Eat at Home 3!

Dinners:

Sunday: Mediterranean spiced lamb koftas, taziki, leftover red cabbage coleslaw.

Monday: Gluten free pasta and red sauce with beef and turkey meatballs...I mix the 2 meats, lots of good parm. Broccoli with random seasoning for the side dish.

Tuesday: steak with red wine reduction and shrooms, and turnip fries w/ parm and whatever frozen vegetables we have on hand.

Wednesday: sweet chili lime chicken tenders with rice and veg from freezer.

Thursday: turkey burgers baked beans roasted asparagus with, yes, parm mmmm:)

Friday: leftovers and/or quick quesadillas or nachos and beer!:)

Lunches:
shallot and preserved lemon salad dressing over lentil, mung beans and quinoa salad.

Chicken sausages mixed with random sauces from the fridge and rice, freezer veg.

Tuna salad no bread, just over spinach or with gluten free crackers and laughing cow cheese

We're pretty good at adding/changing our menus to reflect what's on sale at our grocery stores. We have 3 different grocery stores all within a short distance (2 across the street from each other...lol) so we can look at their adverts ahead of time to make choices. We get their emails on Fridays for sales that start Sunday, so we can plan our purchases a few days ahead. This weeks "sales" were seasoned whole chickens, cabbage, potatoes,

Last night: Buttered cabbage with turkey bacon & noodles
Tonight: Whole chicken, stuffing & vegetable
Wed: Leftovers (maybe make chicken tacos/or salad with leftover chicken)
Thurs: Stuffed Baked Potatoes & salad
Friday: Potstickers & spring rolls
Sat: Likely pizza
Sun: Roast, potatoes, vegetable

We always have something fresh with every meal, usually salad, but lately we've been on a green bean kick. Trying out recipes to make the beans in different ways. Days we don't have a plan or get delayed & eat late we throw together something like veggies & dip with pita & hummus. We always have a supply of hummus, salsa & veggies in the fridge.
 
Hi Gang.. my week looks like this Sun Mon Tues just me and the Hubs, Wed - Fri us plus my dad, Sat back to just us..

Yesterday - Amato's sandwiches Ham Italian for me and meatball for hubs
Mon - Pork Chops, roasted Veggies and Tater tots
Tues - Sweet Italian sausage sandwiches
Wed - Lasagna with bread
Thurs - Chicken pot pie for the guys and fish and roasted veggeis for me
Friday - Digorno frozen 3 meat pizza
Saturday - afternoon jack and jill baby shower so we will eat there and just scrounge around if we need dinner

Update to tonight's meal Thurs - fish and roasted veggeis for me.. My Dad and Hubs will now be having Pot Roast with carrots and potatoes in the crockpot.. both me and my Mom don't like Pot Roast so the guys never get it and since I am working late tonight I figured that would be a good treat for them both!

Wednesday - pot roast
Thursday - crab cakes, mashed potatoes, zucchini w/mushrooms
Friday - stuffed peppers, broccoli
 
Fri (changed) - Lemon Butter Basil Parm Gnocchi (with Tuna served on side to top), Homemade Kale Chips, Blueberries, Blueberry Muffins (used up my old blueberries)
Sat (changed) - Chicken Fajita Tacos, Red Grapes
Sun - Sliced Flank Steak over Mushroom Ravioli with a Mushroom Cream Basil Kale Sauce (totally off the cuff, but I think this should work:)
Mon - Meatloaf, Mashed Potato or Mashed Sweet Potato, Stewed Collard Greens with Bacon
Tues - BLTs, Homemade Kale Chips, Butternut Squash Soup, Apple Cinnamon Muffins
Wed - Leftovers (probably served over a green salad), Strawberries
Thurs - Thai Peanut Chicken (still not used the seasoning pack - had too many leftovers last week), Mashed Potato or Sweet Potato (whatever not used), Cucumber Salad
Fri - Cheese Pizza, Fruit Smoothies, Leftover Veg or Soup
 
Sunday... BBQ Garlic Sausages, baked cauliflower, kale salad with romaine, sunflower seeds, berries, cucumbers etc
Monday..Oven baked buttermilk "fried" chicken, sweet potato fries, another salad
Tuesday... Breakfast for dinner ...Eggs, whole wheat toast, fruit smoothies, oranges
Wednesday...Pad Thai
Thursday...Leftover "fried chicken", carrots and cucumber, baked potatoes
Friday...Homemade pizza and movie night
Saturday...Zucchini fries, salad, bbq chicken (fish for dd)
Sunday...Birthday dinner for FIL
 
I seriously just replaced my crock pot like 3 months ago but I really think I'm going to have to have the cute Pixar slow cooker.:hyper: I think it would help to motivate me to cook at home instead of getting take out in order to put some extra $ in the Disney fund. :mickeyjum
 
How did I do last week: the plan:

Monday- Just DH and I, so I think we will have poached eggs on toast as the bread is getting a bit stale
Tuesday - White fish, rice, broccoli (didn't have fish last week)
Wednesday- frozen soup, cheese toast, salad
Thurs- Slow cooker ribs, mashed pot, veg
Fri-
Sat-
Sun-

Will finish the week after I talk to DD and review what everyone else is having for ideas...

home made burgers, fries (just got our beef and pork from the butchers- inlaws have small farm so we get beef/pork from them- lucky I know!)

Wednesday- chicken pot pie
Thursday- Salmon Loaf, rice, broc and cauli
Friday- spaghetti, salad, homemade pumpkin pie from the freezer
Saturday- frozen pizza, salad
Sunday- DH took a frozen dinner, I ate leftovers, DD is visiting her mom

Plan for next Week:

Monday- Thinking fajitas
Tuesday- hamburger helper type dish on mash potatoes with veg, or taco salad
Wednesday- homemade soup (we have a few in the freezer) and cheese toast
Thursday- pork chops or ribs, salad, not sure on side yet
Friday- meatball subs, salad and fries
Saturday- just DH and I, so thinking applies of some sort
Sunday- fish of some sort and quinoa
 
Today- bacon, eggs, french toast, fruit
Tues-chicken, 2x baked potatoes, greek salad
Wed-broccoli cheddar soup, grilled cheese, green beans
Thurs-pork chops in mushroom sauce, rice, peas
Fri-pizza, veggies and dip
Sat-lasagna, salad
Sun-leftovers

Tonight - Velveeta Chicken Alfredo Skillet and sweet rolls
Tuesday - Tacos - Hard and soft
Wednesday - Chicken Strips, Tater tots and green beans
Thursday - Chicken, potatoes and carrots cooked in Campbell's oven sauce
Friday - Sun = The guys are on their own because I will be away (a few towns over) for a weekend Scrapbooking Crop!

Today was grocery day and I headed out to do that... but still wasn't happy with the plan I had for the next 2 weeks. I just wasn't feeling it. So when I got to the store, I spent 15 minutes sitting in the parking lot redoing my WHOLE plan. Now I'm actually excited about it!

Today: BL(no)T and corn on the cob
Tomorrow: Whole roasted chicken and vegetables
Wednesday: Leftovers
Thursday: Chicken and noodles
Friday: Steak (I got 2 tbones for less then $10 woohoo), baked potato, and corn on the cob
Saturday: Leftovers
Sunday: Fried fish, dill sauce, corn, and boiled red potatoes

Monday: Leftovers
Tuesday: Meatball subs, roasted potatoes
Wednesday: Leftovers
Thursday: Playing it by ear as I am going to an Indy Fuel game for my Nephew's bday
Friday: Pork chops and sweet potatoes
Saturday: Leftovers
Sunday: Eggs, bacon, and toast

I will also use extra chicken to make chicken salad for lunches.
 
I'm back to doing major meal planning since Spring sports are starting and life's about to become a lot more hectic. To make planning easier, I've assigned a "theme" for each day of the week, for example, Tuesday's and Thursday's we are all running in different directions so those are slow cooker and casserole nights, Monday's "international" day, Friday's pizza day, etc. Here's our plan for the next 2 weeks.

Monday - shredded beef enchiladas, Spanish rice and Mexican corn
Tuesday - chicken tetrazzini casserole
Wednesday - chicken francese with linguine
Thursday - pulled pork sandwiches, baked potatoes
Friday - pepperoni and cheese Stromboli, salad
Saturday - chicken and waffles (this was a request from ds)
Sunday - DD has team basketball party, boys get leftovers
Monday - chicken lo mein
Tuesday - my birthday so probably dinner out :)
Wednesday - chicken Parmesan, garlic bread, salad
Thursday - Reuben casserole, salad
Friday - pizza
Saturday - burgers and chicken breast on the grill, pasta salad
Sunday - sirloin steak, twice baked potatoes, asparagus
 
This week will include black bean and corn quesadillas, one pot taco spaghetti, sheet pan chicken dinner, buffalo chicken strips over salad, dorito taco salad and another round of quesadillas.
 
I'm late, on Sunday DH decided that he wants to try Atkins. I'm supposed to be on a low sat and trans fat diet for my high cholesterol and really couldn't face all that meat anyway so it looks like there will be quite a few His and Hers meals. For the record, DH is NOT a veggie guy so there will also be a lot of salad. Yesterday I spent 3 hours reading labels in various grocery stores.


Sunday (Pre-Atkins)

We went to a craft fair and had fair food (jambalaya and roast pork poboys) for a late lunch, too full for dinner.

Monday
Okay, so DH has decided that he wants to try Atkins. I'm supposed to be cutting back on fat. It looks like we'll be doing His and Hers menus.
Me: grilled halibut, grilled zucchini and tomatoes
DH: grilled halibut, salad of lettuce and cheese

Tuesday
Me: grilled pork chop, baked potato, spinach salad w/apples and walnuts
DH: grilled pork chops, grilled smoked sausage, green salad

Wednesday
I'll be at my father's house 90 miles away all day so something quick!
Blackened Shrimp
Me: grilled veggies, avocado, tortillas and "Mexican" rice
DH: salad

Thursday
Stir fried chicken tenderloins with onions and peppers
Me: rice, green beans w/almonds
DH: green beans w/bacon

Friday

Saturday
BYO barbeque with the neighbors. I'm bringing a corn casserole for everyone else which neither of us can have. I'll probably buy a steak for DH and fish for me.

There is a book called The Belly Fat Cure that is a great book with great ideas. It isn't full on Atkins but has some of the same principles. You might find some items in there that are good for you both.
