There is no need to be at the airport at 4:30am in the morning. If my flight departed at 7am I would be at the airport no early than 5:45am. Check in online the night before. Checking bags that early in the morning should be a breeze.I used to do the muffins/pop tart thing but as I've gotten olderthat sugar rush in the morning doesn't make me feel too well so now I've had to change my strategy and it is a little harder bringing along food that will travel well. We have a two hour drive to the airport and they want you there two hours early for a 6:30 a.m. flight so it's hard to think of making much at 1:30 in the morning. I'll hard boil some eggs the night before (if they have been in the refrigerator they will last for hours), or take some almonds and fruit, or some protein bars, maybe some string cheese and cheese curds (what do your expect from a "cheese head"). Can't think of anything else right now, although I know I have brought other stuff along. Hope these suggestions help.
Also since you have quite a drive to the airport, pack a small cooler to keep your breakfast at the proper temp. Remove breakfast from cooler upon arrival and leave cooler in car and all should be fine. Other good options are string cheese. Also think outside the box. I make ham and cheese rollups and put in a ziploc bag. Ask for a glass of milk from the drink cart and instant breakfast.
