guacamole - put on a bed of lettuce, tortillas, or crispy taco shells
Friday: homemade pizza topped w/ chickpeas, za'atar, cherry tomatoes, & cashew garlic spread, salad husband brings home from work
Saturday: cashew garlic spread & spinach phyllo triangles (spanikopita of sorts), za’atar roasted carrots
Easter Sunday: portobello wellington and a tempeh wellington, marinated asparagus, roasted carrots, and a carrot cake to take to family meal

The quinoa red lentil patties have turned out to be such an affordable entree and super delicious! http://www.mindbodygreen.com/0-13311/red-lentil-quinoa-cakes-with-basil-cream.html

I can't say that I have advice for you, however I can tell you I understand. 90% of the meals I have planned and posted are only for my 14 year old daughter and I. I have a husband that went vegan about 3 years ago. He makes most of his own meals and eats a ton of left overs of the meals he makes. Occasionally I'll make a vegan meal for all of us or sides that can be modified to vegan or salad. Then there is my 11 year old daughter who eats NOTHING. She will eat plain roasted or grilled chicken or breaded and fried/baked chicken and steak. The only other things she will eat is frozen chicken fingers from Market Day I always have in the freezer, she loves ham and mayo on Italian bread from Subway, and MAY eat a version of this elsewhere but only sometimes, pizza, creamy peanut butter on white bread (sometimes)...you get the idea.. there's not much more than that she'll eat. So I basically plan and make a meal, and she gets one of the above and husband makes his own. Once my kids are grown and move out, I'd most likely just go ahead and eat mostly what my husband eats and call it a day.

I haven't quite figured out everything for the week yet. I'm in that awkward trying to stretch it out until I really HAVE to go to the grocery store mode right now. I think I can make it all week and hit up the grocery store next Monday. I try to go every other week. When we run out of fresh fruit and veg, I switch to our frozen stash.

Monday - Easter leftovers
Tuesday - We'll probably go out to eat for DDs bday. We already have a Groupon for it. If not, I'll throw together some pasta.
Wednesday - tempeh wellington that I forgot to bring over for Easter, mashed potatoes, red wine gravy, and green beans
Thursday -Lebanese pizza with za'atar, cherry tomatoes, chickpeas, mint, cashew cream, salad
Friday - spanakopita, roasted asparagus
Saturday - something w/ beans or lentils and broccoli
Sunday - something with tempeh, sweet potatoes, and broccoli

I really like za'atar seasoning, but other than making za'aatar naan to dip in baba ganoush, I wasn't sure what to do with it. how do you make the pizza?
