Easy Yummy Breakfast Casserole

Merry Christmas!!

OK i am planning ahead for New Year's Day! I will be having 4 house guests and instead of going out for breakfast -- thinking of putting together a casserole the day before so i just have to pop it in the oven in the morning...

Any ideas?
 
You could do one of the recipes for strata, just put it together tonight, refrigerate, bake tomorrow a.m. With juice, and breakfast meat, coffee--you're good to go.

Apple Pecan Strata
12 c. Cubed French bread
2 large apples, peeled and sliced
8 eggs
3 1/2 c. Light cream or full fat milk
1/2 c. Maple syrup
1 tsp. cinnamon
1/4 tsp. nutmeg
1 1/2 tsp. sugar mixed with 1/4 tsp. cinnamon
1 c. Pecan halves

Put bread and apple in buttered 13x 9 in. pan. Whisk eggs and sugar until smooth, whisk in milk, syrup, and spices. Pour over bread cube mix. Cover with saran; refrigerate overnight.

Next morning: remove from fridge, let stand for 30 min. Preheat oven to 350 F. Sprinkle sugar and cinnamon and nuts over top. Cover pan with buttered foil, butter side down. Bake 30 min.; remove foil and bake until puffed and golden, about 15-20 min.

Just before serving, dust top with icing sugar or drizzle with warm maple syrup.
 
This is mine & DS's absolute favorite... This is a real non-fancy, comfort-food-type dish, but SO good and super easy. It's from pillsbury.com -- this is the basic recipe:

Ingredients


1 egg
2 tablespoons milk
1 (16.3-oz.) can Pillsbury® Grands!® Flaky Layers Refrigerated Original Biscuits
1 (2.1-oz.) pkg. precooked bacon, cut into 1/2-inch pieces
3 oz. (3/4 cup) shredded Cheddar cheese
1/4 cup finely chopped green onions (4 medium)



1. Heat oven to 350°F. Spray 11x7- or 12x8-inch (2-quart) glass baking dish with cooking spray. In large bowl, beat egg and milk with wire whisk until smooth.

2. Separate dough into 8 biscuits; cut each into quarters. Gently stir biscuit pieces into egg mixture to coat evenly. Fold in bacon, cheese and onions. Spoon mixture into sprayed dish; arrange biscuit pieces in single layer.

3. Bake at 350°F. for 23 to 28 minutes or until golden brown. Cut into squares.




Okay, these are the changes I have made over the years..
I up the milk to 4T (and use 2%)
I use 2 eggs instead of 1
I add a couple handfuls of refrigerated (not frozen) hash browns (the has browns make a HUGE difference!)
I use fat-free cheese
I use the butter-flavor flaky layer Grands
I use closer to a cup of cheese
I usually use Jimmy Dean turkey sausage crumbles in place of the bacon


But you can add or substitute pretty much anything you like with this! And it would be so easy to make ahead of time and bake the next morning.

i dip the biscuit in the mixture - then put some of the bacon and chese on it and fold?

I am making this for breakfast tomorrow, however, I make some modifications.

I am adding a small can of roasted green chilis, some crumbled bacon, and I plan to top it with a package of Kraft Fresh Take Southwest style (it is a bread crumb & cheese mix that is sold with the shredded cheese).

I made a trial run of this last week & it turned out great.

Fold in just means that you use like a wide spatula (I use a silicone "spoonula") and gently fold over the batter in sections to mix in the ingredients. Did that make sense?? Still working on the coffee levels this morning, lol. Folding is just gentler than beating something, in this case so you don't smush and tear the biscuit pieces all up. :) So you would dump all the biscuit quarters into the egg/milk mixture, gently stir and toss until they're all coated, then fold in the other ingredients.

My favorite breakfast casserole is the following:

Ingredients:
  • 2 cans of crescent rolls
  • 1 lbs. of your favorite breakfast sausage (I use hot)
  • 1 8 oz. package of cream cheese
  • Shredded cheddar cheese

Instructions:
  • Preheat oven to 350 (I do 325 'cause my oven runs hot)
  • Crumble and brown sausage over medium heat in a pan
  • Unroll one can of crescent rolls in one piece and lay in a greased 9X13 pan
  • Once you have cooked the sausage, mix with the package of cream cheese.
  • Spread this mixture evenly on top of the rolled out crescent rolls
  • Unroll another can of crescent rolls and lay it on top.
  • Sprinkle cheddar cheese on top (however much you like)
  • Bake for approx. 20 minutes or until golden brown.
 
Our family likes this one - served with fruit and hash brown patties.

Sausage Egg Casserole

9 slices (cubed) Bread  Put in greased 9 x 12 pan
Top with 2 c. shredded cheese (reserve ¼ c. for top)
2 # sausage ( I use one regular Jimmy Dean and 1 Hot Jimmy Dean) Brown, drain and put over cheese.
Beat 9 eggs add 2 ½ c. milk and ¾ tsp dry mustard
Pour over everything.
Cover and refrigerate overnight

Mix 1 can cr. Mushroom soup with ½ c. milk.
Pour over all.
Bake 325 for 1 ½ hours
Sprinkle with reserved cheese last 15 minutes.
 
This morning I made an easy one:

1 package hash browns (the shredded kind)
1 bag of pre shredded cheese
Cubed ham (I bought ham steaks but could use leftover).

12 eggs
1 cup milk
Salt and pepper

Mix dry ingredients (I did it tonight before). Add wet (it all fits in a 9x13 pan, though it looks like it won't). Bake at 350. Instructions said an hour, mine took closer to 2 until custard is set. It was quite delicious!

For our breakfast this morning I made almost the same thing. My recipe is pretty much the same except I use 7 slices of bread, bacon instead of sausage and six eggs. I precook the bacon a little bit and drain some of the fat. I add a little salt and pepper to the milk/egg/dry mustard. I let it sit in the fridge overnight covered with foil. In the morning I take off the foil and cook for 50 to 55 minutes at 350. Have never tried the mushroom soup though. May have to try that next year!

It's always a hit and it's so easy to make!
 
We do Alton brown's overnight cinnamon rolls and sausage and fruit on the side... We tried lots of casserole and strata dishes and this one everyone likes!
