I LOVED late seating. Like the other two DISers mentioned, you don't feel as rushed, especially when you are at port. And your kids are old enough to where they won't be tired and cranky, and I bet they will like having dinner later with the "adults."
I just remember watching all the families parade in to dinner and I was still running around in my bathing suit and having fun and they had to stop an hour before that to get ready. It's like having an extra hour of play that half the ship doesn't get. Especially if you skip the shows. Personally, I think only the Hercules and Disney Dreams are worth seeing.
I think you will really enjoy late seating once you get on board. I can't see any benefits to early seating, unless you have young children.
