Dole Whip is Everywhere!

Well, y'all have taught me a lot about Dole Whip. All I know is it's delicious and I love finding it when I don't expect it!
 
My daughter got a "Dole Whip" on our Magic cruise in December. It was disgusting. Nothing like either of us remembered from the parks.
 
Our new local water park, Wild Rivers, has a Hawaiian theme and they have Dole Whip Pineapple and Watermelon flavors. Their pineapple is better than Disneylands. It's more creamy, somehow. Maybe they have fancier new soft serve machines or something.

Does WDW still suffer from the icy consistency issues that plague their Dole Whip? Every photo I see of Dole Whips from WDW looks the wrong color and way too icy instead of being creamy.

Like this recent one from DFB. Seems it's still an issue.

Might be right that the exact type of 'soft serve' machine used to prepare Dole Whip makes a difference in the texture of the product. All frozen dairy products require churning to avoid formation of ice crystals. That is one reason if you let ice cream sit out too long, it develops ice crystals when you try to refreeze it.
 

And here's the reason why Dole has now decided to widely market it ...

"lactose-free, dairy-free, gluten-free, no artificial colors, no cholesterol, vegan"

Also no tree nuts (coconut actually isn't classed as one), no peanut, and no whole soy (though it does contain some other legumes.)

That, folks, is a 21st century school-trip or sport team chaperone's wildest dream, one treat that apparently passes almost every commonly-encountered dietary restriction test.

I noticed that Wild Rivers is not using the trademarked "Dole Whip." It is Wild Whip. I'm betting it's a different product. Dole Whip--at least the pineapple is dairy free, so it's not forming ice crystals because of that. I think True Dole Whip is intended to be on the 'icier" less "ice cream" creamy side. People expect it to be ice cream and it's not. It's a fruit-like whip with no dairy. No idea what the ingredients are on the "Wild Whip."

It is Dole Whip. The Wild Whip is just what they call it because they like to name things with a theme over there. You can see the Dole logo next to the Wild Whip on the menu board.

Dole Whip at Disneyland is creamy and a very pale yellow color. Same at Wild Rivers. At WDW it always looks like a sorbet or water ice consistency. The lightness comes from whipping air into the product and the emulsifiers that act like cream in there. Just because it doesn't contain dairy doesn't mean it can't have a creamy feel. They just use a bunch of chemicals to get it there. Of course it is forming ice crystals...that's how it ends up frozen. Dairy has nothing to do with that process.

I suspect WDW locations are not allowing the mixture to churn long enough and are dispensing Dole Whip that is not yet fully ready to serve. If you've ever made homemade ice cream or sorbet, you can see how the color and the transparency changes as more air is whipped in and it freezes more.
