Dolphin Encounter observer question

I am thinking about booking this through Disney for myself and the kids. DH, however, does not wish to participate but will come with us. Disney doesn't list the option to just observe. Do I have to book directly through the company for DH? company website says observation fee is $20 which includes transportation.

Also, I've read that it's cheaper to book directly with the company but my numbers come out about the same. The shoretrips.com charges $90/person and dolphinswim.com charges $85/person. Since my kids are under 9, with Disney I'd pay $113.50 for me and $88.50 each for two kids. It seems I would be saving at most $35.50 which I would easily spend for lunch and drinks, I'm sure. So in my case, it seems I might as well just book with Disney, right?

My last question, I know the company website says children under three participate for free with a paying adult. If I book through Disney, how do I handle the situation with my one year old? Do I need to tell in advance or just bring her with me?

I won't be cruising until Nov. so I know I've got lots of time to figure all this out. TIA!
