Eat at home 2!

Did a big shop at Sam's club today so need to plan menu for this week:

Sat (tonight) we had burgers on the foreman grill and oven fries
sun: appetizers and frozen pizza for superbowl, chips and queso dip
Mon: Mac n cheese with taco seasoned beef and green beans
Tues: Grilled teriyaki chicken, lo mein and veg stir fry
Wed: Pork roast, mash potatoes, brocolli/cauliflower
Thurs: Smoked sausage Jambalaya with grilled corn bread and green salad
Fri: Ham, Egg and cheese fritatta

I do often switch around what day we have what meal - but I am finding this thread is keeping me on point with eating home and sometime during the week I make the planned meal
 
So, I now am having to plan for every night. Things didn't work out...

Here is my menu for next week. I may start being tutored in Japanese by a friend starting this week, so I have a roaming "super easy" meal in there. That way it's not a huge deal if it doesn't get made!

Mon/6 Crock Pot Chicken a la Criolla, Rice
Tue/7 (Class) Eggs, Chicken Sausage, Toast, Fruit
Wed/8 (Class) Leftovers or Frozen Meal/Vegetables
Thu/9 Whole Wheat Pancakes with Strawberry Sauce, Chicken Sausage, Fruit
Fri/10 Grilled Chicken Salad (unless tutoring starts)
Sat/11 Sirloin Steak, Baked Parmesan Tomatoes, Salad, Baked Potato (for mom)
Sun/12 Maple Mustard Chicken Thighs (Foodnetwork), Sweet Potatoes, Salad
 
This week's menu:

Sunday: Superbowl Menu - homemade clam chowder w/crusty rolls, peel & eat shrimp, crab bread, Mom's Bean Dip, cheese, crackers, assorted chips and dips.
Monday: Homemade chicken parmesan, spaghetti, tossed salad
Tuesday: Roast pork, gravy, baked potato, green beans
Wednesday: Mexican Shepard's Pie, tossed salad
Thursday: Wicked Chicken Casserole, tossed salad
Friday: Maple glazed salmon, rice, broccoli
Saturday: Roast beef, gravy, mashed potatoes, corn
 

It's just me this week so to keep it fast & easy I made a tray of ziti yesterday & I am making pulled chicken today. I plan to alternate these two dishes all week. I also have some tater tots, macaroni & cheese and meatballs in the fridge if I want something to go with those entrees.
 
We are having Super Bowl Chili tonight. I may put it over baked potatoes. I don't know. Low fat sour cream, shredded cheese. Fun! :)
 
This is the way it looks now:

Mon Beef Vegetable soup, rolls
Tues Italian style Salisbury steak (moved from last week), mashed potatoes, veg
Wed Omelets, beef stick, fruit
Thurs Italian sausage/pepper/onions/sauce over pasta, salad
Fri Make your own hoagie night (before Father-Daughter Danceand night off for me)
Sat Turkey cutlets, stuffing, mashed potatoes, veg
Sun Shrimp Alfredo w/pasta and broccoli
 
So, I now am having to plan for every night. Things didn't work out...

Tonight we are having a few people over for the superbowl (GO PATRIOTS). Our menu is Baked chicken wings, sweet potato fries, baked zucchini chips, and ice cream with fresh fruit. A friend is bringing some veggies and dip, another is bring pizza dip.
 
We are going simple this week and it is subject to change (one meal) as we will be getting the Free Papa John's Pizza since DH picked heads LOL

Sunday: Ham and Cheese Cresent sandwiches, chips, veggies and munchies (Super Bowl style)

Monday: Pancakes and Bacon cause I have been craving pancakes and that never happens.
Tuesday: Bourbon CP Chicken.
Wednesday: English Muffin Pizza w/salad
Thursday: Chef Salad or Soup and Grill Cheese (since we didn’t have it last week as planned)
Friday: Grilled Hot Dogs w/Baked Beans and veggies
Saturday: Chicken Pie
 
Back from Costco and the grocery store. This week we are trying all new recipes! Here's the menu, in no particular order-
-waffle crusted chicken tenders (never got around to having it this week), homemade mac & cheese
-crispy cheddar chicken, rice, corn casserole
-crock pot baked potato soup, pretzel rolls
-crispy southwest chicken wraps
-ranch house crock pot pork chops, mashed potatoes
-Costco take and bake pizza, salad
-Superbowl- wings, brats, raw veggies/dip, cheese ball/crackers

MominKC - We loved the crispy cheddar chicken! One tip that really helped me though was that when you dip the chicken in the milk, then into the cheese, I really had to press the cheese onto the chicken to make it stick.

I thought I was a dying breed making my own waffles from scratch. I inherited a waffle iron a few years ago and have been making them ever since. Do you have a special recipe you use?

So sorry I am just getting back to you! I am only a few days away fom baby number 3 and I have not been on the Internet that often.

Anyways this is the recipie I have been using it works nicely
2 eggs
2 cups flour
1 3/4 c milk
1/2 c veg oil
1 T sugar
4t baking powder
1/4 t salt
1/2 t vanilla

Beat eggs in lg bowl until fluffy. Beat in the rest util smooth.
That's it I let it sit out a rise up a bit while the iron preheats
 
I have a job interview in about an hour so I am totally nervous and have no clue yet what we are having for dinner.

Thanks for all the well wishes. I think the interview went very well. I will find out sometime next week if I am called in for a second interview.

Tonight for dinner we are having The pioneer woman's bbq grilled chicken and pineapple quesadillas with Spanish rice and sauteed veggies.

WFD this week.. just me and Hubs ..
Superbowl Sunday - we had ribs, onion rings, green beans fries, and chicken wings
Monday - Hot Turkey Sandwiches
Tuesday - Stacked Chicken Cordon Bleu (taste of home) rice pilaf, zucchini
Wed - Steak tips and onion rings
Thurs- Apple & Brie Chicken (barber foods) spaghetti with leftover garlic sauce and salad
Fri/Sat - one night is date night and one night is leftover baked beans and hotdogs.
Sunday - Bridal shower for me (Hubs is on his own with his family)
 
I really need to get back on track here. I have eaten out more in the last month than I normally would over a 3 month period. I told DH that this week ='s no eating out. He should be fine with that since we have more leftovers from our Superbowl Party than we can ever eat.

So here goes for our leftover week:

Mon- DH: pizza and grilled BBQ wings
Me: shrimp cocktail and veggies

Tues: DH : pizza and wings and salad
Me: pizza and shrimp and salad

Wed- DH: pizza and wings and veggies ( every night until its gone... he will love this splurge :rotfl: )
Me: grill the shrimp, taco dip

Thurs- DH : pizza ( if it still is left), meatballs, taco dip, salad
Me: meatballs, salad, veggies

Fri: Chicken and veggie stirfry ( normally I make homemade pizza on Fridays but that seems like overkill :rolleyes: )

Sat: Soup and Sandwhich

Sun: I am throwing a Bridal Shower so I will eat there and bring leftovers home for DH:rolleyes1
 
Not sure how the week will play out.

Mon- chicken breasts, fresh green beans, potatoes w/ a little chicken broth and balsamic vinaigrette in the crock pot.

The rest of the week:

- breakfast for dinner
- beef and broccoli over rice
- turkey meatloaf and mashed potatoes
Fri.- Pizza!

I have veggies and fruit to choose from. It's the meat/main that needs planning for me.
 
Last night we had neighbors over for the game, dh brought home some chips, dips, frozen crab cakes, etc from the grocery store. Dd6 & I went to the Disney Princess play so the 2 of us had a fast food lunch. Tonight is the scrambled egg muffins, English muffins & fruit.
 
We went out to eat for lunch yesterday, and have an entire pizza leftover from Mellow Mushroom! This weeks meals are going to be odd for us. I am trying to clean out the fridge/freezer/pantry. Lots of what we have is pretty junky stuff. It will get healthier once all of this nonsense is gone! :rotfl:

Monday-Leftover MM pizza, salad
Tuesday- Leftover mexican soup, turkey and swiss sandwiches
Wednesday-Sloppy Joes, tator tots, corn on the cob
Thursday-Fish fillet sandwiches, baked potatoes, baked beans
Friday-salmon, roasted sweet potatoes, broccoli
 
Last night was:

Awesome Nachos
Homemade Guac
Toll House Pan Cookies


Tonight:
Honey Mustard and Bacon Chicken
Au Gratin Potatoes
Steamed Broccoli

So sorry things didn't work out for you Lily! Finding the right person is just so hard. Prayers and pixie dust for you, friend. :flower3:
