I never posted my meals for the week! It is kind of a hectic week here, so we'll see how it all goes down.

Saturday (this past weekend): spaghetti and salad - stuck to the plan with this one!

Sunday (last night): the plan was chicken salad sandwiches and tomato soup. DH sang in a concert so we got home late. I had leftovers and he had Chipotle :sad2:

Monday (today!): stuffed chicken breasts, rice, green beans, applesauce spice cake (this came out so good. It is taking all my self control not to eat a big huge piece before dinner :lmao:)

Tuesday: taco soup in the crock pot (DH has another concert... so we'll see what happens)

Wednesday: Leftovers, or spinach bacon quiche

Thursday: Christmas party - dinner (I am bringing a seven layer salad)

Friday: We will probably meet some friends for drinks - avoiding eating out is always a challenge! I may go ahead and make the chicken salad so we can make easy sandwiches for dinner.

Saturday: chicken pot pie

Sunday: finish out the leftovers or eat from the freezer, because...

MONDAY - we leave for 4 days at Disney!!! :yay:

Last night was seafood lasagna, tonight was supposed to be chicken breasts with noodles and broccoli but I fogot to take the chicken out to defrost last night :rolleyes1 so I'm going to have to make hamburger helper up instead.

Tomorrow is my birthday so my birthday dinner is going to be my fave...roast beef, mashed potatoes and gravy, broccoli and cheese and yorkshire pudding. I'm dieting so I'm nixing the cake! :sad2: Maybe I'll have half a chocolate bar or something instead!

and for the rest of the meal plan...

Wednesday--leftover roast beef goodness
Thursday--homemade pizza
Friday--crockpot loaded baked potatoes
Saturday--bean and rice burritos
Sunday--chicken breasts and stuffing
Monday--mexican night
Tuesday--chicken fried rice
Wednesday--Tandoori chicken, basmati rice and naan for DH's birthday
Thursday--chicken and noodles

LilyWDW, sending prayers your way. I hope everything works out with your mom.

They moved my Grandma to a different rehab after her hospital stay. The one she was at before was not doing what they were suppossed to regarding her wound care. It has been frustrating but hopefully she will have better care at the new place.

So saturday night we had dinner out while we waited for her to be transferred.

Last night we had pizza because I was cleaning all day and forgot to get out something from the freezer.

Tonight we had hamburgers with chips and fruit.

I want to thank all of you for your well wishes. Mom was very sick Friday and had to be taken to the ER by ambulance for fluids and IV meds (she couldn't keep things down long enough for the pills to work). They admitted her after her blood results came back and showed low white blood counts, low platelets, low potassium, and low magnesium. So, she had a blood transfusion and has been on IV fluids, potassium, and magnesium. They also seem to have gotten the nausea under control.

I am going to hit the grocery store in the morning but not buy all that much. I have things on hard from the last few days that we didn't make plus I am not sure how mom will be feeling. So I need stuff for my lunches, eggs, bread... those sorts of things.

LilyWDW - Thank you so much for posting! Hope each day is a little brighter for you and your mother. You are both in my thoughts and prayers. :flower3:

Tonight I had to do a taste test at home for a taco kit. I had to work late, so I went to our nearby organic grocery store to get supplies. I had $15 to shop with. Let's just say, it didn't go very far. I spent about $17.00 and came away with one Roma tomato $1.17, 2 small heads of Romaine lettuce $4.00, a can of refried beans $3.00, and about $6.00 for a one pound package of organic ground beef. (I got my daughter and I a popsicle also)

I try not to shop there unless I really have to.

Tomorrow is my Soda Stream Party. I plan on making layered taco dip and they gave me a bunch of goodies to hand out. They also gave me plenty of flavors to try, and some popcorn too.

I will post on my blog how it goes. I am in my finals weeks at school. Thank goodness! I need a break!
