Can't recommend the lounge at the Wave enough. It has a great bar area, relaxing ambiance in the soothing blue lounge area (you'll see what I mean about the blue-ness when you walk in there), and knowledable and friendly bartenders. It's also rarely crowded, which is nice after a day elbowing through the crowds at the parks.
It has almost become a must for us to stop in there for a drink when we're in the Magic Kingdom area. Since you're going to be at Bay Lake, it's just a quick walk across the bridge and down a couple of escalators for you. Id recommend it as a starting and/or ending point for you, since it's on the way.
The California Grill bar is nice, too, but it can be a hassle to get up there depending on how busy it is. The Wave is the way to go, in my opinion.
