Getting back on track after the hectic holiday season! I hope everyone had a lovely holiday. I know we did, probably one of the best ever!

Sun: Dinner at Uncles for cousins birthday

Mon: Taking my grandma out for dinner as a thank you for watching DD on Christmas break

Tues: Not sure. We're going to Ikea over an hour away so we may grab something quick or do fend for yourself when we get home

Wed: Dance night - quick dinner out

Thurs: Turkey Smoked sausage, mac & cheese, fruit

Fri: Soft tacos, refried beans

Sat: Sweet and sour chicken over jasmine rice

Sun: Crockpot beef roast, mashed potatoes, noodles, honey carrots

Mon: Chicken fajitas, corn on the cob

Tues: Salisberry steaks, mashed potatoes, green beans

Wed: Crockpot chicken and dumplings (if I have a half day at work, if not then quick dinner out before dance)
 
I'm going to try my best to make Alan and stick with it! Just planned out the month of January. Will probably shop/prep one a week so it is mostly ready to go. Wish me luck!



I made these last night. I had one sheet of puff pastry left over from Christmas so I made mini chicken pockets and mini bacon and cheese pierogies. That sounds good. Are they fridge or frozen....the pastries? I can think of all kinds of things to stuff them with!

Monday turkey, black peas, collard greens

Tuesday chicken and cabbage rolls

Wednesday - leftovers

Thursday - Catfish, fruit, fries , Cole slaw

Friday -Hamburgers, fruit, fries

Saturday - pizza

Sunday -I have go to the grocery store
 
I have a simple crock pot recipe. This recipe makes about 8-10 servings. 3 of us eat on it for a couple days.

I put 3 frozen chicken breasts in the bottom of the crock pot. 1 large (or 2 small) can of cream of chicken soup. 1 16 ounce can of chicken broth. Carrots, onion, and peas (we use a frozen mixture from our grocery - I put in about half a bag, but you could put none in or adjust it however you like). Cook on low 6-8 hours. One hour before its done, add one more can of broth and 2 cans of biscuits. I cut the biscuits into 4 pieces. Cook for the last hour and then enjoy! So incredibly simple and delicious!

Made this tonight. All I can say is, OMGish it was delish. My DH had 3 helpings.
I doubled everything. Next time I don't think I would double the chicken broth. Thanks for sharing.

Sorry didn't see this until I already posted. I have used 2 recipes for broccoli and cheese. The first one is for the stove top. Second is for the crock pot. I prefer to use my crock pot. Just much easier....BTW, my DH is sitting on the couch winning now that he ate way to much. lol

I always double every recipe. I make a lot to share and to freeze as well.

Broccoli Cheddar Soup – Panera Style (Stove Top)
2 T. Butter, melted
1 large onion, chopped
1/2 c. butter, melted
1/2 c. all purpose flour
4 c. half and half
4 c. chicken broth
1 lb. fresh broccoli
2 cups, julienned carrots
salt and pepper, to taste
1/2 t. nutmeg
16 oz. sharp cheddar cheese, grated
Saute onion in butter. Set aside. Whisk butter and flour over medium heat for 3-5 minutes. Stir constantly and slowly add half and half. Add chicken stock, still whisking.
Simmer 20 minutes.
Add broccoli, carrots and onion. Cook over low heat until veggies are tender – about 20-25 minutes. Add salt and pepper. The soup will have thickened by now.

Carefully transfer soup mixture to blender and puree. Return soup to pot (or crock pot) over low heat. Add cheese. Stir until well blended. Add nutmeg right before serving.

Makes 8-10 servings.

Broccoli Cheese Soup in the Crock Pot

Ingredients:
1 (32 ounce) bag frozen chopped broccoli
2 (10 3/4 ounce) cans cheddar cheese soup
2 (12 ounce) cans evaporated milk
2 tablespoons Mrs. Dash seasoning mix
1 teaspoon black pepper
1/2 onion, chopped

Directions:
1. Combine all ingredients in slow cooker and stir together.
2. Cover and cook on low 4-5 hours.
3. *Note:Do not overcook or broccoli will become mushy.

I am a little late on posting this recipe but better late than never! My recipe is time-consuming but not hard to make.

Chicken and Dumplings

1 whole chicken or 3 large chicken breast with bone and skin
2 large onions (cut into quarters)
4 stalks of celery (cut into large pieces)
1 lb of carrots (peeled and sliced) or frozen mixed veggies
Bisquick mix

In a large pot put the chicken, onion and celery. Fill the pot with water covering chicken/veggies. Cook chicken on medium for about an hour until chicken is done. Remove chicken to a plate to cool. Remove the onion and celery from the pot and discard as it is just used to make a nice stock. Then when chicken is cool enough to debone - debone chicken and add back to pot. I usually add carrots to the broth while the chicken is cooling to get ahead start on cooking it. Make the dumplings according to the Bisquick mix box. Bring the pot of chicken and veggies to a boil. Scoop the bisquick in spoonfuls into the broth. They will float to the top and an not sink into the broth. Put the lid on the pot and cook for 20 minutes. Take the lid off and cook for another 10 -15 minutes until the dumplings are cooked. They will be fluffy - just poke a fork into to one to check for doneness. This recipe is so yummy. It is from the best cook ever - my Mother! :)
 
where I did 0 cooking. It is now hard to get back in the swing since I have been on vacation two wonderful weeks. Thursday was ham, yesterday wa schili. Today was California Pizza Kitchen (yum). I need to go to the grocery but here is the next few days.

Monday
Navy Bean Soup using leftover ham for dinner
we will have black eyed peas and sour kraut for lunch with turkey smoked sausage. I had all of this on hand already.

Tuesday (last day before we go back to work)
Lunch will be nachos using the leftover chili
Dinner will be something easy - grilled ham and cheese sandwiches (using the last of the ham) and leftover bean soup

Wednesday - GROCERY! I haven't been since early December!

The puff pastry is from Pepridge Farm. It comes frozen and then you can cut the sheets the way you need them. The Pierogies were an off brand but I also like Mrs. T's.

2 cans of Refrigerator biscuits??? raw? oh that does sound easy!

Mine is SUPER simple
I boil chicken breasts and shred them. I add some chicken bouillon and pepper for flavor. I buy frozen Reames brand noodles or dumplings and simmer them for about 45-60 minutes. Add whatever veggies sound good. That's it! So easy ad a favorite for both of my kids

I never knew you could by frozen dumplings... I'll have to look for them.. thank you!
 
Chicken and dumplings (well, biscuits...because I don't like wet dumplings)

Preheat oven to 350F. Put a 10 oz. box of frozen peas and carrots and 4 tbsp butter into a microwave/oven-safe 12x9 casserole. Cook in microwave on high until crisp tender; it'll take about 3-4 minutes, stirring halfway through. Stir in 4 tbsp flour, a dash of pepper and 1/2 tsp. dried marjoram.

Stir in a can of low sodium chicken broth and 2/3 cup milk, and microwave on 50% power until thickened, stirring every minute or so. Add up to another 1/3 cup milk if the sauce is too thick, Add 2 cups cooked chicken and microwave until heated through, about 3 minutes on high, stirring halfway through. Taste and correct seasonings.

Top casserole with biscuits (canned, homemade, bisquick) and bake until cooked through and browned. I usually make a kind of biscuit "crumble" that I scatter over the top.
 
Joining the legions of people who are making a commitment to eat healthier this year! I ideally have 35 pounds I would like to lose but my main goal is just to eat better and be more active. Cutting out excess sugar and drinking more water to start. I always go absolutely crazy at first and lose weight quickly but I never maintain it. So this year I am working on some moderation and balance in my life:thumbsup2

Alright all... here is my menu for the next 1.5 weeks.

Tonight is Filet, lobster tail, creamed spinach, and baked potato with cheese cake as a dessert. It's my last splurge meal before I get back to eating better!

Wednesday: Eggs, chicken sausage, and toast.

Thursday: Smoked sausage, mashed potatoes, and sauteed cabbage

Friday: Shepard's Pie (well, Cottage Pie since I am using ground beef)

Saturday: Bruschetta, Provencal Chicken, and sauteed green beans

Sunday: Shrimp Lo Mein

Monday: Steak Fajitas and Mexican Rice

Tuesday: Chicken and Dumplings

Wednesday: Pot Roast with potatoes, carrots, and onions

Thursday: Cashew Chicken with Ginger and Rice

Friday: Deli Sandwiches and Potato Salad

Saturday: Hearty Lasagna and Garlic Bread

Sunday: Leftovers
 
Monday: Ham bits, black-eyed peas, diced sweet potatoes and onions, and mustard greens all mixed together. Oh, and cornbread. And blackberries and cream. Gotta feed my inner hillbilly on New Year's Day.

Tuesday: The rest of the shrimp, udon, ****take, and snow peas stir-fry from New Year's Eve. Citrus salad for dessert.

Wednesday: The rest of the black-eyed peas and mustard greens. And cornbread. And blackberries.

Thursday: Grilled shrimp on the Foreman Grill, black beans, salsa and pineapple rice.

Friday: I think there's something going on at church. Maybe the chicken and biscuits casserole I posted earlier and cranberry salad.

Slow Cooker Saturday: Beef cubes and tomatoes in the slow cooker, with white beans, kale, cashews and cranberries. Strawberries and cream.

Big Dinner Sunday: Butternut squash lasagna in the oven, cranberry/mustard glazed pork tenderloin in the slow cooker, steamed green beans with seasoned butter. If I'm feeling less ambitious, it'll be butternut squash soup out of a box and the other stuff.
 
Tues lunch was pasta with beef and pepperoni
Dinner tonight is roast, in crock pot already! Potatoes, corn
Wed. Fajita burgers, refried beans
Thur - chicken and broccoli in garlic sauce

Other...hopefully leftover roast will be bar b que sandwiches

I'm joining you guys. I figure its the 1st and I'm planning tomorrow shopping list so why not!

Tonight we are having chickpeas and brown rice... just because I made it yesterday and by the time it was finished, no one was hungry thanks to all the other finger foods I made. I always get up and just make.

Tomorrow... probably thaw out the spaghetti and italian sausage and make some type of baked dish.

Thurs- Turkey Soup w/salad

Friday- Pork Roast w/veggies & biscuits

Saturday- Left overs

Sunday- Baked Chicken, Salad, Rice


Now, off to make my shopping lists! (I have most stuff on hand, but I need to buy a few staples.) I shop and plan my menus according to what's on sale, plus what I have on hand.

Tonight was Cheese Tortillini with blush sauce, homemade buns, salad
