Easter week questions

I am hoping someone can help we with a few questions I have regarding Easter week. We will be there for 6 days, with our first full day on Easter Sunday. I know it will be crowded, but that's the only time we can go, due to DS's school schedule. Also, my DD was accepted into the DCP, so I don't want to wait until summer to see her. Therefore, spring break is when we have planned to visit her.

My go-to place for crowd calendars hasn't been updated in a very long time, so while I'm usually good at planning, I'm finding myself floundering this time. I was thinking about avoiding MK on Easter and going on Monday, but I've heard that MK can be very crowded on that day, too. True? Would it be better to wait until Tuesday?

We wanted to try a few new places to eat. I was considering Citricos for Easter. My DH decided to research restaurants and says he wants to try the Turf Bar and Grill at Sarasota Springs at some point during the week. I thought I knew every restaurant at WDW, but he managed to surprise me. Has anyone heard of it? Is it good? Do you recommend it?

I want to make ADR's for 4 people, so DD can join us if possible. If she has to work and can't join us, will they charge us for a full meal for her? I know different restaurants have different policies, so I guess I should just go look. Thank you in advance for any input.

I wouldn't go to Turf Club unless you are staying at SSR. We've eaten there a few times and it was very average at best. Not worth an effort to get to.

As for your ADRs, for all non prepaid reservations, it's not a problem if someone doesn't show, as long as some of you show, you won't be charged any cancellation penalties. For prepaid meals, I think it may be different policies and real-life experiences.
