Eat at Home 3!

Week 3 of planing for me. Making life easier for this 2 RN household. Working 12 hour shifts doesn't leave a lot of time for last minute thinking of a meal and cooking it. Plus only having to run to the grocery once a week saves a ton of time.

Sunday- homemade pizza with trader joes whole wheat crust and salad
Monday- tacos for cinco de mayo!
Tuesday- prob Popeyes for DH and chicken hotdog with zucchini for me
Wednesday- some type of Chicken breast Thursday- pork chops
Friday- Fish
Saturday- Date night!!
 
Today- BBQ/pool party for star wars day so I volunteered to make the side. Mac n cheese
Monday - skinny taste (it's weight watchers friendly but so delish my family requests it over the full fat recipe) arroz con pollo and fried platano maduros.
Tuesday - red beans and rice (meatless meal) with tostones
Wednesday - mashed potatoes, corn, roasted chicken breasts
Thursday - leftovers/clean out the fridge day.
Friday - having family over, making pasta a la Betsy from the pioneer woman. But I'm allergic to shrimp so I substitute browned chicken breasts and then slice them up to lox in the pasta. The sauce is sooooo delish! I'm serving it with campanelle pasta.
 
We did really well last week and did not eat out once.

This week's menu

Sunday: Over to my Aunt's for her birthday
Monday: Lemon chicken cutlets with rice and broccoli
Tuesday: Pot roast in the crock pot
Wednesday: Grilled ham and cheese with tomato soup
Thursday: Bratwursts with German potato salad
Friday: chicken paprikash with salad
Saturday: Spaghetti with meatballs
 

Must start meal planning again! We eat out several meals on weekends but we need to eat at home during the week!

Sunday: snacky stuff, fruit, muffins, cheese

Monday: Taco salad, retried beans & rice

Tuesday: spaghetti, salad, garlic bread

Wednesday: pancakes, scrambled eggs and fruit

Thursday: grilled shrimp and pineapple skewers, grilled corn, pasta salad

Friday: meeting family at MK, eat out

Saturday: eat out
 
I have just overhauled our budget and I was MORTIFIED to see how much money we were wasting on food. I did a complete inventory of the fridge/freezer and pantry, went shopping for a few staples and this is what we have for the week:

Sunday: Meat Sauce (over pasta for my son, over zucchini for me and hubby) and salad
Monday: Hubby is out of town, so we are going to have breakfast for dinner: Eggs and Bacon, son will also have mini pancakes
Tuesday: Baked chicken, grilled asparagus, salad (son will have a baked potato too)
Wednesday: Chili and a salad (I made the chili tonight at the same time that I made the meat sauce)
Thursday: Mexican fiesta with the leftover chicken (shredded and seasoned) and Chili. Hubby and I will have it on taco (shell-less) salads and son will have it with tortilla chips.
Friday: Orange Chicken and oriental veggies, son will also have rice.

My hubby and I are on South Beach and I have a 13 year old. I try to modify most of our meals for him by adding in a carb.
 
I'm new here, but like Lees3rwe I am frustrated with how much I'm spending at the grocery store each month. During summer month I do really well planning lunches for my 3 kids plus the 2 that I babysit daily, so I'm starting it for dinners year round too. Hoping to shave down that grocery bill through less trips.

Sun- chicken pot pies
Mon- pasta night with meatballs and salad
Tues- pork chops, potaoes, green beans
Wed- dinner out, school function.
Thurs- supposed to be really warm here( for a change) BB-que chicken on grill.
Fri- DH night to work. Kids and I will have breakfast for dinner
 
Cinco De Mayo! Super busy afternoon and evening here tonight. So Im making dinner at 10a.m.!
Chicken Tortilla soup, with cheese quesadillas.

Hoping to make homemade pizza tomorrow or Wed!
 
Tonight: beef tacos and cheese quesadillas in honour of cinco de Mayo
Tues: chicken, bacon and broccoli penne alfredo
Wed: pizza, carrot and celery sticks
Thurs: bean and rice burritos, salad or green beans
Fri: butter chicken, chicken samosas, naan, not sure of veg
Sat: at my mom's
Sun: at DH's mom's
 
Friday: Steak, baked potato, corn on the cob
Saturday: Grilled chicken, salad, mashed potatoes
Sunday: Hamburgers, cantelope, tater tots
Monday: Quesidalla, chips with rotel/cheese dip, watermelon
Tuesday: Chicken Stir Fry & Rice
Wednesday: Hot dogs/ Brats, chips, fruit salad
Thursday: Sub Sandwiches, fruit
Friday: Chicken Alfredo, garlic bread, salad
 
Plans changed tonight and we ended up having roast beef sandwiches, pasta salad, and watermelon.

My whole menu will be tweaked this week. One of my co-workers/ good friends had a small stroke yesterday and needs to be off. I am picking up extra hours to help out.
 
We had a change as well...

Last night DH didn't fancy having Mexican inspired food so soon so we used the ground beef for hamburger helper stroganoff instead.

I believe the rest of the week will stay the same though.

Monday was nachos
Tuesday was chicken or chicken wings with potatoes and corn
Tonight pork chops rice beans and apple sauce
Thursday French bread pizzas
Friday american chop souy
Saturday burgers with a pasta salad
Sunday waffles and fruit
 
Last night was cowboy casserole in the crockpot. Everyone ate it with no complaints, thank you!!

Tonight - leftover chicken tamale casserole
Thurs - Baked Ham
Friday - ? maybe homemade gnocchi
Saturday - ? maybe leftover ham or we might go out
Sunday - BBQ at inlaws (we are bringing Ribs)

Hi everyone!

Last week went great... we ate at home every night!

Heading to the grocery in a bit for this week:

Saturday: Fresh Cobia that my sister is bringing today!, grilled asparagus, salad

Sunday: We are grilling BBQ Chicken for my mom (she loves my hubby's bbq chicken), deviled eggs, green beans, and probably something like mac and cheese for the non-low carbers.

Monday: Leftovers (I have class that night)

Tuesday: Pot Roast with carrots, celery, onions (and a potato for my son), peas

Wednesday: Grilled pork chops, salad, grilled squash

Thursday: Leftovers

Friday: Salmon, salad, broccoli
 
Planning for this up coming week here's what I have

Tonight will be Mac and cheese with roasted cauliflower
Sunday mother day! I am making waffles bacon and egg nests for dinner
Monday Cobb salad
Tuesday hamburgers with onion straws
Wednesday chicken Cesar sliders with corn on Cobb
Thursday we have to leave the house at 4 for soccer but won't be back until 739 so I'm thinking a early lunch and then leftovers before we go
Friday cowboy casserole
Saturday I will cook what my mil wants as her Mother's Day gift
Sunday we are going to the red soxs game so Fenway hot dogs it is!
Monday is my cousin bday and her mom has invited us to dinner
Tuesday spaghetti and sauce
Wednesday potato pancakes as requested by my mom for Mother's Day
