Eat at home 2!

Last night was mexican (nachos and cheese, quesadillas and the fixing's for soft tacos).

Tonight's dinner is already in the crock pot...loaded baked potatoes...and we'll have a side of broccoli and the leftover cheese sauce from last night.
 
I just made 2x 7 layer taco dip. Now I have to hide all of my mess under my roll top desk and finish cleaning the rest of the house lol I will post some pics of my Soda Stream Party on my blog later:)
 
Mom came home yesterday and is doing well so far. She starts her next chemo round on Monday so hopefully it will go well. Here is the plan:

Tonight: Sauteed Shrimp, Spaghetti with Butter and Parm, and Broccoli
Sunday: Chicken with Roasted Vegetables and Mashed Potatoes
Monday: Leftovers
Tuesday: Penne with Italian Sausage, Peppers, and Spinach
Wednesday: Leftovers
Thursday: Pork Chops with Balsamic Peppers and Mashed Potatoes
Friday: Homemade Pizza
Saturday: Chicken Noodle Soup and Crackers
Sunday: Beef with Snow Peas and Rice

I am glad your mother is home. I hope her treatment goes well and will keep her in my thoughts.
 

This thread inspired me! We spend way too much money on fast-food/restaurant food. Tonight, I'm making Baked Macaroni and Cheese with Meatballs!

1 lb meatballs
2 (7 1/4 ounce) boxes macaroni & cheese dinner mix
1 1/2-2 cups milk
8 ounces sour cream
2 medium tomatoes, thinly sliced
2 -3 tablespoons grated parmesan cheese

Directions:

Preheat oven to 350°.

Place meatballs on a foil lined baking sheet and bake 15-20 minutes or according to package directions.

Cook macaroni according to package directions, drain.

Add milk, cheese sauce packets and sour cream, stir to combine.

Place meatballs in the bottom of an oven proof casserole, top with macaroni, cover with tomato slices sprinkled with parmesan.

Bake uncovered 25-30 minutes.

It's definitely time we started making more food at home! I"m going to try to come up with a weekly menu like most of you do. Lots of great ideas in this thread! :goodvibes

Welcome!:) Your dinner sounds great! I have found even if it's just grilled cheese and soup or toast and eggs, as long as I planned it ahead of time we don't get take out or go to a restaurant. Saves us at least 60 every time.:thumbsup2
Now I actually plan to eat out instead and it makes my wallet much happier. More money for our trip!
 
Last night I ended up staying later at work since we were crazy busy. I was too tired to cook so I picked up Boston Market with a coupon.

Tonight is going to be pot roast with carrots, celery, and potatoes.
 
Can you post your recipe for the chicken thighs?

1 1/2 lbs boneless skinless chicken thighs
1/4 cup peanut butter, crunchy or creamy
3/4 cup salsa
2 Tbsp lime juice
1 Tbsp soy sauce
1/2 tsp minced ginger

Place chicken in a sprayed crockpot. Mix peanut butter, salsa, lime juice, soy sauce and ginger, pour over chicken. Cook 8 hours on low. Remove chicken and skim any fat from sauce. Pour sauce over chicken.

Haven't posted in a long while; but I need to prepare my meals at home more and I need ideas of things to make, so I'm back....

Last night I made Lentil Sloppy Joe in the crock pot, we will eat that tonight. with french fries

Tuesday: Crockpot Country Port Ribs in BBQ Sauce, probably with green beans.

Wednesday: Fend for yourself day, DH bowls and I clean the cat rescue. Its also his day off so I'm sure the ribs will be gone by the time I get home. :)

Thursday: Rachael Ray's Chicago Dog Salad

Friday: Turkey Cutlets with Prosciutto, rice

Tonight I'm doing what we call 'camping breakfast' for dinner!!!

Cubed pre-cooked potatoes fried with bacon, mushrooms & onions, then make a couple of wells in the mix and break an egg in each. Finish under the grill to cook the top of the eggs then sprinkle on shredded cheese and serve with crusty bread and a good dollop of steak sauce (or HP sauce here in the UK!!!)

I usually do this when we go camping as you may have guessed (easy to cook in one pan), but it's great for using up bits and bobs from the bottom drawer of the fridge!!!
 
Last night was bean and rice burritos with baby carrots and cucumber slices.

Tonight is homemade pizzas.

Tomorrow night is chicken breasts with potatoes, stuffing and broccoli.
 
I have been such a slacker lately. DH got sick the day before Thanksgiving & stayed sick for a week. And between Christmas shopping and overtime at work, I haven't been able to slow down. Tonight I sat down and finally planned out our meals for the next 2 weeks.

Tonight: Trader Joe's chicken hot dogs, roasted corn
Tuesday: Christmas party @ work, DS is going to a friend's house
Wednesday: Spicy chopped chicken, roasted salt & vinegar potatoes, garlic green beans
Thursday: Christmas Family Night @ my grandma's assisted living facility
Friday: Date night w/ DH
Saturday: Grilled salmon & roasted asparagus
Sunday: Tuna casserole

Monday: Fiesta Lime Tacos, Spanish rice
Tuesday: Garlic brown sugar chicken, sauteed mushrooms & spinach
Wednesday: Lasagna, salad, garlic bread
Thursday: Leftovers
Friday: Date night w/ DH
Saturday: DH will grill something, sauteed brussels sprouts w/ pancetta
Sunday: Fish Tacos, sliced avocado

DS usually spends the night with a friend on Friday nights, so Fridays are easy, lol. I am going to do so much better with my meal planning in 2013!
 
I ended up having a movie night with some girls from work at our house. So we had homemade pizzas and salad. Plus pound cake with fresh berries and whipped cream for dessert.
 
I've been slacking...but here we go

Sun - Meatloaf, Cooked German red cabbage with apples and onions, cheeze spaetzle
Mon - Beef Tacos, Grilled carmelized pineapple
Tues - Sprite can roast chicken, roasted zucchini, sliced kiwis
Wed - Leftover roast chicken, mashed potato, coleslaw
Thurs - Spaghetti and meatballs, sauteed spinach
Fri - Pizza with bananas/oranges/apples (whatever fruit I've got left)
Sat - Cookie swap brunch (so out in the evening)...

Tonight we had grilled pork chops with homemade German potato salad, and glazed carrots.

Tomorrow night my mom is going to a Christmas Dinner at the rehab facility my grandma is at. I am working so I will have leftovers or something from the freezer when I get home.
 
DH and I have to go to the viewing/ visitation for a dear friend that died of a sudden heart attack on Monday. He was just 41 years old and left behind a wife and two sons, ages 7 and 12. This will definitely be a tough one. Dinner will be a drive-thru before or after the viewing.
