Eat at Home 3!

Well, I have been getting to work stocking my freezer over here. I participate in a thing where I buy 40 lb of 93/7 ground beef (or alternately, I buy chicken when available) at a discount, and so far I have made my own taco seasoning, made 6 lb of taco meat and broken it into meal portions, made 8 lb of meatloaf mix, gotten it into the foil-lined pans and into the freezer (except the one that is for dinner) and I still have 20 lb of meat left (some went to my mom and MIL)!

Next up is at least 12 lb of meatballs. All of the above are being made grain, gluten and dairy free, too, so I am having to figure out how to do them as I am going. NOT like me at all, but I am actually writing down what I am putting in everything as I go, so I can possibly make them again! What a concept!! lol

Not sure what to do with the other 8 lb yet. Maybe a meal or 2 of sloppy joe mix? I would eat mine on sauteed cabbage or maybe wrapped in lettuce leaves and the rest of the fam can have their buns. Maybe a few lb of just browned meat with onions and garlic, and a few lb left raw.

If anyone wants the link to the meat-buying program, pm me. I have done it for those 2 items, but they do have other stuff.

Wow! Good for you!!! I only have a freezer on the fridge, but its pretty big. I need to watch for meat on sale and do the same!

No meal plan. We are visiting our families, will drive home today. Then I better make a plan!
 
Glad to be back to cooking this week after all the eating out we did last week with my dad visiting.

Sunday- baked whole chicken
Monday- porkchops
Tuesday- orange chicken from TJs
Wednesday- turkey tacos
Thursday- baked swai fish
Friday- red beans or gumbo
Saturday- wahoo
 
Sunday-Chicken Caesar Salad with Costco Rotisserie Chicken and Organic Greens and Newman's own Organic Caesar Dressing (outstanding), sherbet
Monday-Brown rice, broccoli and chicken casserole
Tuesday-Baked Cod, organic baked pot, carrots and peas, cherries
Wednesday-Whole grain pasta, pesto, side salad, melon
Thursday-breakfast for dinner (kiddos insist upon this), watermelon
Friday-Salmon, brown rice, green beans, more watermelon :)
Saturday-Turkey meatballs over egg noodles, fruit salad

***We have been taking advantage of the great fresh New England seafood we are so lucky to live near this summer too! We had lobsters Saturday this week, they were $4.98# yay!!! ****
 

After a few weeks of doing really well with planning the last couple weeks have been kinda "off"
Float trip saturday-picked up kabobs (ready made) from store to grill
Sunday-drive home and everyone tired-take out Chinese
Monday- pasta of some kind (likely a primavera-needing some veggies in!)
Tues-Thur-Heading to MiL at Lake (DH and one DD will still be home as they have to work)-however they will have lefotovers from Monday (and we still have lots of sandwich makings from weekend)
Fri-crockpot beef stew
Saturday-DH birthday and he wants a "party" so who knows? (I work fri-sat so he is going to need to do some planning/cooking)

So... I have been in the middle of this giant cooking thing, and plus have done tons of grocery shopping in the last 2 days. The fridge was FULL. Went to my niece's birthday party, came home, and the freezer was DRIPPING. The whole thing is dead. Of course we rent, so are at the mercy of the landlord. 2nd time in 6 months. I REALLY hope he just replaces it this time instead of trying to fix it again and then having this possibly happen AGAIN

Per my wife's request, we are eating salads lots this week. I love all the summer produce :)

Sunday: grilled chicken, black beans, brown rice and salsa
Monday: hot turkey and swiss sandwiches, sauteed broccolini
Tuesday: baked salmon on salad with yogurt-cucmber-dill dressing
Wednesday: Salad greens with balsamic vinaigrette, poached eggs and other veggies TBD
Thursday: baked potatoes with Heinz beans, vegetable TBD
Friday: omelets with roasted cherry tomatoes and salad

Fruit for dessert every night; strawberries, blueberries, peaches, apricots, yum, yum, yum

Tuesday- Hawaiian grilled chicken and apple, walnut and cranberry salad
Wednesday- London Broil, potatoes for family, lots of veggies
Thursday- Whole roasted chicken, rice for family and garden salad
Friday-Out to eat
Saturday-TBD

Back on track we go vacation in 126 days!
Last night I made a mushroom risotto in the crock pot it was so yummy and easy
Tonight we will have buffalo chicken bake with sweet potatoes and squash on the side
Wednesday spinach and artichoke pasta
Thursday chicken Cesar sandwiches
Friday will be beef and broccoli and I'm also making a small meatloaf for my mil who won't eat that
I'm also making a peanut butter pie
And homemade veggie cream cheese

I am trying to shop for 2 weeks at a time in hopes it will help me stay on budget. I have to really plan for 2 weeks worth of food and I don't want to waste it so it needs to be eaten, reduces eating out.

Sat: Chicken alfredo, italian bread
Sun: Hamburgers, baked beans, watermellon
Monday: Steak Kabobs, Rice, mandarine oranges
Tues: Enchiladas, corn bread, pineapple
Wed: Grilled chicken, grean beans, mashed potatoes, cranberries
Thursday: Ham, mac and cheese, leftover green beans, potates, pineapple
Friday: Jambalya, leftover corn bread
Saturday: Chili
Sunday: Homemade Pizza
Monday: Sloppy Joes, tator tots, corn
Tuesday: Cheese Qusidillas, fruit salad
Wednesday: Brats/hot dogs, fruit, macoroni salad
Thursday: Sandwhiches and soup
Friday: Fish, french fries,
Sat: Chicken and rice, veggies, rolls
 
I was out of town over the weekend and am ready to get back on track.

Tonight is lemon chicken with rice and veggies

Sure!
3tb olive oil
3 c sliced mushrooms
1/3 c sliced shallots or chopped onions
2 cloves garlic minced
1 3/4 c uncooked arborio rice
4 c chicken broth
3/4 c white wine
1/2 tsp black pepper
2/3 c frozen peas
Parmesan cheese or asiago

Warm oil oil in skillet add mushrooms and onions and garlic cook 5-7 minutes until mushrooms are lightly brown and the liquids from the mushrooms has evaporated

Stir in rice for a minute

Transfer to crock pot pour liquids and pepper over mixture heat low 2 3/4 hours or high 1 1/4 hours stir in peas and cheese serve

Went to the grocery store for a stock up visit and got loads of goodies!!

Tonight we are having rotisserie chicken and the hubs will be cooking two whole chickens on the rotisserie. We will have some breast meat each tonight, then when the chickens have cooled, I'll be separating the remaining meat from the carcass and shredding it. The shredded meat will go in baggies in the freezer for future meals and the carcass will go into the crock pot for soup stock.

I am doing a huge freezer meal batch cooking session tomorrow. I'll be making traditional lasagna, alfredo chicken lasagna, chicken enchiladas, twice baked potatoes, pancakes, bread and buns. If there's time, I'll also be making more broth with the bones I've been saving in the freezer.

I found skinless bone in breasts on sale today, so I boiled them up for stock (it's cooling now) and the meat will also be shredded...some to be frozen and some to be used tomorrow in the lasagna. This stock is going to make a delicious chicken noodle soup for tomorrow's lunch. Yummo!!
 
I need to do some stocking up too!
Plans changed again this week-now DH and DS and middle DD are going to see Greatgrandma in IA at end of week (and kids and I are at MIL at lake) so no need to grocery shop again!! But school starts in 2 weeks (and fitting in quick trip to STL to see my parents next week) so I really need to get on the ball.
Still have a whole chicken, stuff for continental chicken and meatloaf in freezer for Mon-Wed next week. On the upside-Grocery money went into vacay fund and booked trip for June :)
 
We had an Anniversary Party last weekend, and had quite a bit of smoked chicken and brisket left over. I'm having fun recreating it!
Monday we had barbecue chicken and caramelized onions on top of baked potatoes.
Tuesday we had brisket and cheddar on Hawaiin rolls, which were also leftover! Roasted cauliflower , and cucumber salad.
Tonight I made Shepherds pie, and fruit salad.

Tomorrow night will be Kung Pao lettuce wraps with egg rolls, maybe rice.

In the near future....burritos made with leftover brisket
Chicken salad sandwiches
Hamburger soup
Sesame beef
