Eat at Home 3!

I am totally digging cooking a ton of meat on the weekend and eating on it all week. Gonna give it a go again next week with a turkey cooked in our infrared fryer. :thumbsup2 Next week's menu...

Last night I made chicken tortilla soup and cheese quesadillas. Lunch today was hamburger soup. Dinner was Marlboro Man sandwiches, roasted veggies, and cherries.

I cleaned out the fridge, and pantry! The pantry was so bad! I have a surplus of baking supplies! Will bake something tomorrow! We will have leftover soup and salad for lunch tomorrow. Dinner??? Going to make grilled jalapeño poppers...not sure what else.
 
Short week! We fly home on Thursday to New Orleans. 2nd to last trip of the year.

Sunday- lasagna ( DH actually wanted something with ground meat!!)

Monday- smothered chicken

Tuesday- pork chops

Wednesday- leftovers/ fend for yourself night

Thursday- Canes's!!
 

Katy Belle, I had to look up the Marlboro Man sandwich. So much butter...sounds delicious!

Salads went over well last week and and have been requested again.

Sat: Quiche with fromage blanc and dill, roasted cherry tomatoes and squash, salad and green beans
Sun: baked potatoes and Heinz beans, salad
Mon: split pea soup (freezer meal), salad, bread
Tues: salad with grilled salmon, yogurt-cucumber-dill dressing
Wed: homemade refried beans, spanish rice, avocado, salad with cilantro-lime vinagrette
Thur:salad with poached eggs and veggies TBT
Fri: flank steak with roasted cherry tomatoes and salad

I don't use as much butter as she does! I've made the recipe so many times, I just go from memory now!

I have 3 teen boys. When I make main dish salads, they squawk, then eat them and love them!

Thursday: grilled pork tenderloin, asparagus grilled, cheddar noodles for kids.

Friday: trader joes pizzas salad

Saturday: date night, kids get Mac n cheese
 
Yesterday: grilled cheese sammies, veggies and dip
Tonight: lasagna
Tues: breakfast for dinner (ham, eggs, pancakes, fruit)
Wed: Sicilian Garbanzo bean stew
Thurs: leftovers
Fri: dinner out of town (going to mooch off of my sister, who is putting us up for the weekend! :lmao: )
Sat: family reunion (BBQ at my mom's)
 
I've been on a huge zucchini pasta kick lately! I've had it with pesto 3-4 times in the past week or so with different proteins:chicken, Italian sausage, steak.
 
Had to go "big" grocery shopping *ouch-but I haven't had to do much since return from June trip so it was due (+back to school shopping)
Sunday: country fried chicken "steak" with gravy, mash potato, green beans
Monday: pulled beef sammies, , beans, salad
Tuesday: may be sandwiches, stuff on the fly-one kid at band camp, another at 7th grade orientation...
Wed: friends BBQ (we will bring sweet corn DH just brought back from IA)
Thurs: cheese ravioli with sauted garlicky spinach (kid fave)
Fri: (supposed to be off work but hoping to pick up a day-more to vacation fund!!): likely leftovers/pizza
Sat: doing a big cooking day: making 3 meatloaves, several batches meatballs-will have one of these for dinner and rest are into freezer, and using any leftover pulled beef in beef and bean enchiladas-also likely a "freezer meal".

Anyone else have any favorite ideas for "freezer" meals?

**I usually do a big batch cooking day (or week) where I make multiples of most of the following:

lasagna
chicken bacon alfredo lasagna
chicken fried rice
bean and rice burritos
chicken enchiladas
cheesy chicken and rice casserole
twice baked potatoes
pancakes
and a couple of soups/stews (some faves are black bean and corn soup-sort of like a chili and Sicilian garbanzo bean stew)


*while doing all this, I generally throw something in the crockpot so I don't have to make anything for that night. I love doing Boeuf Bourginion!!

So basically, it's scramble frying a big batch of ground beef, frying up a bunch of bacon and boiling and shredding a bunch of chicken breasts while the rice maker is going and the potatoes roast in the oven. Then I assemble the above stuff.

Lots of work and lots of dishes but lots of yummy food in the freezer for busy fall nights!

Saturday: Hamburgers on the grill and finished up a head of lettuce in a small salad and some leftover cole slaw.
Sunday: Large pot of spaghetti sauce to use for lunches this week.
Monday: Cumin-spiced fish tacos with avocado-mango salsa - delicious but we each had two heaping tacos leaving only one more serving for lunches! :blush:
Tuesday: Loco Moco using the extra beef patties we cooked on Saturday
Wednesday: Homemade pizza - probably our usual sausage, onion, red bell pepper and pineapple one.
Thursday: Leftovers since it is soccer night
Friday: Ramen - we use the "fancier" demae nissin noodles and add in a soft boiled egg (yolk MUST be gooey), some inari, green onion, wakame, 7 spice and naruto. Soooo good.

We ate out Sunday noon, but I've been cooking a lot! Sunday dinner was pasta with Italian Sausage and lots of veg in the sauce.
Last night was a super busy, and I was tempted to send DS17 out for fast food, but I resisted! I made grilled ham and cheese sandwiches, chips, fruit.
Tonight I made burgers, cole slaw, green beans.
 
Sunday we had pork schnitzel with buttered noodles, carrots and cucumber salad.

Monday was sub sandwiches with fruit and cucumber salad.

Tonight we had steaks with leftover noodles and carrots.

Wednesday will be grilled chicken and pineapple quesadillas with grilled veggies.

Thursday will be tacos

Friday will be out to dinner with family

Saturday will be potato and corn soup in the crock pot.

OK you had me at chicken bacon alfredo lasagne! Any special seasonings with this or just a basic alfredo with chicken and bacon added? I can see my family loooooving that!

How do you do twice baked potatoes and freeze?

I have a broccoli cheese soup I make a huge batch and freeze (flat in freezer bags then when frozen they are easily stacked upright)

Trying to get some meals in freezer for busy fall season and also for when DH and I go to Las Vegas (kids will be home with sitter and trying to make it as easy as possible).

thinking the alfredo lasagne (with chicken and bacon!) is gonna get made this weekend too...:cool1:
 
Chicken Bacon Alfredo Lasagna

2 cups cooked and shredded chicken breast meat
9 lasagna noodles (no need to cook if throwing straight in the freezer)
1 tub ricotta or cottage cheese
2-3 jars alfredo sauce (depends on size of jars and how saucy you like your lasagnas)
1/2 package bacon, cooked and crumbled
2 cups shredded mozzarella cheese + 1/2 cup

Mix bacon and both kinds of cheese, reserving the 1/2 cup of mozza.

Layer bottom of pan with some sauce, put 3 noodles across, layer cheese mixtures and then chicken mixture and then cover with a layer of sauce. Repeat 3 times. Sprinkle the half cup mozza on the top of the lasagna.

Cover well with tin foil and freeze for up to three months.

Refrigerate overnight to defrost before cooking.

Cook in a 400 degree oven for 30 mins with tin foil on. Remove foil and cook for 10 mins more to brown cheese.

**Optional additions: frozen peas, spinach, broccoli
 
Twice baked potatoes
Yield: 24 twice baked potatoes

**works best with older potatoes but new potatoes are okay

12 large potatoes
1 cup sour cream
1 cup cheddar cheese
1/2 cup butter
1/2 package bacon, cooked and crumbled
salt and pepper to taste

Wash potatoes and pat dry. Rub skins with olive oil and prick with fork. Place on two cookie sheets and put them in a 375 degree oven.

Roast in oven for about an hour (should be soft when squeezed).

Slice in half lengthwise (once cooled) and spoon innards into a large mixing bowl, making sure to leave enough potato attached to the skin to hold it's shape.

Mash the potatoes well, then add butter, sour cream, cheddar cheese, bacon and spices. Mix thoroughly, then spoon mixture back into the potato shells.

Place potato laden cookie sheets in freezer for an hour to flash freeze, then transfer to gallon sized freezer bags. Store in freezer for up to six months.

Can be reheated from frozen in a 375 degree oven for 30-40 mins. (Obviously remove from freezer bag and place in an oven safe container.)
