I cut my teeth on East Carolina BBQ. I used to spend summers with my grandparents in the OBX. I live in north GA and the only place i can find that has the "real thang" is about 1-1/2 hour north off me, in Blue Ridge. I want to make some BBQ for July 4th. I'd love to get the recipe and save myself the hassle of driving nearly to NC for authentic BBQ sauce.

ETA: I'm talking about the vinegar-based, red pepper flakes, no ketchup style BBQ sauce. If it doesn't have a little kick, it's no good. :goodvibes

I buy this really kickin' vinegar-based BBQ sauce at Food Lion. You can get it mild, medium or hot. The brand name is Scott's Family BBQ Sauce.

1 cup white vinegar
1 cup cider vinegar
1 tablespoon brown sugar
1 tablespoon cayenne pepper
1 tablespoon Tabasco (or other hot sauce), or to taste
1 teaspoon salt
1 teaspoon ground black pepper

Mix up and refrigerate for 1-2 days before using.
 
The one I use is:

NC BBQ Sauce

32oz vinegar
12oz ketchup
12oz water
4oz Worcestershire sauce
2.5oz Texas Pete
2.5oz sugar
Red pepper, black pepper, salt

Mix all. Simmer until well blended.

It does have ketchup but you wouldn't know it by taste.
 

If you can get your hands on a bottle of Scott's you'll be just fine. I keep one in the fridge at all times.

I grew up in Eastern NC and even moving into SE VA (and now central VA), it's impossible to find the good stuff.
 
I make mine with equal parts ketchup and cider vinegar (about a cup each), two tablespoons sugar, a teaspoon of salt and 2 teaspoons of hot pepper flakes. Mix well (I put it all in a tupperware container and shake it really well) and put it in the fridge for about an hour so the flavors make friends.

Works every time.

* 1/4 cup salt
* 2 tablespoons cayenne pepper
* 3 tablespoons red pepper flakes
* 1 cup light brown sugar
* 1 tablespoon hot pepper sauce

Directions

1. In a large bowl, mix together cider vinegar, salt, cayenne pepper, red pepper flakes, light brown sugar, and hot pepper sauce. Stir until salt and brown sugar have dissolved. Cover, and let stand at least 3 hours before using as a basting sauce or serving on meat.

:scared1:I dunno, 2 TABLEspoons of cayenne? Yowza! Maybe I can adjust these recipes. I don't need to serve 65 people, just 5.
 
My ex-brother-in-law makes the best BBQ chicken ever. He was a commercial chicken farmer for years. The one thing I know for sure about his recipe, there is no tomato or ketchup in it.

Everyone still wants his chicken. He has a day business but once in a while cooks his chicken for friends and family.
