Does anyone know how far in advance they release DCL dates as I’m looking for early 2023?

In 'normal' years that would be around October so cross your fingers it will happen in the next few weeks.

Can we use Disney Gift Cards for the deposit and how many cards can we use (cards max at $500)?
Also is the deposit 20% plus the total cost of the trip insurance?

Yes, the deposit is 20% of the cruise fare and you can use DGCs. Not sure about the insurance because I have never purchased from Disney. There is not a limit to the number of gift cards. However, the fewer the better. Less work for the CM or for you if you are paying online. You can combine the cards on the Disney gift card site. Maximum is $1000 on a card.
