Another week, another eat at home menu!:)

Sunday.. going to my parents house for Mothers Day

Monday..Leftover Spaghetti Pie and veggies

Tuesday.. Hamburgers and fries

Wednesday .. Breakfast for dinner, fruit

Thursday..Crockpot baked potato soup and salad

Friday.. Homemade pizzas

Saturday.. having MIL and FIL over for belated Mothers Day dinner. Making a full turkey dinner.

Sunday.. ? Dinner at parents or leftovers

Sunday- gumbo
Monday- Rosemary chicken
Tuesday- porkchops
Wednesday- omelets
Thursday- rack of lamb
Friday- TBD
Saturday- fried shrimp
 
Last night we had beef stew, biscuits, and fruit.

Tonight I am working inventory prep so dinner will be leftovers. I did however make mom a breakfast casserole this morning for Mothers Day.
 
Simple week for us.

Sunday: ate at Hooter's after Epcot
Monday: spaghetti, homemade sauce, bread and salad
Tuesday: homemade tuna casserole, bread of some sort and maybe corn and salad
Wednesday: pancakes, eggs and fruit
Thursday: homemade frozen pizza, salad
Friday: grilled chicken cesar salad, warm crusty French bread
Saturday: out
 

Mon-burgers, veggie sticks, party mix
Tues-pierogies and sausage, broccoli
Wed-chicken kebabs, baked potatoes
Thurs-steak fajitas
Fri-going out of town, fast food or packed sandwiches
Sat-meatballs and mashed potatoes, not sure of veg
Sun-fish and chips with green beans
Mon-ham and cheese melts with salad
 
Hi All! I am going to try the cowboy casserole this week. :)

Monday: Chicken fajitas, chips and guacamole

Tuesday: Southwestern style Peppercorn Pork Tenderloin, mashed potatoes and green beans

Wednesday: Chili, cornbread and fruit

Thursday: Chicken Pesto Pasta with zucchini and garlic bread

Friday: Steak, baked potatoes, carrots

Saturday: Cowboy Casserole

Last night was grilled chicken, broccoli, and potato salad

Tonight is pork tamales(purchased frozen at a fundraiser), rice, beans, chips and guacamole.

Still have pork chops, two chuck roasts, chicken breasts, etc in the freezer. Don't have much planned, but hoping to not have to run to the store again soon.
 
How's everyone's week going?
We are doing pretty good with staying on track last night we did stop after soccer at noodle company and new running shoes! So excited.

I am figuring out that I need to double most recipes so that there is enough for everyone and left overs for the next day feeding 6 people is hard when most serves 4.

Menu Plan for Week of May 17th

Saturday - Family cookout. I am bringing a dessert (carrot cake or hummingbird cake)

Sunday - Baked chicken, corn on the cob and pasta salad

Monday - BBQ beef, leftover pasta salad, butter beans

Tuesday - Grilled chicken salad with avocados, black beans, corn, and tomatoes.

Wednesday - Beef burritos, salad

Thursday - Chili mac

Friday - Breakfast for dinner with sliced fruit

Sunday- baked whole chicken
Monday- Swai fish
Tuesday- tacos
Wednesday- pork chops
Thursday- chicken breast
Friday- left overs
Saturday- out to eat for date night!
 
What a crazy month we have had and the next month is shaping up to be the same way...yay :-/

So here's what I have at this point:

Sun: ham and cheese sliders with ?

Mon: beef tips with mushroom gravy over noodles, broccoli

Tues: ham, eggs and cheese scramble, fresh fruit

Wed: slow cooker pepperoni pizza chicken, green beans
Thurs: spaghetti, salad
Fri/Sat - no plans at this point. MIL comes in to town Fri sometime,

Sat DSS graduates

Sun: DSS grad party

Mon: no plans yet probably grad party leftovers

Tues: turkey hot dogs baked beans

Wed: turkey burgers, baked fries

Thurs: out to dinner to celebrate my last day of work (changing career fields!!!)

Fri: pork chops, broccoli rice and cheese casserole

Once MIL gets here I doubt we keep half of our plans but we'll wing it at this point. At some point life will slow down...

Sunday: Caribbean Jerk marinated chicken with onion, green pepper and pineapple, and Parmesan potatoes.

Monday: Chicken Alfredo, broccoli and garlic bread

Tuesday: Pulled pork sandwiches, coleslaw, bbq baked beans and corn on the cob

Wednesday: Chicken tacos,Spanish rice and refried beans

Thursday: Round steak and gravy, green beans, macaroni and cheese

Friday: Breakfast for dinner

Saturday: Grilled chicken, sweet carrots, chicken rice and salad

Tonight is my cousin birthday and my aunt is having us for dinner I made a pie
Tuesday sweet and sour meatballs in the crock pot
Wednesday pork loin rice and veggies
Thursday spaghetti and sauce with cheesy bread
Friday brown sugar chicken with sweet potato in the crock pot
Saturday French bread pizza with pasta salad
Sunday is my cousin cookout making potato salad and chili

Thursday… Pasta of some sort,

Friday … Homemade Pizzas

Tonight: Grilled whole chicken and heirloom tomato salad
Wednesday: Chicken (leftover from tonight) and pasta primavera (mostly veggies, just a bit of pasta)
Thursday: salmon baked with butter, lemon and spinach, salad
Friday: grilled steak fajitas (peppers, onions, salsa, avocado, wrapped in lettuce)
Saturday: fajita omelets (leftovers from night before as omelet filling)
Sunday: eating out with friends
 
LOL I loved the beans. Do you have time to post your sweet & sour meatball crockpot recipe?
Sure do just finished eating them sooooo yummy
24 frozen meat balls ( I made my own)
1 c pineapple chunks
1 tb oil
1/2c chopped onion
1/2 c chopped bell pepper
1/3 c pineapple juice
1/3 c chick broth
1/4 c soy sauce
2tb rice vinegar
1tb brown sugar
1 ts sesame oil
1/4 ts crushed red pepper
2tb corn starch

Place meatballs and pineapple in crock pot in a skillet heat oil cook onion and pepper 5-7 mins until tender put in crock pot whisk together everything else but corn starch pour over crock pot cook high 4 hrs take out meatballs and pineapple with a slotted spoon keep warm mix corn starch and two tb water together pour in crock pot cook 10-15 mins until thick add meat balls and stir to coat serve over rice and veggies
I doubled the recipe to make sure there would be enough sauce and I think it worked well.
