does shipboard credit need to be used for person it's written out for?

IF I get DH & DS $25 shipboard credit but then DH doesnt come along on the cruise, do I loose his $25 credit? or does it actually go against the room?
(see I have to play 2 scenarios and it's making me even nuttier!)

No, it appears as a line item on your Folio - so it just comes off the bottom line.
