Can you tell me how you make your burrito bowls? My dd loves Chipotle, but I don't. If I could make it for her then maybe she will stay off my back about going all the time.

Basically all I did was flavor up some rice with lime and cilantro, warm up some beans, and take some leftover shredded chicken and warm it up with taco seasonings. Then I layered everything into a bowl and topped with my favorite toppings, cheese, sour cream, salsa, and lettuce.

Friday night we had baked ham and cheese sandwiches with tomato soup.

Last night I went to my 10 year high school reunion :eek: , so I ate there and mom fended for herself.
 
Hi all. Last week went good! Having a menu that dd and I make together helped us stay on track with no fast food! I did change the meatloaf to hamburger steaks as my family finally tells me they hate meatloaf! :rotfl:

Friday we did get pizza but I figured that was so much better than the 3-4 times a week we normally do.

So this week I have planned:

1. Beef pot pie (still using leftover roast!)
2. Shredded BBQ chicken sandwiches
3. tacos
4. chicken, bacon, ranch subs (this will be for the night of choir practice and replacing that usual stop at Subway!)
5. spaghetti
6. shrimp alfredo
7. pancakes, fruit and bacon (boy that stuff has gotten expensive!)


Not sure on the exact sides yet, off to the grocery store! But, always have a big salad fixed for the week with add ins for everyone's preference.
 
Sunday- spaghetti / broccoli
Monday - frittata
Tuesday - Mexican chicken over rice
Wednesday - fish, mac and cheese, veggie
Thursday - leftovers
 

Tonight we had a roasted chicken, orzo pasta salad, and grilled squash that I picked up from Earth Fare.
 
I'm excited I just found this thread! We have been trying to eat healthier and limit the fast food to once a week. The hardest part is coming up with new foods that everyone will like. Ive already seen gd stuff here so I'm subscribing...;-)
 
Here's our plan for the week. Last night I made goat cheese polenta from the California Grill in honor of today's reservation opening (and we got our ressie for November at CG!!)..

Saturday: Asian marinated chicken thighs, scalloped tomatoes
Sunday: Balsamic roast beef and goat cheese polenta
Monday: Garlic Dijon salmon, asparagus
Tuesday: Salad with roasted potatoes and walnut vinaigrette
Wednesday: Chicken parm meatball sandwiches
Thursday: Black bean, chorizo enchiladas (trying out some homemade enchilada sauce!)
Friday: Out

We have been doing really well. We have no choice though.... Saving for a trip next year and my dd just tried out for a travel softball team and boy that is not cheap at all! It will be a very tight squeeze but if she makes it it will be wonderful :love:

Wednesday: Football game so it will be hotdogs, chips, fruit
Thursday: Football game - grilled cheese, pretzels, fruit
Friday: roast, potatoes, carrots
Saturday: Chicken, rice, veggies, bread
Sunday: Cajun pasta, salad
Monday: cookout at friends house

On Sunday, are you reheating the polenta you made last night? If so, how are you reheating it? Do you add more liquid? Does it taste the same? Sorry for so many questions, but I also have polenta on my menu this week. I was planning to make it in the crock pot, but I'd love to be able to make it ahead & reheat it.

Tue- burgers & fries
Wed- chicken & rice, Mac & cheese, green beans
Thurs- breakfast for dinner
Fri- never did go use our groupon like we were suppose to Fri something came up so will go this night.
Sat- sandwiches
Sun- roast

Next week:
Mon- will be out on the lake probably burgers on grill
Tue- beef & broccoli
Wed- eggplant parm and penne w/vodka sauce
Thurs- hot dogs
Fri- we leave for Disney will get something on the road!!!
 
Hi, we are back from Disney and Universal and it's time to cook again. Last night I made grilled chicken, oven roasted potatoes and salad after stocking the house with tons of food.
Monday - beef stir fry, rice, Trader Joe's postickers
Tuesday - spinach and cheese ravioli, salad and frozen fish for DS12 (doesn't like pasta)
Wednesday - tacos and refried beans
Thursday - leftovers
Friday - TBA (aka whatever I feel like eating, although I tend to make homemade pizza on Fridays)
Saturday - family visiting, they don't eat beef or pork, so probably chicken or fish of some kind
 
Saturday: tacos
Sunday: pasta with stewed tomatoes and zucchini
Today: baked breaded chicken cutlets, smiley face fries and broccoli
Tomorrow: rice and bean quesadillas
 
We had leftovers! 2mrw we will have ground beef don't know how or with what but it will be good lol

Sorry that wasn't totally clear - we just had the polenta last night. Although it made a ton and we have tons of leftovers and according to google I can freeze it (it solidified pretty quickly when it cooled). When defrosted I plan to slice and bake or pan-fry and top with something (tomato sauce or pulled pork maybe?)

So unless your recipe can use sliced and baked/fried I don't think cooking ahead it the way to go.

Thanks for the additional info. We'll be on vacation & I want to cook as little as possible. I'm trying to cook everything that can be made ahead, before we leave home on Thursday. It looks like cooking ahead won't work for the polenta I plan to make. I'll just stick with the crock pot idea. That's easy enough.
 
Oh the roast is a cinch. Just put a roast in the crock pot, add 1 envelope of brown gravy mix, 1 envelope of Italian dressing and 1 envelope of Ranch dressing; and a 3/4 cup of water. Then let it cook (I do mind on low for 10 hours) Its really good and the gravy is soooo good. Works with pork roast too,

We just tried this over the weekned at my parents - I do not like roast (I like steak or burger - just not roast) but actually thought it tasted pretty good.. it made my Hubs :yay: meaning that he might actually get to have roast more often.. LOL

my week is all 4 of us.. altho I think the kids might be gone for the long weekend camping with their dad and I might end up back up to my parents (my gram is failing so we are all trying to spend as much time with her as possible - but her nursing home is 2 hrs away so weekends it has to be)

Monday - we had a free Little Ceasar's Pizza and Crazy Bread for the guys and I had an Atkins meal with some extra veggies
Tonight - is Chicken on the grill - some teriyaki and some plain, grilled corn on the cob, and pasta roni for the guys
Wednesday - I am making our family's secret recipe Meatloaf, instant Mashed potatoes and green beans for everyone (I'll have meatloaf, fried cabbage and sauteed zucchini)
Thursday - will be dreamfields angel hair spaghetti with sauce and meatballs for everyone and garlic toast for those who want it..

Fri - up in the air - most likely at my parents
Sat - we'll be at my BFF's for dinner - at huge labor day party event with fried turkey and all the fixins plus other stuff!
Sun -- is the a family gathering at Applebee's for the Hubs family
