Sort of. The taste of Lobster is usually cleaner. Crawfish (if not cleaned correctly) have a mud like under-flavor. The texture and taste, if cooked using the same seasonings, are similar.
All the hot and spicy ingredients and other things that go in the boiling pot are what make them so special. You suck the heads and get a blast of all the spicy flavors.
Prior to being boiled crawfish must be purged of the mud by soaking them in salty water for a short period then rinsed in clear water. This eliminates the muddy taste.
Many people believe the hotter (spiecier), the better. Personally, I don't care for really hot crawfish. Rather than using crab boil or some other hot seasoning my DH purges the crawfish, rinses, then boils them in unseasoned water. He then drains them, takes a clean ice chest, and layers crawfish, salt, and Tony Chacheres Seasoning. They then steam and soak up the seasoning for around a half hour. The result is wonderful. Easily pealed and very tasty.
As for what they taste like, I am at a loss to describe it. Not like shrimp, lobster, gater , or even chicken. They are delicious!
I think they are different but both are yummy and there isnt a huge difference. We always get the pre-cleaned kind that come already packaged(we get it at like walmart, schnucks, dierbergs(sp?), or your local grocery store) We use it in a soup though so it doesnt stand alone...
Had crawfish and crabs boiled today . Yum!! I think lobster is a little more chewier then crawfish. Oh and lobster cooked in crab boil is to die for.
I love lobster and crawfish both.
