Easy Cookie Exchange Recipes

My friends and I are going to do a cookie exchange I wish I had time to do more baking but unfortunately I don't. We have to make 13 batches (12 in each) of cookies or some other holiday snack food. Does anybody have any easy recipes for a cookie exchange that can be done quickly over the weekend. Please send me your recipes. Thank you.
 
When I'm under pressure for time, I buy the betty crocker peanut butter cookie mix and make the blossom cookies they have listed on the back - basically just roll tbsp balls of peanut butter dough into granulated sugar and bake. When you take them out warm, press a kiss into each one to make a flower... very quick and easy to make.
 
We're doing a cookie exchange at my office, too. I need 13 dozen and will make spritz cookies. You get a lot of cookies in one batch (approx. 72 cookies).

bag of peanut butter cup miniatures


Pinch off walnut size balls 1 inch - of dough and place in ungreased or paper lined tassie cups. Do not flatten.
Bake for 10-12 minutes at 375 or until puffed and slightly colored along edges.
Meanwhile, remove foil from peanut butter cups.
Remove cookies from oven.
Immediately press one peanut butter cup into center of each cookie.

Cool in pan.

Each batch makes about 36 - 40 cookies.

:goodvibes Fifth year cookie exchange hostess here....make oreo truffles...1 bag of oreos, crushed, 1 block of cream cheese softened. Mix, make into marble-sized balls, roll in melted chocolate or almond bark. Use colored sprinkles, nuts, etc to make pretty. Yummy!

I won my own cookie exchange with this recipe one year (though I didn't give myself the prize...2nd place officially "won").
 
The oreo truffles sound so good and easy too, I think I may have to try these they will be hard to get out of the house though my DH and kids all love chocalate and they may be devoured before I have to go to the cookie exchange.:rotfl2:
 
I made those truffles before Thanksgiving - yum, tastes like chocolate cheesecake!

I like those little shortbread pecan rolled cookies in powdered sugar or buckeye balls (peanut butter balls dipped in chocolate) are good & make a lot.

I have made snickerdoodles for a few cookie exchanges. You can either take the batter and add red food coloring to one 1/2 and green to the other and/or roll the balls in different sprinkles instead of the cinnamon and sugar mixture. Really easy and fast.
 
A favorite because it really is brainless - and it works for some of those friends who are allergic to dairy and wheat.

1 c peanut butter
1 c sugar
1 egg

Mix, scoop into balls (I use my ice cream scoop) and bake at 350 for 10 - 12 minutes. You might need 14 minutes if you use a Silpat on a air cushion cookie sheet.

My neighbor just gave me the Oreo Truffle recipe last week. After both of us making them, we discovered they'll roll in the white chocolate easier if they've been in the fridge or freezer for an hour first.

They are really good!
 
Along the same lines as the Oreo Balls are Cake Balls. Bake any flavor cake mix you like according to directions. When cool, break into pieces into a bowl and mix with any flavor frosting you like. Roll into balls and dip into chocolate coating (or almond bark).

You can get interesting flavors based on the cake mix/frosting pairings. Carrot Cake with cream cheese frosting or Red Velvet Cake with Cream cheese frosting.
 
Forgot to add that Oreo Balls need to be refrigerated, but the cake balls don't if you have limited fridge space.

I bought all the stuff to make Oreo balls yesterday. I've NEVER melted chocolate before! :laughing: Don't have a double boiler so I just plan on microwaving it. Can I keep microwaving it over and over if the chocolate gets hard while I'm working with it? And do I microwave it on my "thaw" setting? Also, about how many balls does one pack of Oreos make?

Do I need to store these in the fridge after I make them? How long are they "good"? (since there's cream cheese in them?

Can you post the recipe for snickerdoodles? I love snickerdoodles that are soft and chewy. My recipe use to make soft snickerdoodles, but for whatever reason it only makes them crunchy now. :confused3

Please Bring: 4 dozen cookies and a nice big tray/plastic container to transport all your new cookies in!

RULES OF THE COOKIE EXCHANGE
1. All cookies must be homemade, baked & main ingredient must be flour. No "no-bake" cookies, meringues or bars are allowed.
2. Please bring 4 dozen total Cookies.
3. The theme is "Christmas Cookies - no chocolate chip cookies allowed - unless they are really different! No "no-bake" cookies.
4. Arrange cookies in a basket or platter (be creative!) & a large container (i.e., Tupperware) to carry away cookies and a copy of your recipe.
5. Christmas attire is encouraged !
6. RSVP as soon as you can let me know what type of cookies you are planning on baking - no duplicate recipes allowed.
7. If you cannot attend but would like to exchange cookies, you may
deliver your cookies the day before the party. I'll exchange them for you.
8. If you don't have time to bake, or have ruined your recipe, but still want to attend, you must go to a real bakery and buy 4 dozen yummy cookies.
