Eastern Caribbean port excursions ?s

We are booking our second Disney cruise as soon as Sept 2017 opens. Yes, hurricane season, but we don't have much wiggle room with DH's work (active duty Marine Corps). Rates aren't available yet, but we are basing our starting our planning based on the 2016 Fantasy stops. Our first cruise was 4 nights on the Dream to Nassau (we stayed on the boat)and CC. It was amazing. We want to do a 7 night Eastern Caribbean for our next cruise. DH and I will be traveling with our kiddos who will be 10(boy) and 6(girl).

Tortola and St. Thomas/St. John. Tell me what you loved to do at these stops. Family favs? Disney excursions? Private companies? Must do's?!!!

Us: We do not enjoy shopping on vacation, I know we are weird, we don't even buy souvenirs usually. We really love to go on adventures, discover new places, and do things we can't do at home, as much as we can with two young kiddos.

Look for some of the snorkel or boat tours for St.Thomas/John. We did an ECO hike booked with Disney and it was pretty amazing and included time at one of the beaches at the end of the hike before the van picked us up to go back. I can imagine a catamaran or sail boat excursion would be amazing.
 
We did the submarine excursion (not the semi-submersible one) a few years ago in St. Thomas and thought it was good. Not sure if they still have it, but worth considering if they do. One hint if you do it - try to be last in line to board the sub because that puts you near the front where there is a huge porthole for the captain/driver to see out of. We saw a huge ray (probably 6 - 7 feet across) looking out that porthole.
