Thursday - Pasta with meat sauce, salad, garlic bread
Friday - pancakes, fruit salad
Saturday - chili and grilled cheese

Wow... the first couple weeks at my new job have been great! I am loving working at the Children's Museum and my coworkers are so nice and fun to be around. But I am also exhausted! Lots of walking and longer days then I have been doing so it has been an adjustment.

So while I have time, here is my meal plan for the next couple of weeks.
Sunday:Leftovers
Monday: Indonesian Chicken and Rice (left from this past week)
Tuesday: Marlboro Man Sandwiches (Pioneer Woman), roasted potatoes
Wednesday: Leftovers
Thursday: Slow Cooker Coconut Curry Chicken, Rice
Friday: Leftovers
Saturday: Stuffed Mushroom Caps

Sunday: Red Pepper Sauce Chicken Enchiladas
Monday: Leftovers
Tuesday: Slow Cooker White Chicken Chili
Wednesday: Leftovers
Thursday: Christmas Eve at my Cousin's House
Friday: Christmas Day at my Aunt and Uncle's
Saturday: Asian Chicken Salad

Lunches will be leftovers, bagel sandwiches, and wraps. I will also be prepping vegetables and boiling some eggs for snacks/lunches.

Tuesday - Swedish meatballs over egg noodles, peas
Wednesday - grilled tilapia, rice, broccoli
Thursday - pork chops, gravy, mashed potatoes, okra
Friday - pizza
 
Sun - Hot Roast Beef and Cheese Sandwiches, Roasted Broccoli, Blueberries
Mon - Spaghetti and Meatballs with Fresh Veggie (Onion, Carrots, Kale, maybe Kohlrabi)/Tomato Sauce, Strawberries and Raspberries
Tues - Asian BBQ Roasted Chicken Thighs, White Rice, Kale Chips, Any extra berries
Wed - Chicken Fajitas, Fresh pineapple slices
Thurs - Crockpot "Clean Out the Fridge" Lentil Stew (any leftover broccoli, kale, kohlrabi, and carrots with a not-enough-for-a-meal protein - probably pork chops - in a jarred Indian sauce) served over leftover white rice
Fri - Veal scallopini, leftover lentil stew and/or leftover pineapple (maybe turned into a pineapple/coconut/banana bread or muffin)
Sat - Out or Pizza
 
Tonight-turkey fettuccini alfredo, veggies and dip
Tomorrow-breakfast for dinner, pancakes, bacon and eggs
Tues-pork tenderloin, twice baked potatoes, broccoli

Another week, another menu!! I have been eating healthier and walking 4 miles a day with my chocolate lab (we always walked but not as fast or far). The results of my efforts have been 10 pounds down in a month!:cool1:
Planning what I will eat really helps me stay on track.

Saturday.. went out for dinner with extended family.

Sunday.. BBQ chicken drum sticks, steamed broccoli, carrot sticks, baked sweet potato

Monday.. Curried mahi mani with green pepper and onion on brown rice. Ds will have leftover chicken, veggies, and a baked potato

Tuesday.. Whole wheat pasta, marinara with ground turkey, toasted garlic pita

Wedneday.. Breakfast for dinner (fruit smoothies, eggs, toast, clementines)

Thursday..I will have leftovers, ds will have whole wheat chicken fingers and carrots and cucumber

Friday.. Will make home made pizzas with chicken and veggies if I can find a whole wheat bread machine pizza dough recipe that looks good. I don't want to abandon our Friday pizza nights but I do want to lighten them up/ waaayyyy less cheese for instance.

Saturday.. Kids will be out and dh and I are Christmas shopping all day. I think we are planning on Subway for lunch and maybe I will think of something to put in the crockpot so we can eat quickly when we get home for dinner.

Sunday.. Dinner at my parents.

Hubby and I started back at the gym today and will be doing lower carb starting tomorrow.
Monday- Meatballs and Alfredo Spaghetti squash with salad on the side. Regular pasta for the kiddo.
Tuesday- Smoked pulled pork, deviled eggs, and broccoli cheese casserole
Wednesday- Stuffed peppers and salad
Thursday- Chicken fried rice (cauliflower rice)
Friday- Out and will see the new Star Wars movie :yoda::yay:

Well, he heaved the low carb diet again for this week. :headache: Exam time is stressful for the professors too and he needed comfort food. :laughing:

So, our meal plan for the week now looks like this:

Mon-McDonalds (barf! I got fries and then came home and made a sandwich)
Tues-soup and grilled cheese (soup was corn chowder)
Wed-cheddar bacon burgers (homemade...very tasty)
Thurs-butter chicken, rice, naan, frozen pizza for the kiddies
Fri-pork stew
Sat-pasta
Sun-at my mom's
Mon-fast food on the way home from visiting relatives (approx 5 hours driving time without traffic but we may be delayed this time of year) OR, if we get away early enough I'll get a rotisserie chicken from the supermarket and a $5 hot and ready pizza from Little Ceasars for the kids (I'm really hoping for option B)

Your kids don't like butter chicken? I wish! Butter chicken and naan is one of DDs favs!! Actually so us rotisserie chicken!
 
Nope! The boy (aged 10) is REALLY finicky and he wasn't as a baby and toddler, so I don't know what happened. It's pizza, grilled cheese, mac and cheese (but only KD), chicken nuggets and pb&j's for this kid. He'll eat cereal, pancakes, and waffles but not eggs or bacon or ham. He will eat pepperoni and salami but no other meat (and that's pretty recent). He even fights us on cheese quesadillas, hot dogs, burgers, pasta of any kind (he likes the noodles fine but he can't seem to agree to any sauce), beans, rice (although he has been know to eat fried rice willingingly) and soup. He used to eat most of those items but now generally avoids them. It's very frustrating.

DD is 12 and has always been slightly more adventurous. She likes most things but is not a big fan of anything with spices. I don't know if she has ever tried butter chicken but she does at least admit that it smells tasty. She mostly eats what we make for dinner and just avoids the more "ethnic" stuff that DH and I love. She does have this one weirdness: she stubbornly REFUSES to try any kind of soup. Like since she was about 4. Even chicken noodle is a no-go! I dunno why. But she eats well otherwise, so we don't give her a hard time like we do the boy.

In my house, I have two plans. If it's a meal I know my kids won't eat (strongly flavored, heavy ethnic flavors like Indian, etc), I make 2 dinners - a simple one for them (like bagged cheese ravioli with fruit) and the main planned meal for the adults and any kids who want to try it. If it's a meal I think they should eat, but they don't want to, it's PB with fruit preserves and fruit (and a glass of milk). And they make it themselves. Since I was such a picky child eater (but have become one of the most adventurous adult ones), I don't push foods on my kids or make them eat them - I figure they'll eventually decide I do cook really well and try it (this is working so far:) and it means easier lunches for me (with extra leftovers for the week). Until then, our PBJ with fruit and milk covers all the food groups!
 
Trying to clean out the fridge before VACATION! So some random combinations lol. Cleaning out the pantry/fridge/freezer.

Monday: Chicken nuggets, mixed vegetables
Tuesday: Bean and rice burritos, and the last half a bag of Alexa waffle fries. I got 2 boxes Zatarains red beans and rice for .60 a box the other day at Target! PLUS had a coupon for .25 off 2 boxes, whoot! If there is any mixed vegetables from ^^^ we will eat those up to.
Wednesday: I have my workout class. Easy night/leftovers/canned soup, etc.
Thursday: Mac and cheese (velvetta), baking the last of the chicken breasts (I'll season them in whatever we have around), Caesar salad
Friday: Baked tortellini casserole (http://www.number-2-pencil.com/2013/10/18/baked-tortellini-casserole/) I will freeze half for an easy dinner when we get home.
Saturday: Going to a White Elephant gift exchange party. We are exchanging fashion accessories that we haven't worn in over a year! Should be fun and everyone will get to go home with a new piece of jewelry/scarf/purse. I am bringing Cookie Dough bars (http://theviewfromgreatisland.com/no-bake-chocolate-chip-cookie-dough-bars/) and a bottle of wine.
Sunday: Something in the Orlando airport before our flight LOL. Not sure what. I should check out our terminal to see what's there.
 
My new breadmaker arrived on Thursday. I unpacked it this morning, cleaned all the removable parts and hunted up a good recipe on the internet to use on my gluten free setting. I've got it going now. It hasn't risen much (so I'm sort of worried about that) and the baking is set to begin in about 20 minutes. So in an hour and a half...we'll see how my first attempt went. Fingers crossed.

I need ideas for meals that are simple to prepare and don't require me to stand at the stove. Heck, I am happy with stuff like "season some chicken thighs and put them in the oven" sort of things. When I get to go back to the grocery (not until AFTER xmas) I do plan to grab some frozen vegetables to nuke up really easy as well as remember that the store has nuke-able bags of fresh vegetables.

Hi! I totally understand the feeling. Having easy meals that are yummy really help prevent you from wanting to eat out. I am also a fan of chicken with a side. This is where spices, seasonings and even salad dressings come in mind. Spices add a lot of flavor, and are cheap to buy and cheaper to make. Easy to add to chicken breasts and bake.

We also like salad dressings to marinate. I try look for "Zesty" and "Robust" for more flavor. Plain salad dressings don't always come across with great flavor (at least in my opinion). Easy to marinate in the fridge during the day and bake when you get home. Microwave a bag of frozen vegetables and you are set. There so many varieties out there now.

Do you have a slow cooker? There are so many easy recipes out there. You can even do chicken breasts for easy tacos. Chicken breasts and chicken broth (or water) on low for 8 hours.
