Thank you! Yes my husband said he didn't want to be bound to a certain meal on a certain night. So thats an idea I didn't even think of, just shop for the week and pick from the list.

A meal that I like to keep on hand is canned Italian green beans, canned sliced new potatoes, and sliced ham. Just layer them in a frying pan with the juice from the green beans and heat it up. Not very healthy, but ham keeps quite a while in a sealed package and the meal is very tasty.

A bit behind this week:

Sunday--dinner with the in-laws
Monday--tacos, corn and cole slaw
Tuesday--choir practice/booster meeting, the booster club will serve pizza.
Wednesday--church night so sandwiches--me:tomato soup and grilled cheese, dd will either do a stuffed potato or a ham sandwich
Thursday--bought a roast that I will cut in half. Half will go to supper tonight as the meat in a stroganoff. Cooked in the crock pot all day.
Friday--lemon pepper chicken, stove top, lima beans, salad
Saturday--second half of the roast to bbq beef sandwichs

Keeping it simple this week and didn't have to buy much.

Monday: publix fried chicken meal with country style green beans, mac n cheese, bbq baked beans and wheat hawaiian rolls. Yum!

I'm going through my recipe book tonight to put together the rest of the week.

I have been on track so far with my meals. I have even done some pre cooking to make the rest of the week go smoothly.

Tonight was another new recipe hit. It was meat stuffed shells. I didn't have ricotta and googl searched and found a meat filling, kind of like a meatball with an egg breadcrumbs but also mozzarella cheese. Mmmm they were yummy!

Tomorrow will be chicken enchiladas with rice
Wed must grocery shop thinking meatless. Maybe eggplant?

Just found this thread and I am excited about participating. I already prepare almost all our meals at home so that is not the hard part for me. I have a fair amount of time most days as I get home from work around 3pm. so I have time to prepare dinner. Plus I actually enjoy cooking.

My problem is the planning ahead part. I tend to go to the grocery store and or Costco several times a week and spend way to much money on impulse buying. I rarely have a plan and just walk the aisles willy-nilly buying things that catch my eye. Then I get home and realize I already have 10 different kinds of rice or did I really need 5 different kinds of squash this week:rolleyes1
Plus I have so much food in the freezer and pantries I could probably feed my family of 5 for 6 months. I really need to start using what I already have because to much food is being wasted.

This week:
Tonight (Monday) we had: rice and veggie burritos
Tuesday: some leftovers, napa cabbage, baked sweet potatoes with pecans
Wed: homemade pizza and salad

That is as far as I got so far. Going shopping Wed. Will try to make some sort of plan for Thurs. and Fri. I am hosting our Thanksgiving meal here Sat (Canada) so I know what we will be eating that day and leftovers for sure on Sun.

This is motivating me to clear out the freezer and use some pantry items as I tend to just restock every week...

Trying to be better about planning ahead.
Tonight is hamburgers, roasted butternut squash and broccoli
Tomorrow BBQ chicken grilled, corn on the cob and roasted Brussel sprouts
Thursday is baked chicken, rice and sweet peppers

I would love to get the recipe for the stuffed shells. My husband dislikes recipes with a ton of cheese so these sound really yummy!

Will start today. :)

Mon:
Pulled Pork wraps, tossed salad (lettuces, artichoke hearts, arugula, spinach, tomatoes)

Tues:
"Mexican hash" - brown rice, black beans, tomatoes, green chilies, salsa verde, sour cream; churro chips.

Wed:
Kielbasa, mashed potatoes, Sauerkraut, Lima beans

Thurs:
Baked chicken, asparagus, cucumber salad

Fri:
Beef stew

Sat:
Tilapia, brown rice, sugar snap peas

Sun:
Omelets, bacon, sliced oranges

I really need to plan!

I have some Italian sausage that I thawed out on Sunday and then didn't use for pizzas, so I MUST use it tonight! I guess it will be pasta with meat sauce! Asparagus and cauliflower need to be used up too!

Other meals I have the stuff for...
*Chicken and broccoli in garlic sauce
*Chicken fried rice and egg rolls
*steaks and sweet potatoes
*fish tacos

I love to look at everything everyone is making,It always gives me good ideas. I've been looking back to find Crockpot recipes, because I LOVE my Crockpot! If anyone has any that are good, please post! Thanks

a good one is Aloha Chicken, dump one can of pineapple chunks with the juice into the crock, add 1/2 cup brown sugar and 1/4 cup soy sauce then mix really well till the sugar is dissolved.. then add in 1.5 lbs of chicken you can use any kind of chicken we use boneless/skinless breast and thighs.. mis it around a bit so the juice gets on all pieces cook on low 6-8 hrs.. just before serving dump some of the juice into a sauce pan with some corn starch or flour to thicken and make a gravy vs. a thin sauce and serve over rice and with egg rolls or potstickers..

If you like roast - which i don't really but this ok - here is another it's called 3-2-1 Roast.. it's 3 dry envelopes of seasoning 1 packet of Dry Italian Dressing Mix, 1 packet Lipton Dry Onion Soup Mix, 1 packet Brown Gravy mix and 2 cups of liquid I used beef broth and 1 roast I used a 2.5 lb one.. Mix broth and envelopes in crockpot then add Roast. cook on low 8 hrs (or till done)

Tonight I was supposed to make Meatloaf but my DS isn't going to be home and it's my Bday so I think we will get Pizza from the local pizza shop here.. I make the meatloaf tomorrow night
