Saturday: Ghouls at Grassmere (Halloween party at Nashville Zoo) :cool1:
We will stop for dinner on the way there... I have Steak and Shake coupons.

Crockpot Pepper Steak

Garden Peas

Meatless Monday:
Cheese Ravioli Marinara
Oven Roasted Asparagus
Garlic Toast

Tuesday:
Chicken Casserole
Lipton Flavored Noodles
Sautee'd Whole Green Beans

Wednesday:
Hamb. Helper Cheeseburger Macaroni
Oven Roasted Corn

Thursday:
Homemade Chicken Noodle Soup
Grilled Cheese

Friday:
Hot Italian Subs (meal not cooked this week)

Charming, I am very sorry for your loss!

Wednesday was my daughters heart ablation surgery. She went in at 11 and didn't come out until almost 5PM. The ablation wasn't successful. The area they needed to get to was way on the back of the heart. They tried to go through veins with the catheter and then her femoral artery. So the bad news is, she will need the surgery in another 6 months. They did ablate some areas and want her heart to heal. They also didn't tell me she was going to the cardiac ICU.

We came home yesterday and I made her fried chicken and her favorite mashed potatoes. She goes back to school on Monday. She is home resting and wants to go trick or treating tomorrow.

We are planning a last minute trip to Disney for Thanksgiving. Everyone can go this trip and I am so happy. It has been a long time since we have been able to get all the kids together for a trip. So between the girls college and jobs, we were able to squeeze in a time that worked for everyone. We are all really looking forward to it. Plus, we have not been during the holidays so we can't wait to see all the decorations! :santa:

On to the menu plan:
Saturday - Salisbury steak over rice with italian veggies (zucchini/red peppers/tomatoes)
Sunday - Chicken pot pie (rolled from last week as I did not get to make it)
Monday - Angel chicken over pasta / creamed spinach
Tuesday - Keilbasa sausage, potatoes and cabbage bake
Wednesday - leftovers
Thursday - Halloween!! Hot dogs, chips and baked beans
Friday - Chicken, mashed potatoes, coleslaw, green beans and biscuits

I haven't posted much, but we are still trying to stick to not eating out too much. Every other Tuesday we have to go to my hometown to do grocery shopping for my home bound mother. We usually just grab something to eat in the car on the way home. Fridays are always something out, but fairly inexpensive. Sometimes, it's a frozen pizza.

Tonight-fend for yourself
Sunday/Tuesday-vegetable soup and grilled cheese
Monday-daughter has class late, so I'll just do something on my own
Wednesday-breakfast
Thursday-????
 

Saturday I made beef stir fry over brown rice.

Today- rice, cheese and bean quesadillas.

Monday- chicken and dumplings!

Tuesday- left overs from Monday

Wednesday- pasta

Thursday- Halloween!! Normally I make chili every Halloween but this year we might just grab a pizza.
 
Charming, you are in my thoughts. I am so sorry for your loss. If there is anything I can do, please let me know.

I really need to get around to eating better. The meds I am on make it SO hard to get up in the mornings so I am usually not eating lunch until 2ish (like I am right now). This means I am not hungry for dinner until later and then I am too tired to get off my behind to actually MAKE dinner. I need to stop that.

On the upside, I have a new med called Prelief that helps with the acid in many foods. As long as I don't go overboard I can now have fresh tomatoes (like 1 slice on a burger), mayo, citric acid, and many cheeses again. It has been a lifesaver!

Sunday: Spaghetti, bread sticks and steamed broccoli

Monday: Vegetable Plate: baked cinnamon apples, salad, buttered corn, baked potatoes, country green beans, broccoli and rice casserole served with cornbread

Tuesday: Hobo Dinner(foil) hamburger patty, potato, carrots, onions and salad

Wednesday: Breakfast for dinner: biscuits, cheese grits, honey maple sausage, scrambled eggs, waffles with strawberries and whip cream

Thursday- Halloween: Chili and raw veggies

Friday: Chicken tacos, Spanish rice and beans

Saturday: Jambalaya and red beans ( from the freezer)

I will also be making a Heath bar coffee cake and oatmeal chocolate chip cookies.

Can you tell me how you make the kielbasa bake? It sounds good.
 
Thanks everyone. It has been a tough couple of weeks but I can finally see the light at the end. My mom is finally home and doing so much better.

I finally feel like cooking again. Something about the fall helps me enjoy meal planning again.
So that being said.. here's this weeks menu

Saturday..was crockpot beef stew. I tried a new recipe that was very simple and it was a huge hit!

Sunday.. went to my parents and had prime rib, peas, mashed potatoes and salad.

Monday.. Fried Rice, Chicken Fingers, cucumbers

Tuesday..Spaghetti and Meatballs

Wednesday... Breakfast for dinner and smoothies

Thursday.. Something easy since it's Halloween. Maybe just grilled cheese and soup so we can get out trick or treating earlier.

Friday... Pork Schnitzel, rice, carrots


Saturday.. Wraps (beef, refried beans, lettuce, tomato, peppers, etc)

Sunday.. grocery day

Thanks;) She went back to school today but is disappointed that she needs to take it easy until they attempt the surgery again in 6 months.
 
Mon-- Shepards pie. First time making and it came out well!
Tues-- BBQ chicken, kale chips and possibly corn muffins
Wednesday-- pork chops with a pineapple glaze, broccoli
Thursday-- probably pizza before trick or treating

So tonight is an omelet with biscuits. Just hoping I did the biscuits right. I have never made them from scratch. So keep your fingers crossed.

Tomorrow I am supposed to have leftovers. However, I am CRAVING red meat. I mean, I woke up thinking about it I have to pick up prescriptions tomorrow anyway so will go by Fresh Market and get a big steak and a potato to bake. Yum....
