We haven't been doing that great with saving $$ past couple weeks.
Monday- lentil soup leftovers and grilled cheese
Tuesday- I made chicken pot pie and we didn't like it, plus it was expensive to make!
Wednesday- bought out because I had a PTO meeting. Kids spaghetti and meatballs, grilled chicken salad and a chicken panini.
Tonight- leftover chicken pot pie. Still making them eat it! Lol
** not so bad on making dinner at home but Have been buying Dunkin Donuts here and there. It adds up!!!
 
M-Taco night, made with soy crumbles
T-pasta, garden salad and garlic bread
W-leftovers from T, will add diced honeydew
R-Cuban style beans and rice, honeydew
F-grilled cheese and tomato soup
Sa-country vegetable soup and cornbread
Su-crock-pot sesame chicken, fresh broccoli and rice

I plan to bake pumpkin bread and applesauce muffins over the weekend for breakfast and/or snacks. On Sunday I am going to try making homemade uncrustables for school lunches and freeze enough for the week. Along with those the kids will get a string cheese or yogurt, pretzels and some kind of fruit.

We are affected by the shut-down and I am trying to cook as cheap as possible. I would like to shave off 200.00 from our monthly food budget.Any ideas you all have would be great!

Are you a vegetarian? I'd love to hear some of your recipes, your pumpkin bread too!! We are on a super super budget lately (trying to pay off some medical bills on a on paycheck house, money hasn't been going far lately) I'm a veg, but the family isn't, but we all eat veg meals 75% of the time.

We are the same! We eat meatless most of the time.

Pumpkin Bread
1 stick of butter 1/4t baking powder 1t nutmeg
1 and 1/4 C sugar 1t baking soda 1/2t cloves
2 eggs 1t cinnamon 1/2t salt
1 and 2/3 C flour 1t ginger 1C pumpkin puree

Mix wet, then add dry. Bake in greased pan for 1 hour at 350 degrees.

You will have pumpkin left over, you can add it to oatmeal or a white cheese sauce for pumpkin mac and cheese.
 
Friday - Burritos, rice and salad
Saturday - Hubby and son going to football game so I will throw together something for myself.
Sunday - Meatloaf, mac and cheese, zucchini
Monday - 25th wedding anniversary - Out to dinner!!
Tuesday - Mexican chicken in crock pot over rice
Wednesday - Burgers, sweet potato fries, salad
Thursday - Leftovers
Friday - Sausage and peppers over rice, honey carrots
 

It has been a crazy week for me. I am suppossed to be part time at my job (25 hours a week), but one of our managers is out for training, one employee had emergency surgery, and one was sick with the flu. So I have been working almost 40 hours this week. I am thankful for the extra money but I am exhausted. Dinners have been mostly takeout. I did make sloppy joes tonight and grocery shopped for the next week. Hopefully things will be better.
 
Worked on my menu for the week

Last night we had chicken salad in lettuce cups with fruit.
Sunday - pork chops with roasted sweet potatoes and zucchini
Monday - spaghetti squash with homemade turkey meatballs and sauce
Tuesday - beef, beer, and paprika stew
Wednesday- leftovers (I work late)
Thursday - chicken stirfry with veggies and rice
Friday - tacos with Spanish rice
Saturday - pork schnitzel (Michael Symon's 5 in 5 book)
 
Made Unstuffed Cabbage Rolls last night so leftovers tonight. Then Penne with Meat sauce. Then I think a Pork Roast with rice and broccoli. To round out the week I will make sub sandwiches. This menu seems like a lot of carbs and I was trying to go carb-less this next month. lol! :rotfl:
 
I'm having a ridiculously hard time with the eat at home concept lately. I am just finding we are so darn busy and by the time supper rolls around we're exhausted, and need to eat right away to head out to basketball or puppy class, or whatever activity we have for the night.
The thing is A) I KNOW what I need to do. I just need to plan it and do it. And B) Every time I give in and grab take out or we go out I am robbing the Disney fund. So it stops now.
I am going to make my grocery list and menus from the sale flyers for the weekend while I have a few hours this morning.
Just needed to say it out loud to people who get what I'm saying so I stick to it.

I'll be back with my menu!!
 
When I work, it's til 7pm so DH needs something quick and easy since he has to get the girls to activities, homework, dinner, baths and bed!

Tonight: pork roast with rice and gravy, homemade mac and cheese and broccoli.
Tomorrow: I work, leftovers
Tuesday: chicken fajitas and Mexican rice
Wednesday: fettuccine Alfredo with grilled chicken, garlic cheese bread
Thursday: gymnastics night, we always eat out after.

That's all I have so far!

Monday: Chicken Caesar Pasta Salad
Tuesday: Chicken Quesadillas with guacamole and salsa
Wednesday: Red Bean Chili and cornbread
Thursday: Turkey breast, green beans, mashed potatoes, biscuits and gravy.
Friday: Quick Lasagna, garlic bread and garden salad
Saturday: Weekend Enchiladas, Refried beans and Spanish rice

I actually want to plan meals a week at a time, that way we won't be rushing to figure out what we want. I'm planning to do it this fall basically because our finances are vrry tight this fall. But it'll be good to start so we can also do it in the spring for our may 2014 trip and fall 2014 trip.

Today: BLT's, grapes, chips/dip, banana cream pie
Monday: fish croquettes, squash, rice pilaf (using up leftovers here)
Tuesday: hot and sour soup, onion pancakes, any leftover chinese take out we have, if there is any
Wednesday: quiche lorraine, salad
Thursday: chili from freezer
 
Today: Pork Chops with Apples
Monday: Ham Casserole
Tuesday: Pretzel Turkey Dogs
Wednesday: Tacos
Thursday: Spaghetti
Friday: Nuggets
 
I've decided to join in here. Our eating out has gotten out of control and due to some recent financial setbacks I need to really tighten our belts.

Tonight was ham, mashed potatoes, corn, biscuits and apple crisp for dessert.
Monday: Leftover ham, mashed potato patties, broccoli
Tuesday: breakfast for dinner
Wednesday: This is our busy night so it will be tomato soup and grilled cheese sandwiches.
Thursday: Pork chops, scalloped potatoes, salad
Friday: homemade pizza night
Saturday: Leftover/clean out the fridge night.

Welcome disneymom83! It is real easy and you will get the hang of it in no time! Make your plan, shop for your ingredients and presto you have dinner solved. Don't worry about sticking to the day you assigned because the key is that you have all ingredients to make a dinner. Just pick a dinner from your list of meals to make each night. I also have a few backup dinners for nights that get crazy busy and I don't have time to prepare what I had planned. It is usually frozen ravioli/tortellini and a veggie, sandwiches / soup, and a frozen pizza with bagged salad. You will really see your grocery bill drop when you plan your meals! More for the Disney fund!

Thank you! Yes my husband said he didn't want to be bound to a certain meal on a certain night. So thats an idea I didn't even think of, just shop for the week and pick from the list.
