If we were to have to cut our vacation short (always worried about elderly parents getting sick) would we be charged with any kind of penalty for not fulfilling our reservations?

I had to cut my vacation short once. Went to front desk before 11 and they credited my credit card the days I cut short. It shouldn't be a problem.

We have had to cut our trip short more than one time. We have never had a problem with them crediting our account.

Disney is very understanding when any kind of problem causes you to leave early. I have read some remarkable stories here on the DIS about Disney care and generosity when something unexpected happens.
