Do you still overcook pork?

Wasn't it also a childhood myth that pork must be REALLY cooked or you would get trichinosis.


Some of the cooking shows now say cook pork until "pink' in teh middle.

Anyone still adhee to the overcooked theory?
 
I understand the concept, but it is REAL hard for me to fix pork that isn't grey!

I undercook it on purpose, because that's how I like it (pink in the middle). My mom always cooked it until it was WHITE. Bleh.
 

I have a lot of recipes for pork. Almost all of them say to cook until center is slightly pink.
 
actually i do tend to over cook pork, but i'm getting better since i bought a new meat thermometor /fork temp probe is onthe prongs,, makes it much easier to judge the center temp:)
 
I used to always overcook it, too. Now DH usually cooks it on the grill and it comes out perfectly.

I cook ribs until the meat is falling off the bone, but that isn't overcooking IMO. Pork tenderloin is one of my favorites, and I cook it until there is about a "nickel sized" pink circle in the middle of it. I can't stand pork that is overcooked. My mother, bless her heart, cooks her pork loin so dry it can choke a horse. Every single time she makes it-she does it on purpose. But she was raised on a farm with pigs, and my dad is from the old south, so they are still afraid of trichonosis. My dad won't eat my tenderloin.....I save the ends for him...;)
 
No, but my mother sure does! As a child, I really disliked meat, and once I got away from home and started eating meat that was not overcooked to the point of hard dryness, I realized it was just my dear mom's meat that I didn't like. To this day she will go to a restaurant and order prime rib well done.
