It works the other way too.
On our last 7-night we at at Palo on our first night. The waiter convinced me to buy an expensive bottle of wine by explaining that we could finish it over the rest of the cruise. We did have to remind our regular servers the next night, but it was no problem.
I believe they have a racks for each dining rotation where they keep the wine, tagged with your table number, and move them from dining room to dining room with you.
