Still cooking and eating out about once a week!

Friday we had tacos
Saturday, chicken fried rice
Sunday, pork steaks for lunch, pork chops for dinner
Monday, beef short ribs in the crock pot over mashed potatoes

Ready to make:
Cajun chicken pasta
Garlic lime chicken
Pork tenderloin, green beans and new potatoes
Sloppy joes and maccaroni salad
 
Trying a new recipe for dinner tonight:

Basil Chicken Pasta
Garlic Cheese Toast
Watermelon (advantage of living in the country: a neighbor came over last night to share the abundance of watermelons from her garden...YUM!)
 

Tonight will be Eggs, Chicken Sausage, Toast, and Fruit. It was supposed to be salmon, but we are forecasted to get some rain so I switched things around to not have to deal with it.
 
Monday night (last night)- grilled chicken with tomato, cucumber and bell pepper in EVOO & lemon juice

Tuesday- beef & spinach stuffed shells

Wednesday- blackened tilapia w/ black beans and rice

Thursday- crock pot chicken and dumplings with green beans

Friday- BLEATs (if I can find ripe avocados)

Saturday- chicken and black bean quesadillas

Sunday- Burgers, oven fries and broccoli slaw

Though, more than likely, we'll eat at a local sports bar on Saturday because I jneed to pick up my sunglasses and we're addicted to their wings & "dirty plates"
 
Tonight was:

Roast pork (pork ribeye roast with mustard/thyme/rosemary/garlic rub - deglazed the pan with a little vermouth and mounted the sauce with butter) with oca potatoes and onions cooked under the pork
Roast cauliflower
Beets
Some leftover bell pepper sticks

Yesterday we had:

Homemade lamb gyro meat with a giant veggie tray (bell peppers, carrots, cucumber, tomato), tzatziki, hummus and tahini. A little feta cheese and olives to sprinkle on top.

Tomorrow will be:
Misc cleanup. I'll put out leftover pork roast, some lunchmeat that could stand to be eaten. Some more veggie tray. Cucumber salad. Any misc veggies/fruits that are looking past their prime. Probably figs with blue cheese and nectarines.

Thursday:
Lamb Korma with rice. Some new veggie yet to be stumbled upon at the store. Rice.

Friday:
A couple of chickens. I'll red-cook the dark meat/wings and poach the white, then make stock from the odd bits. White meat will be chilled to become curried chicken salad with grapes/raisins and walnuts. Red-cooked chicken will be dinner that night.
 
DH and I have been invited out to dinner (being treated :woohoo:). So, the kids will have...

Hot Dog Wraps
Chips
Watermelon

...for dinner before DH and I go out.
 
Last night was pizza casserole which I thought would have leftovers for tonight but the family loved it and ate it all!

Tonight it was grilled ham and cheese sandwiches and chips.

Tomorrow night may be date night with hubby!

Could you please share the pizza casserole receipe? It sounds like something my kids would love.
 
Tonight was Chicken Lo Mein... it was actually very good! I thought it would be bland, but it wasn't. Though, I admit I added garlic! lol

Very simple!

1 box of pasta noodles, cooked
2 jars of pizza sauce
1 package of pepperoni
1 package of the pizza sausage (found near the pepperoni)
1 bag shredded cheese

Mix the cooked noodles and the rest of the ingredients, except the cheese, in a baking dish. Top with shredded cheese and bake on 350 until the cheese is melted.

This was the first time I added the sausage and it was very good. I think the sausage is a new product as this was the first time I've seen it at the store.

ENJOY!

Tonight is Skinny Sloppy Joes and Baked Fries.

Family comes tomorrow so who knows about the next few days. I just hope I can stick with my calorie intake.
 
Well here it comes. This is the last week of dinners I need to plan before Disney. So we've hit the "get creative with what is already in the fridge/freezer" days.:crazy2:

Shouldn't be too bad. I have to buy some milk and some veggies/fruit to round out the meals but that's it.

Having Pepsi Pot Roast in the slow cooker tonight. Yum! Plus, it takes less than 5 minutes to throw the ingredients in and the beef turns out so tender.

Tonight it's peanut chicken with jasmine rice. Left over meatloaf for the kids if the peanut chicken is too spicy.

sorry I've been missing summer just isn't a time where we plan very much and if we alot depends on the weather (is it raining or humid or is the kitchen stiffling!)
School will start in a few weeks for us and we'll be back to a week with just me and Hubs and then a week with just DS (DD is going to college makes me :) and :sad1: all at the same time) DS isn't doing any sports at the moment (F in his last semester is keeping him off the golf team till progress reports come out Octoberish) so I should be able to stay on track!
Great Job to all of you who maintained this thru the summer! see you all soon.
 
It really is amazing how much you can save not eating out. Just cutting out lunches and 1 time out a week instead of many saves us at least $100.00 a week. That's $400.00 a month! $4800.00 a year! Hello WDW!
