I have AKC dogs and for breeding I know that is a must. Is NKC less recognized? (I'm thinking of buying and I am seeing this).

AKC or the American Kennel Club is a legitimate dog registry, recognized by other legitimate dog registries around the world.
NKC is a registry set up by the puppy mills to get around the AKC rules and regulations that hampered indiscriminate breeding by puppy mills.
NKC does not require proof of parenthood to register a dog, so there are never any guarantees that an NKC dog is a purebred. If a dog looks like a poodle, you can register it as a poodle.
AKC keeps very stringent stud books.
NKC allows pet shops, backyard breeders and puppy mills to claim that their dogs are "registered."

The breed Im looking at is fully recognized by AKC, so I couldnt figure any other reason why they'd be registered NKC. So a dog registered NKC could easily have ancestry that was not registered at all... The last thing I want is to get a mastiff puppy that grows up to act like a 200 pound pit bull. (no offense to pb owners).

and get a referral from somebody adhering to the Mastiff Code of Ethics.
You can also find a local dog show, find out what time the Mastiffs are showing and then go and pick the breeder's brains. Just don't talk to them while they are waiting to go into the ring - approach them afterwards.
