Driving from WNY to Orlando... tips for stops?

We're going to have to skip the airfare next trip (likely 8/2013) since it will be at least $1200 for family of 4 (that's what our airfare in Aug. this year. Not that I want to drive, or take the extra days off for it, but it is what it is! It looks like Fayetteville, NC might be a reasonable end to the 1st day of driving from Western NY (like 11 & half hrs) and then 8+hrs the next day to arrive at Orlando. Headed to either AoA or another value (stepping down from POFQ). Has anyone gone this route and have any suggestions to where to spend the night or how to tackle this trip with 2 kids under 8yrs old? (one with food allergies so we'll be living out of a cooler for that child's meals). TIA!
