Some people love it, some people think it's ok and I'm sure some people hate it.
My very first bite of the pineapple Dole Whip, my brain couldn't seem to figure out what to make of it -- it tasted like plastic or some weird conglomeration of chemicals not normally associated with food. It didn't taste icky bad, just... not like food, somehow.

But it was wet and cold and I liked the texture, so I took another couple of bites; suddenly it tasted like pineapple, and it's tasted like pineapple ever since.
I like it pretty well, but I'm still a wee bit nervous when I take that first bite. I'm thinking the people that hate it, their brain never decides, "Oh, it's supposed to taste like pineapple!"

Although actually I can't remember anyone saying they hated Dole Whip -- does regularly show up on "over rated" lists, though.
I also believe it is available at one other place on property at WDW, but I don't remember if it was a resort or something else. I'm sure someone else will clarify that for us.
Captain Cook's, at the Poly.
You can get the mix online somewhere, but I've never cared enough to track it down. And there's a great copy-cat recipe that uses crushed pineapple and real whipping cream; I'm hoping Disney's version is not quite so full of saturated fat!
