Last night I ended up going out to dinner with two good friends. I work with one of them and she is a bad influence on me, lol. It was fun and great to relax after a long work day.

Tonight was leftover night. Tomorrow is trash day around here so we cleaned out the fridge.

Tomorrow I work late so I am cooking a chicken in the crock pot. Mom can make herself something with it and then I will eat it when I get home.

Thursday I have to be at work at 5am for inventory, so at least I will be home for dinner. I am thinking steaks with cron pudding and brussel sprouts.

Friday will be chicken with angel hair pasta and roasted veggies.

Tonight is tri-color rotini with creamy spinach and parmesan sauce (new Classico one, found at Target) and parmesan-crusted chicken breast tenderloins (Hellmann's recipe). :)

Egg salad sandwiches, watermelon and chips. I am PMS today and having cramps. No way was I cooking.

We are having hot dogs, salad, and eggs.

We're also smoking 10 pounds of salmon (about 5 pounds each of red and silver). :lovestruc

We had beef enchiladas with a salad. I added some leftover rice to the beef mixture and a can of rinsed and drained black beans, added the enchilada sauce and completed the dish. It was really good! :)

Wednesday night we had sandwiches with fruit and chips.

Last night (Thurs) we had pizza for dinner as I was way too tired to cook.

Tonight (Fri) I think we will have either chicken enchiladas or chicken paprikash

Tonight is BBQ Chicken, Corn on the Cob, and Cole Slaw.

Trying something new again tonight...everything is in the crockpot: ham, whole green beans, red potatoes, onions, chicken broth, salt and pepper. It sounded so good. We'll have corn muffins with it.
