Can I have 8:00 dining reservations at Crystal Palace if I am not staying on-site? I thought I read that you have a hard time getting into parking lot that early?

You're OK. The MK lot opens at 7AM.

You would have a problem if you had an early ADR at AK. The AK lot doesn't open until about 35 minutes before park opening.
