Pigletto, can you please post your whole wheat pizza recipe? Would love to eat healthier using the wheat.

Sorry I meant to last night! I am already in bed but I promise to put it in here tomorrow. I just photo copied the recipe from my sister so I'll need to type it out.:)
 
We just got home from four days in Vegas yesterday, and I think I am still full. This week school starts back up for me, so it's going to get crazy ... yuck

Sunday: Spaghetti with Italian suausage
Mon: Stuffed peppers
Tue: Stuffed chicken, mashed potatoes, broccoli
Wed: Steak fajitas
Thur: Smothered pork chops, broccoli and squash
Fri: Pizza
Sat: :confused3
Sun: :confused3

All I have to buy are toppings for the pizza (and I might be lazy and buy premade dough, I haven't decided), chicken and squash. We have everything else, which is nice. I'll have to figure out what we're having for the weekend before Tuesday though, so I can do one fell swoop at the grocery store.
 
I haven't posted much lately, but it's time to get back in the swing if things. This week I am trying to cook mostly from my freezer and pantry.

Tonight we had Turkey Club Sandwiches and carrot sticks
Monday- chicken fajitas and refried beans
Tuesday-ziti with sausage and homemade sauce (cooked in the crockpot) and salad
Wednesday- Turkey cutlets, stuffing, gravy and green beans
Thursday- Chicken stirfry with veggies and rice
Friday-hamburgers, fries, salad
SATURDAY- pea soup (with lots of ham in it) - leftover from what I made right after Christmas, biscuits and some kind of fruit.
 

Pizza Dough Recipe. (Makes 4 8-9 inch pizzas to 2 18-20 inch)

1tbsp active dry yeast
1.5 cups warm water
1/4 cup of milk
2 tsp table salt
1/4 cup olive oil
1 cup whole wheat flour
2 cups white flour (preferably unbleached)
Corn Meal
(* I added more whole wheat, and less white. It makes a denser crust. You can modify as needed for your tastes.)

Dissolve yeast in large bowl with 1/2 cup warm water.
Stir in milk, salt, rest of water until dissolved and pour over yeast.
Add olive oil, whole wheat flour, and 2 cups white flour stirring to mix. Turn out on a floured surface while you wash out and oil bowl.

Knead dough until smooth, adding more flour as necessary (about 6-8 minutes).
Return to dough to bowl, cover with plastic wrap and let rise until doubled in volume (* this was about 45 minutes)

Preheat oven to 450.

Divide dough into size you prefer.

Stretch dough by kneading a bit, flatten out and coax toward the edges. It will resist so you have to work at it. I used a soup can and added flour as I went so make it less sticky.
Get it as even as possible.

Sprinkle cookie sheet or pizza baking pan with corn meal. (* important step, gave the dough the perfect crunch for our tastes)

Quickly place in oven and bake about 12 minutes. I sauced mine first, baked it that way, and then placed in fridge after it cooled.

The next night we sauced again, added our toppings and cheese and reheated.:)

Mom-Whole roasted chicken
Tues-Chili
Wed-boneless pork chops/rice
Thurs-Bean Soup
Fri-DH and I out (local diner)
Sat-party (taking appetizer)
 
I have 3 new recipes on the menu this week, so I looking forward to it.:thumbsup2

Tues - Pork & sauerkraut/mashed potatoes
Wed - Leftovers, maybe soup for DD
Thurs - Balsamic chicken (new)/ rice/broccoli
Fri - Stromboli slices (new)/fruit
Sat - Pork, proscuitto & parm tortelloni (Wegman's)/sauce/green beans
Sun - Mexican Shepherd's Pie (new)/ green veg?
 
This is a short week since we are going to Disney on Wednesday.

Monday: Jack Daniels pulled chicken sandwiches
Tuesday: left over chicken parm or pigs in a blanket. LOL



pigletto...thanks for posting the pizza dough recipe. I am going to try it one night. :)
 
Today my littlest turned 6:sad1:, so grandma is coming over & we are having dd' s favorite, spaghetti & meatballs, with salad & a Rapunzel cake & ice ceamprincess:.

I have extra calories for the day so I added some Garlic Bread for tonight!

ok I didn't get to food shop today so I had to throw something together.
I used a Plain Chicken blog recipe with what I had on hand- Chicken, Ham cheese crescent rolls. With rice.

I need to food shop. But if I don't tomorrow will be pizza.
 
Tonight I am trying a new recipe from a blog I follow:

Warehouse Soup- this involves canned cream of potato soup, canned split pea and ham soup, smoked sausage, italian tomatoes...weird combination, but thought I would give it a try. :confused3

Sunday was Meatloaf, instant mashed, corn before kids went home to their dads
Monday was Pastrami sandwich for Hubs and Tilipa, rice and sauteed zuchinni for me
Tonight is leftover baked beans, hotdogs and toast
Wednesday is a Chz Burger for Hubs and Tilipia, tater tots and steamed broccoli for me
Thursday is Mock Chicken Parm using leftover homemade ranch chicken nuggets and the leftover baked spaghetti and leftover garlic bread
Friday is late date night - we signed up to make Team Dinner for the HS Ice Hockey team then we'll go when our part of the dinner/clean up is done
Saturday is Steak tips, Loaded baked, Corn
Sunday is grocery shoppping day and when the kids come back home so we'll see what we end up with.
 
Pigletto, have you ever frozen your dough for future use? I'd love to have a handful of Pixza doughs in mine.
 
I was proud of myself last night - I was supposed to throw a crock pot meal together in the morning, but was running a bit behind schedule and didn't get it done. DD had softball tryouts so it was going to be a late night, and I was soooo tempted on the way home to stop - but we DIDN'T, we went home and had leftovers!!

This is my first time reading this thread and I am so happy I did. What great idea. Now I am quoting you because I was hoping you could direct me to the Baked Spaghetti Recipe you mention. TIA

As for me and DH...

Yesterday I made hamburgers and hashbrowns.

We were thinking of going out tonight to use one of the certificates we got for XMAS instead, I am making

italian sausage over pasta.

I will look through these posts to see what we shall have for the rest of the week.
 
Hi I don't know how to post a link but it is in the top post on page 15 .. but here is the recipe Oh and Welcome aboard!

Baked Spaghetti Casserole

12 oz spaghetti
1 (28 ounce) jars prepared spaghetti sauce
1 lb lean ground beef
1 tsp Italian seasoning
1 clove garlic, minced
8 ounces cream cheese
1/2 cup parmesan cheese, grated

Preheat oven to 350 F degrees.

In a skillet, brown the ground beef until cooked through; drain fat and stir in spaghetti sauce. Set aside.

Cook spaghetti according to directions on packet. Drain and place cooked spaghetti in bowl. Add cream cheese, Italian Seasoning and minced garlic. Stir until cream cheese is melted and the spaghetti is thoroughly coated.

Lightly grease a 9x13" pan. Spread a small amount of meat sauce in the bottom of the dish. Put spaghetti on top of sauce and top with remaining meat sauce. Sprinkle parmesan cheese on top.

Bake for 30 minutes, until bubbly.
