Easter dinner suggestions

I always make a ham to be served cold, potato and macaroni salads. That's been my Easter dinner my whole life and I love it.
 
Is your group just the 4 of you?

If that's the case, I totally change my recommendation:). Now, if it's more than 4, revert to my old suggestion.

If it were me, coming back from a vacay and just serving my own fam, 2 of whom don't eat meat and 1 who doesn't eat fruit, I'd say "Self, what is a splurge tradition I want to start that would go along with my deviled eggs?" And I'd order Japanese as a new Easter tradition - I'd get sushi rolls (fish and veg), and maybe edamame and/or seaweed salad (both scream spring, and bring protein - and these can be purchased ahead from HMart and/or Trader Joe's vs the restaurant) and/or a green salad with ginger or sesame dressing, and miso soup, b/c who doesn't love miso?

I'd have the hummus and veg to snack on during the afternoon...and to stay Japanese, I'd get mochi or green tea ice cream for dessert (again, HMart). It's fun, it works for everyone, and it's splurge, so it screams holiday.

No, 2 more beyond us, at least as of right now. Possibility of a couple more. But not tons of people. They will bring a small ham, so I think meat eaters will be fine, the hummus and veggie rolls will work for me & the vegetarian. I have some seitan pepperoni we could use on our rolls as well. But I do like this idea of a splurge tradition and the sushi rolls. We love shishito peppers, those would go well with that. I will ponder the options over the next week. I'll probably end up making way too much to have lots of variety, but then using that to feed us all week. And, I haven't even thought about breakfast. (That will be just the 4 of us).

Really we will probably be so stuffed from dining out on vacation all I'll need is a mimosa and my single little deviled egg.
 
Oh, just had a new inspiration, maybe a mezze platter with hummus, grape leaves, baba ghanoush, tzatziki, pita, and lots of raw veggies. Ham, rolls, deviled eggs, pasta salad loaded with more veggies. We have a great Mediterranean deli I could get a lot of that from on Saturday.

That's a great idea - I love mezze platters...hummus and baba ghanoush are my 2 "go to" dips for company - I think they work the best with the most variety of veg...and they, especially the baba ghanoush, are a little different and special - no one ever puts it out at a party, but if you do, it gets cleared - fast!
