Hi here are some suggestions

a special meal with a Disney birthday cake they do lots of different styles and flavours, can be pre ordered and delivered to the restaurant.

A boat ride with champaign and strawberries

paragliding

keys to the world tour

petty race car experience

a caricature drawing most Disney hotels have the artists in their lobbies, they will customise it to reflect your celebration

Sorry i didn't see that it was for oyu at first
I think the driving experience is closed or closing?
The illuminations fireworks cruise, Cali grill and watching wishes from the roof.
Definitely tell them, if you are op staying onsite, that you are celebrating. You might find nice surprises like a card on your room, free dessert etc.
Get a birthday button too! I made my husband wear one on our first trip and he ended up liking the attention he got, made the day more special.
If you will be going after it opens (sometime this spring) trader sam's bar at the poly looks like a lot of fun

My DD will be turning 5 during our trip, and I'm planning on taking her to the BBB that morning and letting them glam her up, and then of course we'll be getting her the birthday pin.
