The easiest would be to just take them out of the album and put them on a flat surface and snap away. They will be angled but you can see the entire layout. I do that if I'm just posting them for ordinary challenges or on my blog, etc.
Now, NOT the easy way.....
If I am submitting to a manufacturer or a big contest. I go outside with a large white foam board that I have a tiny bit of tacky stuff on and I stick my layout on the center of it, find a nice sunny spot and prop the board up so it is nearly verticle and then I make sure my camera is angled the same as the board so I can crop to the edges without any distorting.
I have a laptop so I stand the pages, not in the album, up on the keyboard. I like seeing them straight on, not on a table when ever possible. Snap away, watching for glare on the pics, crop in iPhoto and then post using photobucket.
Last batch of photos that I took I tried taking some of the pictures on the floor. That worked OK. I've determined that the lighting in the house is horrible, though the dinning room seems to have the best. I usually do as Marlynnp said, and just put them on a table and take the pictures.
